A Healthy Mint Chip Protein Milk Shake

When we were in Disneyland The Love Nugget had his first milk shake from Ghirardelli Chocolate and Soda Fountain.  I know, first milkshake?  We just don’t really eat stuff like that and tend to make smoothies at home so he hadn’t had one. Of course he enjoyed it.  So much that I didn’t even get to snap a picture because it was gone before we knew it!

Upon returning home I wanted to show him that we can have a healthier version of an ice cream treat that’s just as enjoyable.  Luckily I had just received a large package of a delicious protein treat that’s much healthier than your average frozen yogurt.

Hi friends! 

Hope your week is off to a great start.  I love/hate 4 day weeks.  They are great for the obvious reason, the weekend is one day closer.  However they can also be a struggle since I feel like I’m trying to play catch up all week long.  Which is exactly how I’m feeling this week.  Lots to do with a little less time.  The reason I have so much to do though is because I’m heading off to Tahoe on Friday with my besties! 

So excited and looking forward to a nice relaxing weekend with my two closest friends from high school.

Who’s still melting in hot weather?!?  I am!  This week we’re back up in the 100’s.  Which I know is mild compared to those in places like Death Valley where it reached 120!  Do people actually live there?  Crazy!

The Love Nugget still insists on playing outside.  While I try to keep him indoors when it’s over 100 degrees it’s hard to argue when he’s happily playing in his sandbox while I try to get something done.  He’s in the shade so i usually allow him to play for a little while but then bring him inside to cool him down.  Which we do by enjoying lots of popsicles, frozen grapes, smoothies and smoothie bowls.

What I Ate Wednesday – Paleo Mint Chip Smoothie!

Good morning friends and happy hump day!  Ummm… did you know that the first day of Spring is next week?  How is this possible already?  I know that many of you are dealing with freezing temperatures and snow still but we’ve barely had any rainfall this year.  Which means there’s been no snow in the mountains and will most likely put us in a drought again this year.  Not good but it’s hard to complain when we’ve been enjoying sunny, 75 degree weather!

Sorry I’m not sorry 😉

Although I wish I could say we’ve been enjoying it more but unfortunately The Hubby and Love Nugget have been feeling a bit under the weather so have taken to “resting”.  The only thing worse than being sick yourself is having a sick family.  Especially when one of those family members (cough, cough, hubby), can be a little bit of a grown up baby 😉  Hopefully he’s on the mend and we’ll be able to enjoy the warm weather this weekend!

With the warmer weather I have been enjoying my fair share of smoothies again.

I feel like this month has flown by.  So much so that I haven’t had much time to make fun Halloween themed crafts and recipes like I love to do.

Good morning and happy hump day!

It’s crazy how much faster the week goes now that The Love Nugget is in school. Which by the way he is still loving and doing great at 🙂

The hard part about him starting school has been the little wrench it’s thrown in our schedule. Before I was able to go to the gym for Crossfit a few days a week at 8:30. They only offer a few classes each day with the two mornings times being at 5:30 am then 8:30 am. Since The Hubby typically goes to his Crossfit box for the 5:30 am class I was going to the 8:30am class. The evenings just don’t work as we are usually busy and I have to get dinner done etc. Anyway, The Love Nugget’s school starts at 8:45 which means I’m not able to make the 8:30 class. I was planning to go Mon, Wed, or Friday but we’ve had something going on pretty much every day during the 8:30 time slot. So I’ve been doing at home workouts, gym workouts (minus cross fit) and of course, running!

In preparation for the Nike Women’s Half Marathon of course 🙂

If you missed it, I shared with you all how I have the opportunity to run the Nike half in San Francisco with Whole Foods.  An opportunity I couldn’t pass up.

I’ve been very careful about not overdoing it and fueling my body properly before and after my runs.

Yesterday the hubby was home so I took advantage and headed outdoors for an early morning long run.

Chocolate covered cherry smoothie, yum!

Our oven is back in business!  Thank goodness I have such a handy hubby that can fix anything.  Well, he is the one who actually broke the oven so it’s a good thing he fixed it!  Ha!

The love nugget and I decided to stay home this morning and get some stuff done around the house.  After a busy weekend and a busy start to our week I haven’t had much time to make him any food.

I started the morning off by making him some banana pancakes and me a chocolate covered cherry green smoothie that I adapted from Peas and Thank you.  My new Vegan cookbook that I am loving!

Eggless Banana pancakes

1 cup of whole wheat pastry flour or whole wheat flour

1 tbsp baking powder

1 tsp cinnamon

1/3 cup applesauce

1 medium mashed banana

1 tbsp vegetable oil

1 cup of water

Sift together four, baking powder and cinnamon.  In a separate bowl, mix together applesauce, banana, oil and water.  Add to dry ingredients and mix well.  Drop 1/4 cup of mix into a greased pan and cook for a few minutes on each side.  These puff up quiet a bit so after I flip them once, I press them down with the back of a spatula.  Then flip them again.

To go with his pancakes, I decided to try out a little green smoothie for the love nugget.

Baby Green Smoothie

2-3 slices of frozen organic peaches

1/4 cup frozen organic blueberries

1/2 cup organic spinach

1 tbsp plain baby yogurt or greek yogurt

1/2 – 3/4 cup of water (the love nugget hasn’t had milk yet but if you’re little one has you can use that instead)

Place all ingredients into a blender and blend until smooth.  If it’s too thick, add in a little more water/milk.

The love nugget was in heaven!  Great way to get in some fruit and vegetables!

 Chocolate Covered Cherry Smoothie

1/2 banana

1/2 cup frozen cherries

1 tbsp almond butter

1 tbsp cocoa powder

1 cup chard, kale or spinach (today I used chard)

1 cup almond milk

Dash of Stevia

Blend all ingredients in a blender, enjoy!

Now that we’ve started our morning with a yummy, healthy breakfast, we’re off to cook away!
