I was planning to do a completely different type of post today but with my cold my head is in somewhat of a fog and my brain is rambling so a random post is what you get!  Sorry in advance but if you stick with me till then end there might just be something worth it!

So, because I don’t want to bore you with anymore of my sickness talk, I’ll spare you the details but… I’m starting to feel a little better!  After taking advice given by many of you lovely people, I rested the past two days with NO exercise!  I drank tons of green juice, ate soup made with the pulp from the green juice, downed vitamins and tea all day long.  I will be better by this weekend!

Okay, moving on… The Love Nugget has been all about “bars” lately.  No, not beer drinking, shot taking, filler up bars but granola bars.  A few weeks ago I reviewed 18 Rabbit’s Granola Bars and he sampled all the flavors of their Bunny Bars.  Of course he loved them!  However, I haven’t bought any new ones and have been meaning try and make him some at home.  So the other day I threw some stuff together and pressed it into a baking sheet.  I knew as I was doing it that the mixture wasn’t quite sticky enough and probably was going to end up more like granola.  Sure enough, Granola was what we got.  However, it was a very tasty granola that The Love Nugget and I both enjoyed!  So, I thought I’d share the recipes with you all since it’s very good and kid friendly!

Almond Coconut Granola

Almond Coconut Granola

Ingredients

  • 2 cups of Old Fashioned Oats
  • 1/3 cups Chopped Almonds
  • 1/3 cup Chopped unsulfured Dried Apricots
  • 1/3 cup unsweetened Coconut
  • 1/4 cup Chia Seeds
  • 1/2 tsp. Salt
  • 1/3/ cup Chopped Almonds
  • 2 tbsp. Almond Butter
  • 2 tbsp. Coconut Oil
  • 1/2 cup 100% pure Maple Syrup

Instructions

  1. Preheat oven to 325 degrees.
  2. In a large mixing bowl, combine all ingredients except the last three. Set aside.
  3. In a microwave safe bowl, melt the coconut oil then add almond butter and maple syrup.
  4. Stir until creamy then pour into the oat mixture.
  5. Stir until a wet, sticky mixture forms then press into a baking sheet.
  6. Bake for 15 -17 minutes or until lightly browned.

Sometimes kitchen fails turn out to be pretty good!  This granola isn’t super sweet so it’s perfect to top my smoothies or for The Love Nugget’s yogurt bowl.  Well, he’s now asking for it every time I open the pantry door.  Loves it!

Now, you may remember for Christmas I received a few new to me products from my Mother in Law called H2O At Home.    I was loving the few things that I got from her and was thrilled when the company contacted me and offered to send me some more samples to review.

H2O At Home is a company that began in France over 13 years ago.  They specialize in creating products that are environmentally friendly and chemical-free.  They have three wonderful product lines all of which I’ve had the chance to sample.

  • Their Natural Home Care includes Chiffonnettes, natural cleansers and smart-cleaning tools.  My favorite so far is the Chiffonnette which works wonders at dusting and wiping down surfaces without any chemical product added to it.  I just get it slightly damp and wipe away!  I also really enjoyed their natural laundry soap as I think that there are way too many harsh chemicals in our soaps today.  It has a naturally pleasant scent and left my clothes smelling nice and fresh 🙂
  • Their Personal Care is by far my favorite!  I’ve never been really big at using soap on my face.  I tend to use a wet washcloth and scrub away.  So when I received their cleansing and exfoliating cloth to use on my face, I was beyond excited.  Without using any soap I’m able to remove all my makeup and any unwanted dirt or oil buildup.  It’s also a wonderful exfoliator!  Their body wash has become my go-to daily shower soap.  It doesn’t have a very strong scent but uses extra virgin olive oil and lavender oil which moisturizes the skin wonderfully.
  • Their Home Fragrance was actually one of my Christmas gifts from my Mother in Law.  It’s an electric warmer that melts scented pebbles for up to 3 hours without burning.  I also received a few of the scented oil extracts that are made from 100% natural essential oils and floral extracts.  They are used to recharge the pebbles once their scent has faded.  Basically you are able to keep a nice, pleasant scent in your home for hours on end without burning a candle!

I’m loving all their products and feel so much better about the fact that we are exposing our bodies to less harsh chemicals by using their natural product line.  H2O is a company that works privately through home parties and sales much like Stella and Dot or other home party companies.  If you are interested in becoming involved with this company or learning where you can find an advisor in your area, check out their website here.

Happy Monday!

I’m going to make this post short and sweet.   I slept in a little and The Love Nugget will be up soon so my alone, blogging time will be cut short today.  Oh well!

