Bonjour!

I mentioned yesterday that we hosted a super fun, French dinner at our house this past weekend so today I wanted to share a little more about that.

There’s a small group of us that get together once a month for a fun family dinner.  We rotate who hosts it and the hosts picks a country/theme, plans a yummy dinner then the guest bring wine that goes along with the theme.  Our first dinner was Spanish themed and we enjoyed Sangria and Paella.  Yum!

Good morning friends!

How’s everyone’s week going?  Mine started out great but unfortunately I came down with a bit of a cold 🙁  Grrrr… I think I’m more frustrated than anything as I just don’t have time to be sick.  Luckily I loaded up on vitamins, elderberry syrup, bone broth and gelatin so am feeling much better today.  Good thing because we have fun plans for the weekend that I just can’t be sick for!

Speaking of our weekend, I’ve got a ton of things to do to get ready for our adventure so I’m just popping in real quick today to share a quick and easy dinner with you all.

With school back in session and life getting a bit busier, quick and easy dinners are a favorite around here.  As I’m sure they are in many other households 🙂  You all know I’m a fan of healthy meals but sometimes healthy can mean multiple ingredients, steps, and time.  However there are TONS of recipes that are very healthy and can be made in a very short amount of time.  One we’ve enjoy is this quick and easy Bruschetta Chicken recipe that is simple to whip up on a busy evening.

The bruschetta is made with fresh, in season ingredients and the chicken is simple to cook on the grill or indoors on a grill pan.  Which is the method I used the last time we ate it.   AND it was enjoyed by all!

Bruschetta Chicken

Bruschetta Chicken

Ingredients

  • 3-4 organic chicken breasts
  • 2 tbsp. dried basil,
  • 1 tsp. sea salt
  • 1 tsp. pepper
  • 1 pint cherry tomatoes (I LOVE cherubs)
  • 1/4 cup finely chopped red onion
  • 1 garlic clove, minced
  • 1/4 cup chopped, fresh basil
  • 2 tbsp. olive or avocado oil
  • sea salt and pepper to taste

Instructions

  1. For the Chicken
  2. Rinse and pat chicken dry.
  3. Season with dried basil, sea salt, and pepper.
  4. Heat grill or grill pan over medium heat.
  5. If using a grill pan, lightly oil the pan with olive or avocado oil.
  6. Cook chicken about 5-7 minutes per side or until no longer pink in the middle.
  7. For the Bruschetta!
  8. In a medium bowl, combine all the bruschetta ingredients.
  9. Mix well then store in the fridge until ready for use.
  10. Top chicken with bruschetta and enjoy!

WIAW – Whole30 Meal prepping addition

Morning friends!

I’m two days into the Whole30 and feeling good!

So far it’s not too bad since it’s not that far off from how I was already eating bu yesterday was a little tough.  I had a super early appointment then a lunch at a local farm hosted by Placer Grown and a later than usual outing for The Hubby’s flag football game.  I stayed strong and skipped on the wine, bread, dressing and fresh local feta cheese but that left me with a plate of arugula, a few pomegranates and pear slices.  Hmmm… needless to say I was a little hungry when we got home but luckily I had prepped a ton of Whole30 foods on Sunday so some quick, pre-mixed tuna salad was a lifesaver!

Speaking of Sunday food prep, I hear a lot of people who have completed the Whole30 saying meal planning and food prep was key to their success. Since I’ve had a lot of interest in how things are going and just an overall interest in the Whole30, I thought I’d share with you all that I prepped for the week.

Happy Monday!

I’m going to make this post short and sweet.   I slept in a little and The Love Nugget will be up soon so my alone, blogging time will be cut short today.  Oh well!

To begin with a big thank you to the Marvelous Katie at Healthy Diva Life for hosting today!  Thanks Katie!

I mentioned in Friday’s post that the hubby and I would be having a date night that evening.  However, we were both exhausted and unmotivated to cook so we moved it to the next night.  Instead, we watched some DVR and ate leftovers of this marvelous Paleo Turkey Chili.

