Paleo Thanksgiving Round-Up (from the archives)

So we had a bit of a rough weekend.  The Hubby’s Grandfather passed away recently so we were out of town for his services.  It was good to remember his life and lots of happy memories but not necessarily a fun way to spend the weekend.  On top of that I was feeling a bit under the weather with a little stomach bug so spent a lot of time lounging around watching Parenthood and not blogging.  So rather than getting a post done on some NEW Thanksgiving recipes, I’m pulling this one from the archives 🙂

Yep, you heard me right, Thanksgivings!

We always have more than one as I’m sure some of you do as well.  We actually had three this year starting with our Friendsgiving a few weekends ago.  Then we hosted Thanksgiving at our house with my MIL, SIL’s and mom.  The following day we drove three hours north to my moms for another turkey dinner with more family!  It’s always fun but exhausting!  Which is part of the reason today’s MIMM is a post with just a few words.  I’m too tired to type!  Ha!

I’m pulling this one from the archives for this lovely Turkey Day!

Turkey, sweet potatoes, green beans, roasted butternut squash, pumpkin and apple pie. Oh my! Who doesn’t love the food that comes along with this special holiday? I know I do!
I’m all for indulging and enjoying the holiday to it’s fullest. However, I also know how stuffed and uncomfortable I feel afterwards when I over do it. So to avoid this I’ll be taking a few steps to ensure I don’t over do it on all the delicious food being served. After all, we typically have at least two full Thanksgiving dinners. This year we may have three!
To begin I’ll be starting my day off with a healthy breakfast to ensure I don’t partake in mindless snacking throughout the day. I’m sure there are many people who will feel the need to skip breakfast on Thanksgiving day in order to save room for all those extra calories they’ll be taking in later. However, research shows that if you begin your day with a healthy, protein packed breakfast, you are less likely to over eat the rest of the day.
Since we’ll be waking up at my mom’s house on Thanksgiving day with a houseful of family I plant to urge them to enjoy a healthy breakfast with me. I’m hoping to entice them with one, two or all of these yummy festive breakfasts 🙂

Pumpkin Pie Protein Smoothie

1/2 cup pumpkin (mine was frozen)
1/3 cup frozen banana
1 tsp. Pumpkin Pie Spice
1 scoop vanilla protein powder
1/4 cup organic plain yogurt
1/3 cup liquid of choice (coconut milk, almond milk, milk, or water. I used 1 splash of coconut milk and 1/4 cup coconut water)
4 ice cubes

Place all ingredients in a blender and mix until smooth and creamy. Enjoy!

Pumpkin Pie Yogurt Parfait

2 tbsp Vanilla Protein Powder
1 cup plain organic yogurt like Stonyfield
1/4 cup pumpkin puree
1/2 tsp pumpkin pie spice
1/4 cup low-fat granola
1/2 small banana chopped

In a bowl, combine the yogurt, pumpkin puree, pumpkin pie spice, and protein powder. Mix well. In a separate container (I use a jar because it’s pretty and if I don’t finish it, I can save it for later), layer 2 tbsp of granola, top with a half of the yogurt mixture, then layer half the chopped banana, scoop the rest of the yogurt on the banana. Finally top with the remaining granola and banana. This is such a filling breakfast and packs a whopping 32 grams of protein! Plus, it’s pretty tasty 🙂

Pumpkin Pie Breakfast Scramble

Ingredients
1 egg
2 egg whites
2 tbsp. Coconut Milk
1 tbsp. Banana flakes (found in the bulk section at Whole Foods) or half a mashed banana
1 tbsp. Pumpkin Puree
1/2 tsp. Pumpkin Pie Spice
1/2 – 1 cup chopped spinach (optional but I like to add some greens to mine and you can’t really taste it)
1 tsp. Coconut oil

Instructions
In a small pan, heat coconut oil over medium heat. In a bowl, mix together eggs, banana flakes, pumpkin puree, and pumpkin pie spice. If using mashed banana, add that to the pan prior to the egg mixture and sauté for a few minutes. Other wise, add spinach first and cook until slightly wilted. Add egg mixture and cook stirring frequently until cooked through. The mixture will look a little more moist than a normal scramble which is normal. Scoop into a bowl and top with almond butter, sunflower butter, or nothing at all! Enjoy!

Along with my healthy protein packed breakfast, I’ll be drinking lots of water throughout the day to keep me hydrated. I also plan on encouraging my family members to join in on a pre-turkey feast workout.