To begin with a big thank you to the Marvelous Katie at Healthy Diva Life for hosting today!  Thanks Katie!

I mentioned in Friday’s post that the hubby and I would be having a date night that evening.  However, we were both exhausted and unmotivated to cook so we moved it to the next night.  Instead, we watched some DVR and ate leftovers of this marvelous Paleo Turkey Chili.

Paleo Turkey Chili

Paleo Turkey Chili

Ingredients

  • 1 lb. Ground Turkey
  • 1 chopped Red Bell Pepper
  • 2 diced Sweet Potatoes
  • 1/3 cup Chopped Onion
  • 1 28 oz. an Organic Diced Tomatoes
  • 2 Garlic Cloves, diced
  • 1 tbsp. Dried Oregano
  • 1 tbsp. Ground Cumin
  • 2 tsp. Chili Powder
  • 1 tsp. salt

Instructions

  1. In a medium pan, cook ground turkey until brown and cooked through.
  2. Place remaining ingredients, plus the browned turkey into a crockpot.
  3. Cook on high for two hours then reduce heat to low and cook for 4-5 hours more.
  4. Top with diced avocado, cheese (if you're not paleo), or other toppings of choice.

Saturday I had a marvelous morning at the gym taking a Core class I love but haven’t done for awhile.

It was awesome!

Then we ran some errands and enjoyed the beautiful day 🙂  Later that evening we finally had our date night.  Homemade pizza’s, regular for the hubby, and this one for me.  Love it!  Then we played a fun game from this site called Would You Rather that I found from this site.  It sparked some good conversations and definitely made you think but some of the questions we couldn’t even answer because they were too outrageous!  Something fun to do though besides watching a movie or TV 🙂

Sunday morning was marvelous because I stayed in my PJ’s until almost 12:00!  The hubby helped out so much with the chores that I was able to finish updated my recipe page (I’m super happy about that one!), catch up on emails, blog replies and finish my Fitmixer Post for this week.  Which by the way is a delicious Carrot Cake Protein Muffin recipe!

We headed off to our first Super Bowl party around 2:30 with my Paleo Meatballs and the Hubby’s Buffalo Chicken dip.  I decided to keep my brownie bites at home 🙂

It was such a gorgeous almost Spring-like day out which was definitely enjoyed by the kiddos running around playing.

Somewhat Paleo since Champagne and vodka are both on the “cleaner” list for alcoholic drinks although really all alcohol should be avoided while eating Paleo.  But… since I’m not doing it 100%, I drank up!

I did great with my Paleo eats though only munching on my Paleo meatballs and veggies.  There were lots of snacks and treats but honestly, I didn’t even crave any of them!  I was totally satisfied with what I was eating 🙂

After the halftime show, we headed over to my cousins house for party number two!  The Love Nugget has been asking for his Auntie Gigi and Uncle Nony (Tony) for the past few days so we had to make a stop there for a bit.  I didn’t get any photos but he had a blast playing with a few of his other friends while we watched the second half.  Which was actually enjoyable!

This morning, I’m planning to start my Marvelous Monday with a smoothie bowl topped with this delicious Paleo Granola.

I love granola on my smoothie bowls and that was one thing I was really missing.  So when I saw a few recipes for Paleo Granola, I thought I’d create my own.  Boy did it turn out good!

Paleo Granola

Paleo Granola

Ingredients

  • 1/2 cup Pecans
  • 1/2 cup Raw Walnuts
  • 1/2 cup Raw Almonds
  • 1/3 cup Raw Cashews
  • 2 tbsp. Chia Seeds
  • 1/3 cup unsweetened Coconut
  • 1/4 cup Almond Meal
  • 1 tsp. Cinnamon
  • 1/2 tsp. Ground Ginger
  • 1/2 tsp. Nutmeg
  • 1/2 tsp. Sea Salt
  • 1/3 cup Unsweetened Applesauce
  • 1/4 cup melted Coconut Oil
  • 2 tbsp. Almond Butter
  • 1/4 cup Raw Honey
  • 1 tsp. Vanilla

Instructions

  1. Preheat over to 300 degrees and line a baking sheet with parchment paper.
  2. In a food processor, pulse nuts and coconut until chopped but not too much.
  3. Place the nut/coconut mixture into a bowl and add in almond meal, cinnamon, nutmeg, ground ginger and sea salt.
  4. In a separate bowl, mix together applesauce, almond butter, vanilla, honey and coconut oil.
  5. Add the wet mixture to the nut mixture and mix until wet and clumpy.
  6. Spread evenly onto your baking sheet and bake for 30 - 35 minutes stirring halfway through. Watch closely towards the end to make sure it doesn't burn.
  7. 7. Allow to cool then enjoy!