Paleo Turkey Chili

Paleo Turkey Chili

Ingredients

  • 1 lb. Ground Turkey
  • 1 chopped Red Bell Pepper
  • 2 diced Sweet Potatoes
  • 1/3 cup Chopped Onion
  • 1 28 oz. an Organic Diced Tomatoes
  • 2 Garlic Cloves, diced
  • 1 tbsp. Dried Oregano
  • 1 tbsp. Ground Cumin
  • 2 tsp. Chili Powder
  • 1 tsp. salt

Instructions

  1. In a medium pan, cook ground turkey until brown and cooked through.
  2. Place remaining ingredients, plus the browned turkey into a crockpot.
  3. Cook on high for two hours then reduce heat to low and cook for 4-5 hours more.
  4. Top with diced avocado, cheese (if you're not paleo), or other toppings of choice.

Saturday I had a marvelous morning at the gym taking a Core class I love but haven’t done for awhile.

It was awesome!

Then we ran some errands and enjoyed the beautiful day 🙂  Later that evening we finally had our date night.  Homemade pizza’s, regular for the hubby, and this one for me.  Love it!  Then we played a fun game from this site called Would You Rather that I found from this site.  It sparked some good conversations and definitely made you think but some of the questions we couldn’t even answer because they were too outrageous!  Something fun to do though besides watching a movie or TV 🙂

Sunday morning was marvelous because I stayed in my PJ’s until almost 12:00!  The hubby helped out so much with the chores that I was able to finish updated my recipe page (I’m super happy about that one!), catch up on emails, blog replies and finish my Fitmixer Post for this week.  Which by the way is a delicious Carrot Cake Protein Muffin recipe!

We headed off to our first Super Bowl party around 2:30 with my Paleo Meatballs and the Hubby’s Buffalo Chicken dip.  I decided to keep my brownie bites at home 🙂

It was such a gorgeous almost Spring-like day out which was definitely enjoyed by the kiddos running around playing.

Somewhat Paleo since Champagne and vodka are both on the “cleaner” list for alcoholic drinks although really all alcohol should be avoided while eating Paleo.  But… since I’m not doing it 100%, I drank up!

I did great with my Paleo eats though only munching on my Paleo meatballs and veggies.  There were lots of snacks and treats but honestly, I didn’t even crave any of them!  I was totally satisfied with what I was eating 🙂

After the halftime show, we headed over to my cousins house for party number two!  The Love Nugget has been asking for his Auntie Gigi and Uncle Nony (Tony) for the past few days so we had to make a stop there for a bit.  I didn’t get any photos but he had a blast playing with a few of his other friends while we watched the second half.  Which was actually enjoyable!

This morning, I’m planning to start my Marvelous Monday with a smoothie bowl topped with this delicious Paleo Granola.

I love granola on my smoothie bowls and that was one thing I was really missing.  So when I saw a few recipes for Paleo Granola, I thought I’d create my own.  Boy did it turn out good!

Paleo Granola

Ingredients

  • 1/2 cup Pecans
  • 1/2 cup Raw Walnuts
  • 1/2 cup Raw Almonds
  • 1/3 cup Raw Cashews
  • 2 tbsp. Chia Seeds
  • 1/3 cup unsweetened Coconut
  • 1/4 cup Almond Meal
  • 1 tsp. Cinnamon
  • 1/2 tsp. Ground Ginger
  • 1/2 tsp. Nutmeg
  • 1/2 tsp. Sea Salt
  • 1/3 cup Unsweetened Applesauce
  • 1/4 cup melted Coconut Oil
  • 2 tbsp. Almond Butter
  • 1/4 cup Raw Honey
  • 1 tsp. Vanilla

Instructions

  1. Preheat over to 300 degrees and line a baking sheet with parchment paper.
  2. In a food processor, pulse nuts and coconut until chopped but not too much.
  3. Place the nut/coconut mixture into a bowl and add in almond meal, cinnamon, nutmeg, ground ginger and sea salt.
  4. In a separate bowl, mix together applesauce, almond butter, vanilla, honey and coconut oil.
  5. Add the wet mixture to the nut mixture and mix until wet and clumpy.
  6. Spread evenly onto your baking sheet and bake for 30 - 35 minutes stirring halfway through. Watch closely towards the end to make sure it doesn't burn.
  7. 7. Allow to cool then enjoy!

