Hi friends!

Hope you’re all having a marvelous week so far.  We’ve got another busy one which is a trend these days.  April/May are always pretty busy months for us and this year is no different.  In just 5 weeks we have 1 bridal shower, 2 baby showers, 7 birthday’s (including The Love Nugget’s) and Mother’s Day.  I need to start an April/May celebration fund!

It’s all fun stuff though and great since it makes the time go by faster.  This past weekend we were supposed to go out of town for my Dad’s birthday but something came up and we couldn’t make it.  So we took advantage of a night at home and had a little date night using a fun new monthly service called Datebox!

What I Ate Wednesday + Paleo muffins

Taking yesterday off from blogging and social media was a bit refreshing.  Although I will admit I did a little blog reading and was amazed by all the outpouring of support and emotion towards those affected by the bombings in Boston.  It makes you realize how much good there really is in the world even when at times it can be overshadowed by the bad.

My mom said something that made me think about how I want to raise our children.  She said, “gosh, it just makes you think are you really safe to go anywhere these days?”  This comment is something that I’m sure many of us have thought about.  It is so unfortunate that we are living in a world where we are fearful to go to public events that are meant to be fun and happy.  As easy as it would be to stay home, not sign up for races, not fly on planes, not travel the world and teach my children about different places and different cultures.  I refuse to do it.  I refuse to shelter my children and not share with them all the beauty in the world because as hard as it is to see at times, it is out there.

Okay, now for a more uplifting topic, It is Wednesday so it’s time to talk about some eats from yesterday.

Breakfast was a yummy cinnamon apple and sweet potato breakfast scramble with strawberries and almond butter.  So good and so filling!


I used the pumpkin pie scramble recipe but subbed in crock pot sweet potato and apples for the banana and pumpkin puree.

After breakfast we headed to the gym.  I got in a short run, then went to boot camp where the instructor put emphasis on team work and had us work in pairs, helping each other out in honor of Monday’s events.  We will sometimes go outside to run but if it’s super windy or cold I hop on the treadmill while everyone goes outdoors.  I’m such a baby with cold weather and running.  It was a chilly, windy morning but as everyone headed out for the run I decided to join them and show some support for all those affected by the bombing.  We grouped together after and did a nice congratulatory cheer which was such a positive way to end the workout.

Despite the wind and my desire to go home and curl up on the couch, we went to the farmers market and Whole Foods for a few items and some play time.  I love that our Whole Foods has a nice little play area for the kids.  After shopping I grabbed a coffee and read a magazine while The Love Nugget played 🙂

On the way home The Love Nugget and I shared an unpictured banana for a snack.  I was still pretty full from breakfast and the coffee so didn’t want much.

Lunch was a plate of avocado egg salad in endive leaves with my veggie staple of carrots, tomatoes and celery.  I seriously eat these every day and never get sick of them.  So good!

After playing for awhile, I got the urge to bake. So I whipped up a batch of these delicious Paleo Muffins adapted from Make It Paleo.

Chocolate Raspberry Paleo Muffins

Chocolate Raspberry Paleo Muffins


  • 3/4 cup Coconut Flour
  • 2 Eggs
  • 1/2 cup Egg whites
  • 1/2 cup melted Coconut Oil
  • 1/3 cup raw melted honey
  • 1/4 cup unsweetened applesauce
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/2 cup Grain free, dairy free mini chocolate chips (I use Enjoy Life)
  • 1 cup Frozen organic raspberries


  1. Preheat oven to 350 degrees.
  2. Line or grease mini muffin tins then set aside.
  3. In a medium bowl, combine all ingredients except chocolate chips and raspberries.
  4. Mix ingredients well then fold in raspberries and chocolate chips.
  5. Scoop into prepared muffin tins and bake for 35-40 minutes.

They were really good but I wish I would have made them in mini muffin tins instead of large tins.   Almost a little too moist with the raspberries but still really good!

While I cooked up the muffins the little man enjoyed some chocolate sweet potato avocado pudding.

Chocolate Sweet Potato Avocado Pudding


  • 1 ripe avocado
  • 1/2 cup steamed sweet potato
  • 1-2 tbsp. Cocoa powder
  • 1 tbsp. Pure Maple Syrup, honey or 1 tsp. stevia
  • 2 tbsp. Canned Light Coconut milk


  1. Puree all ingredients in a food processor until thick and creamy.
  2. Adjust sweeteners as desired then serve cold.
  3. Enjoy! Preferably with a spoon 🙂

I swear I gave him a spoon!  Guess he enjoyed it 🙂


For some reason yesterday I felt exhausted and had a headache that just wouldn’t go away.  Not sure if it was the wind or what but I was very unmotivated towards the end of the day.  I even cancelled meeting a friend for a pedicure because I was feeling so icky.  So our afternoon was pretty low key as was our dinner.  I snacked on some raw nuts and carrot sticks while sautéing some turkey bacon and cauliflower then topping it with an ugly egg.


The hubby and I shared a glass of Borjon Zinfandel and I ended the night with a delicious Raspberry Chocolate Chip Paleo Muffin.  So good!

Christmas celebrations 1 & 2

Hi guys!

I hope you all have a wonderful past few days and enjoyed whatever it was your were celebrating!  We had such a fun and busy past few days that I’m going to have to break into a few different posts for you.

We began our Christmas celebrations with my family coming to our house on Sunday for lots of fun and lots of love 🙂


The Love Nugget was excited to have so many people over and he was being quite the ham but we managed to get an okay family picture.


We decided to keep it pretty low-key with appetizers, sweets (which I forgot to get a picture of) and of coarse, holiday beverages!


I mentioned before how much my family loves to play games when we get together so I led everyone in a fun Christmas game I found here.


Everyone was drawing a holiday scene on their paper plates while they were on their heads.  This is only half the group that was playing.  With a large crowd it was pretty funny!


 We also played a hilarious game of Guesstures.  One of our favorites!


 They hubby gets really into it but… his team lost (mine won!)  We’re not competitive at all 😉

Besides games, there were also presents that somebody loved!  It’s funny to look back at these first pictures compared to pictures from the end of the week because he was so cautious in the beginning while opening his gifts.  Towards the end there was tissue paper and wrapping paper being tossed everywhere!


The adults did a gift exchange which was fun!

The Love Nugget had such a fun time playing with his new presents and spending time with family and so did everyone else.

The next day since my mom was there, the hubby and I headed to the gym to get in a quick workout.  It’s been ages since we’ve done a workout together and it was a lot of fun!  Since he’s super into crossfit right now and I’ve been wanting to try it, we did a crossfit workout from Blonde

It was a good one and I surprised myself with the weight I was able to use.

We came home, cleaned up and then got on the road to head to our next Christmas!

As I mentioned the other day, this year was a little tough with my grandma being gone.  She loved Christmas and ever year we all looked forward to going to their house, opening stockings, opening gifts, enjoying good food and lots of great company. Despite it being a pretty tough day, especially for my Grandpa, it was also a fun day.

The Love Nugget ran around playing and enjoying family.


We enjoyed watching them open gifts from Great Grandpa and did a fun gift exchange with the cousins.  We also posed for some pictures 🙂

It turned out to be a fun day and the best part was receiving a special gift from my grandfather.

My grandmother loved to craft and made lots of Christmas ornaments which she often gifted to others.  While setting up for Christmas this year, my cousin and grandpa found a few boxes of handmade Christmas ornaments the my grandmother had made.  So we were all gifted a special ornament to have a little memory of grandma on our tree every year 🙂

It was a pretty good few days and it was only just beginning!  Stay tuned for the rest of our festivities tomorrow!