What I Ate Wednesday + Two Tasty Recipes!

It’s Wednesday which  means I’ll be linking up with Jenn for another round of What I ate Wednesday. 

Peas and Crayons

I was much better at taking pictures of my eats yesterday so this should be fun!  Plus, I’ve got a yummy recipe for you guys! 

Yesterday’s morning I was up early and headed to the gym drinking a Fitmixer aminos on the way and while I was there.  I seriously love this stuff and was beyond sad when our supply ran out.  Not only was I missing the yummy flavor and energy burst it give you, but my muscles were much more sore than they had been after a few days of exercise without it.  I’m telling you, this stuff works! 

After the gym, I came home, showered, and whipped up a warm homemade pumpkin spice latte. 

So easy and it tasted just like the higher calorie Starbucks version.  Okay, probably not JUST like it, but very close! 

Pumpkin Pie Latte

1/2 cup unsweetened vanilla almond milk (or milk of choice)

1 tbsp pumpkin puree

1 packet of stevia

1/2 – 1 tsp pumpkin pie spice

1 cup of dark blend hot coffee (I used Starbucks Sumatra blend)

In a small saucepan, warm the milk over medium heat.  Add in the pumpkin puree, stevia and pumpkin pie spice.  Whisk until combined well and the mixture is warm and bubbly.  Pour into your mug of hot coffee and enjoy! 

For breakfast I popped a frozen flaxseed waffle into the toaster and mixed up some greek yogurt, almond butter, and protein powder.  I spread that over my waffle then topped it with a few thinly sliced apples and cinnamon.  Yum! 

We had plans to meet a friend at the Fountains to play so we were rushing out the door after breakfast.  I didn’t grab a snack for myself but did have time to run into Peet’s and order a Peppermint Mocha with soy 🙂 

I enjoyed my Mocha, while the Love Nugget played with his friend Keenan at Me Gusta and I visited with Keenan’s mom Melissa.  She has a wonderful blog called Fit ‘N’ Well Mommy and if you haven’t checked it out yet make sure you do, it’s great! 

After playing at Me Gusta, we took a little train ride which is always a hit with the boys 🙂

It was getting late and the Love Nugget was fading so I ran into Whole Foods to grab him some lunch before heading home.  Unfortunately he wasn’t really having it so we packed it up and made our way back home for nap time. 

While he napped, I made myself a simple lunch of Toast smeared with goat cheese and avocado along with celery and sugar-plum tomatoes.  Love that combo! 

It’s time for Foodie Pen Pal so I needed to make a batch of granola to send in my package. 

This is the recipe I wanted to share with you.  So tasty and extremely quick and easy to make! 

So good that I may have snacked on WAY too much of this after it came out of the oven and as I snapped photos of it.  Ooops! 

Luckily I had made extra just in case that happened 🙂

Almond Butter Chocolate Chip Granola

1 1/2 cup Old Fashioned Oats

1/4 cup chopped almonds

1/4 cup coconut (optional but I love it!)

2 tbsp Almond Butter (I used Maranatha all natural)

1 tbsp coconut oil, melted

3 tbsp honey

1 tsp vanilla

1/2 tsp sea salt

1/2 tsp cinnamon

1/4 cup chocolate chips

Preheat oven to 325 degrees.  Mix all ingredients in a stand mixer or by hand until combined well and the mixture is clumpy.  Scoop onto a baking sheet and pack down into a large, flat, pile.  I like to do it this way rather than spread it out so that the granola bakes in chunks rather than smaller pieces.  Bake for 10-12 minute flipping halfway through.  when you flip try not to break it apart too much.  Remove from oven and allow to cool before gobbling it up!  Enjoy!

Dinner last night was supposed to be Sweet Potato Shepard’s Pie but I switched things up since I had purchased Tilapia at the store that day.  I made this Tilapia recipe and topped it with an apricot dijon sauce.  We also enjoyed some steamed carrots tossed with a little coconut butter, honey and sea salt.  It was tasty!

After dinner I fixed a mug of my newest tea obsession.

If you like Sleepytime tea, and vanilla, you’ve got to try this!  So good! 

Later, the hubby and I shared this bowl of deliciousness.   

Non-fat greek yogurt mixed with a tbsp of almond butter, honey, cinnamon, chopped apples and topped with hemp seeds.  Perfect way to end the day! 

 Okay, off to start the day today!  Hoping the Love Nugget will want to go to the gym today so I can take Spin and Piyo.  Wish me luck!