The Love Nugget has been battling a little cold so we haven’t been able to make it to the gym this week 🙁  Frustrating because I’m pretty sure he got his cold from the daycare there since I watched a father drop off their coughing child the other day.  Ugh!  Luckily he doesn’t have a cough, just a runny nose and is as happy as can be!  Unlucky for me, my gym routine is all messed up but, it happens.

Yesterday, since we had a little more time, I had a yummy breakfast while enjoying a second cup of coffee and catching up on emails.

Green Egg Muffins

1 cup shredded carrots

2 large handfuls of spinach (chopped fine or pulse in a food processor)

6 eggs

1/4 cup parmesan cheese

mozzarella cheese to top

Preheat oven to 350 degrees and spray a muffin tin with cooking spray.  Mix all ingredients together in a bowl.  Pour into muffin tins and bake for 25 -30 minutes or until cooked through.

These were really tasty and my little nugget ate them even though they were green!  He’s been a little picky about his veggies lately so this was a great way to get in a few without him noticing.

After breakfast, since we weren’t going to the gym, I decided we should go run a few errands before it got too busy out.  While at Target, I grabbed one of my favorite Luna bars for a snack.

We got home and the Love Nugget was fast asleep so I got in a quick workout, wrapped some gifts, and got some meal planning done for our Christmas events.  Big grocery shopping trip tomorrow!

When the Love Nugget woke up, he was starving!  As I prepped his lunch I snacked on a few carrots with sunflower seed butter.  Loving this snack lately.  Then I made a lettuce wrap with turkey and goat cheese along with more carrots.

It doesn’t look like much but it was just what I wanted!

After lunch I had a few squares of this delicious chocolate I got in the mail a few days ago.

Lily’s Chocolates caught my eye on another blog about a month ago.  Being a huge chocolate fan, I immediately hopped onto their website to see what they were all about.  I was blown away by the story of Lily, Chuck’s (co-founder of the company) niece who was diagnosed with brain cancer at seven.  Luckily she beat it and while in the hospital recovering she was saddened by the lack of supplies for the other children.  After returning home, she and her family raised 9,000 to donate to the hospital.  She continues to raise money for kids with cancer and in honor of her determination and bravery, these delicious chocolate bars were named after her.  Not only that, but a percentage of  profits is donated to kids with cancer and the services they need.

Besides such a wonderful story, these bars are delicious and healthier than your average bar since they are sweetened with Stevia!  In case your new to stevia, it’s a natural sweetener that has a low glycemic index and virtually no calories.

Coconut and dark chocolate?  Sure, don’t mind if I do!  I love that the chocolate is divided into smaller bite size pieces making me less likely to eat the whole bar in one sitting 🙂

Also pretty awesome was that there are only 170 calories per serving and that’s half the chocolate bar!  That’s pretty good!  Besides the wonderful nutrition facts and ingredients, this chocolate tastes delicious!   Smooth and creamy with little coconut flakes mixed in giving it the perfect amount of coconut flavoring.

As I said the wonderful folks over at Lily’s sent me a few bars to taste and a few to giveaway.  Pretty cool!  One lucky winner will receive two delicious Lily’s chocolate bars.  One Almond and one Crispy Rice (the Love Nugget opened the original).

When we were all cleaned up from lunch, we got some supplies out to do a little painting and crafting.

He loves to paint but isn’t all that sure about getting it on his hands.  He decided he should wipe it off on my pants.  So nice of him!  Good thing I live in workout clothes half the time!

When he was done painting, we started making a wrapping paper wreath.  The hubby got home early and joined in on the fun.

Since he was home early we decided to make some cookies with the Love Nugget.  I had picked up a bag of sugar cookie mix at Target to have on hand so we just used that.  I was so disappointed!  I love the recipe I normally make and wish I just would have done that.  Oh well, the Love Nugget had a blast!