Good morning!

I feel like I’ve been such a horrible blogger lately!  For one I was busy with family and friends celebrating Thanksgiving.  For two renovating and moving is SOOOO time consuming!  Anyway, we were up half the night with The Love Nugget who was sick with the stomach flu and on top of that I’ve got a million things to do today….  However, I still wanted to join in the Marvelous fun with Katie for Marvelous in My Monday!

Hi there! Sorry I’ve been MIA for a few days. Busy family week/weekend! We got home yesterday afternoon from 5 days of being gone. It’s so nice to come but unfortunatly we came home to an infestation of ants! Ugh! They had made their way to the White Coyote’s food dish 🙁 So annoying! I hopped on Pinterest and found a natural remedy to kill ants and they are gone! Thanks Pinterest!

Since it’s Monday, it’s time yet again for Marvelous in My Monday with Katie at Healthy Diva Eats. I’m sure many of us will be sharing our Marvelous Thanksgiving recaps for this fun link up!

Where to begin… As you know Wednesday we spent the day at my grandfather’s house (the grandpa who just lost his wife, my grandmother). It was nice to be able to see him and spend some time with him. He’s been having a really hard time since her passing and we have been trying to be as supportive and helpful to him as possible. It always melts my heart to see the Love Nugget crawl into his lap to read stories together.

The best part about this past week was getting to see the Love Nugget with his Great Grandparents.  With the passing of my grandmother recently, it’s reminded us that as we’re getting older, so are they and as much as we hate to say it, their time in this world is fading.  With that said, we’ve been soaking up every minute we can spend with them 🙂

The next day we drove up to my hubby’s home town to spend the day at his grandparent’s house. He has a large family and everyone gets together on the holidays for a big, delicious dinner. This particular Thanksgiving was extra special because my sister-in-law and cousin-in-law took on the task of cooking Thanksgiving dinner!

They made so much yummy food which was joined by a few other side dishes brought by family members.

The Love Nugget couldn’t wait to dig in and as we finished our prayer and cheered on the chefs, he decided to dip in for a little sample.

After dinner we drove another hour up to my mom’s house for the rest of the weekend. My other Grandfather is selling his house so we spent the majority of the weekend cleaning, packing and having an estate sale.  Friday morning was spent pricing and packing for the garage sale  However after that, we came back to my mom’s and enjoyed some more yummy food and fun times!

In case you didn’t know, I grew up on a hunting club and my two brothers are huge hunters. With a hunting family, there were always guns around and on holidays we would often go out on the ranch and shoot clay pigeons, logs, cans, etc. I know, talk about country living! Anyways, the hubby also grew up around guns and has recently become more interested in owning his own. So he’s purchased a few and even built his own gun over the past few months! So talented my hubby is! So he was itching to not only get out and shoot it, but to have me do so as well.

Now, even though I grew up around guns, they scare the crap out of me. But… I joined in with the boys and auntie Gigi to shoot off a few rounds.

Haha! I have to admit I look pretty funny in my skirt and boots holding a gun!

After dinner, a dear friend from high school who was up visiting her parents came over for some wine and catching up. My brother and hubby had collected some scraps from my grandpa’s house so they decided to build a bonfire.  Yes, I so grew up a country girl! Shooting guns, then standing around a bonfire!  Country living at it’s finest!

Then we headed out on the town to join up with another high school friend.

It was fun to get out and catch up but man did we feel old! We don’t get out all that often and the particular bar we went to was filled with a very young looking crowd. It was still fun though!

We didn’t stay out too long since we are so old but were still in bed much later than our normal bedtime. Unfortunately the Love Nugget didn’t realize this and woke up at 4:00 fussing and wanting to be in bed with us. Wiggling, grunting, crying until 5:30. Then we got up before 7:00 for the garage sale! Ugh! Exhausting! Thank god for coffee!

After a long day of helping out at my grandpa’s garage sale, the hubby and I went out to grab a quick bite while grammie watched the Love Nugget.  It was nice to have a little mini date night after a long day.  We were exhausted though and went right to bed after dinner!  Luckily the Love Nugget slept better but last night was another night with not much sleep.  We aren’t too sure what’s going on with him lately but hopefully he gets back on track!

Today the Love Nugget and I are going to head to the gym, then Costco and grocery shopping.  Fun!  I’m hoping to have some time to get online and do a little shopping for Cyber Monday!  I’ve already seen a few good deals but finding the time is a problem.
