Quick and Healthy Bruschetta Chicken

Quick and Healthy Bruschetta Chicken

Good morning friends!

How’s everyone’s week going? ¬†Mine started out great but unfortunately I came down with a bit of a cold ūüôĀ ¬†Grrrr… I think I’m more frustrated than anything as I just don’t have time to be sick. ¬†Luckily I loaded up on vitamins, elderberry syrup, bone broth and gelatin so am feeling much better today. ¬†Good thing because we have fun plans for the weekend that I just can’t be sick for!

Speaking of our weekend, I’ve got a ton of things to do to get ready for our adventure so I’m just popping in real quick today to share a quick and easy dinner with you all.

With school back in session and life getting a bit busier, quick and easy dinners are a favorite around here. ¬†As I’m sure they are in many other households ūüôā ¬†You all know I’m a fan of healthy meals but sometimes healthy can mean multiple ingredients, steps, and time. ¬†However there are TONS of recipes that are very healthy and can be made in a very short amount of time. ¬†One we’ve enjoy is this quick and easy Bruschetta Chicken recipe that is simple to whip up on a busy evening.

The bruschetta is made with fresh, in season ingredients and the chicken is simple to cook on the grill or indoors on a grill pan.  Which is the method I used the last time we ate it.   AND it was enjoyed by all!

Hi friends!

Guess what? ¬†I got out of my little funk I mentioned the other day. ¬†I’m feeling much better after a few days of good workouts, time with my Love Nugget and just relaxing. ¬†I spent yesterday afternoon on the couch catching up on some work while watching the Bachelor which was great. ¬†Even though I’m having a hard time getting into this season… ¬†I’m sure it will get juicy soon!

Anyway, let’s move on to food as I join Jenn for another WIAW party!

As many of you know I’ve been¬†working at healing my hypothyroidism for a few months now. ¬†I try not to clog your feed with thyroid posts but every so often I like to check in and let you know some things I’m doing in case you or someone you know has the same issues. ¬†If you missed my previous thyroid posts you can read them here, or here.

Diet has been one area that is easy to focus on as a means of ¬†healing. ¬†I like food and I already eat very clean so it’s not hard to make a few tweaks here and there in order to assist thyroid healing. ¬†I shared some foods before that were good for thyroid health one of those being brazil nuts. ¬†Mostly for their Selenium quantities. ¬†Selenium is essential for healthy thyroid function and healthy metabolism. ¬†Luckily there are some Selenium rich foods that we can incorporate into our diet to increase the level in our bodies therefor benefiting our thyroid. ¬†Unfortunately, the food that is highest in selenium is not my favorite.

What’s in season?

What’s in season?

I like to try to shop for produce seasonally. ¬†Not just because it’s good to do but because I tend to crave foods more when they are in season. ¬†Like right now I’m LOVING apples because they are just so juice, fresh, and not to mention, everywhere!