He doesn’t normally get to eat a lot of sugar so he gets pretty excited to eat cookies!  Since it was so close to bed time though, we only gave him a few bites.   We saved the rest to decorate and eat tomorrow 🙂

Dinner tonight was quick and tasty.  I’m glad I picked up a few frozen pot pies from the farmer’s market earlier.  I had a feeling we wouldn’t be in much of a cooking mood and we weren’t.  These pot pies aren’t just any pot pies…. these are called Z-pies and are gourmet pot pies.  They have a ton of unique flavors to choose from and since they are frozen you can stick them in the freezer for later, or cook them up right away!

I got the Chicken Mushroom pie and chose the Italian Sausage for the Hubby.  The pie was pretty rich and filing so I only managed to eat half of it but it was good!

After dinner, I enjoyed one of my favorite treats lately.

Happy Wednesday!

I haven’t linked up with Jenn for a What I Ate Wednesday in a few weeks so thought I’d jump back on board today.  Plus, I’ve got a yummy recipe to share with you!

Peas and Crayons

Yesterday morning I was in a funk.  Well, let’s be honest here, I’ve been in a funk ever since Saturday but I think I’m just beginning to realize it.  Anyways, I got up and did a Fitmixer workout and had planned to go to Boot camp as well but wasn’t feeling it.  Instead I wasted time reading blogs and chatting with my mom while the Love Nugget ate breakfast.  Usually this is when I would eat my breakfast as well but… again with the funk.  Instead I drank a few cups of this coffee that I’m loving,

Then munched on a banana while cleaning up the kitchen.  We had plans to go meet friends around 10:30 so I decided to head out early and get a few errands done first.  On our way out the door I mixed up a FitSlim shake to hold me over.

While shopping my tummy started grumbling so I ate the other half of a Cinnamon Quest Bar.  Seriously these things are SOOOO good!

After meeting our friends and taking a little train ride, we headed to Whole Foods for lunch.  I forgot to snap a picture of our lunch but the Love Nugget and I shared a box from their hot bar.  Usually I just stick with the salad bar but they had so many yummy fall dishes on their hot bar today!   Butternut squash salad, green bean salad, roasted turkey, roasted beets and fennel and fresh fruit.  It was like a Thanksgiving feast!

A little later in the day, I fixed a plate of one of my favorite snacks.

I enjoyed it with this little guy who munched on some celery as well.

I had a bunch of winter vegetables I’d been wanting to roast for a few days.

So I planned it for our dinner last night along with some organic chicken breasts and it turned out to be delicious!

Balsamic Roasted Chicken and Winter Vegetables

1 Parsnip

1/4 Head of Cauliflower

1 Broccoli Stalk

2 Medium Carrots

2 Radish

1 Fennel Bulb

2 Organic Chicken Breasts

1/3 cup Balsamic Vinegar

1/4 cup Olive Oil

1 tsp Maple Syrup

1 tbsp water

Juice from 1/2 Lemon

1 tsp Dried Italian Seasoning

1 clove chopped garlic

1 tsp salt and pepper

In a small bowl, whisk together the balsamic, water, maple syrup, olive oil and seasonings.

Set aside, rinse chicken and pat dry then place into a zip lock bag.  Pour 1/4 cup of balsamic mixture over the chicken in the zip lock bag.  Massage into the chicken then marinate for at least 30 minutes.  Meanwhile, wash and chop all the vegetables then put into a large bowl.  Pour the remaining balsamic mixture over the vegetables and mix well.

Preheat the oven to 375 degrees then place the chicken breasts in a large baking dish.  Scatter the vegetables around the chicken.

Bake for 30 – 35 minutes or until the chicken is cooked through.

The chicken was good but I’d have to say the star of the meal was the roasted vegetables.  Yummy!  I actually only had a few bites of chicken then decided all I wanted was veggies and went back for seconds!  So good!

With so many veggies in my tummy I was pretty full.  I enjoyed a cup or hot Sleepy Time tea while the hubby and I watched the election results.

Today we are off to the gym for spin class then I have a dentist apt. this afternoon 🙁  I hate the dentist but one of those things you just have to do.
