By now you’re probably getting a little tired of all the pumpkin.  Pumpkin lattes, pumpkin breads, pumpkin donuts, pumpkin muffins, pumpkin, pumpkin everywhere!  I think the fact that during my Whole30 I didn’t eat much pumpkin has led to my over consumption of the orange winter squash recently. When I say over consumption I mean we’ve gone through a few cans in the span of a week.  Nothing wrong with that right!?!  I mean, it is really healthy for you.  Not to mention, it’s great added to most anything in my opinion.  However one of my favorite pumpkin treats by far is a pumpkin cookie.

So I know I haven’t been very consistent with Toddler Tuesday but I’m going to try to bring it back along with the link up since it’s fun to discuss some kid related things each week.

Do not compare.  If there’s one major thing I’ve learned from being a mom it’s that every child is different. 

Brag a little, it’s okay to be proud of your kids and this is the place to do it

For this edition of Toddler Tuesday I thought I would share a breakfast recipe perfect for those mornings you need something quick and easy.  I know many of you with older kids are experiencing much more hectic mornings as they start back up at school.  Often times breakfasts can turn into unhealthy choices or in some households, no choices.  Breakfast is truly such an important start to a child’s day and really sets the tone for how their day will be.  From my experience teaching, I saw first hand how student’s that were fed a healthy breakfast were able to focus longer, were less likely to be tired, were less likely to have behavioral problems, and typically were more active in classroom activities than those that had not breakfast or a sugary meal to start the day.

So, I’ve got a very easy recipe that you can throw together on the weekend and have on hand for a quick breakfast or snacks during the week.

Chocolate Chip Strawberry Baked Oatmeal Cups

Chocolate Chip Strawberry Baked Oatmeal Cups

Ingredients

  • 1 cup Steel Cut oats (soaked overnight in water)
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup unsweetened applesauce
  • 2 eggs
  • 2 tbsp.100% pure maple syrup
  • 1/3 cup chopped strawberries
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/4 cup mini chocolate chips

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Prepare muffin tins or silicone muffin cups by coating with cooking spray.
  3. Mix all ingredients together in a large bowl then pour into prepared pan.
  4. Bake for 30 minutes or until firm and lightly browned.
  5. Cool then store in the fridge or freezer for a quick and healthy breakfast!

Yes these have mini chocolate chips adding a bit of sugar but if you use dark chocolate chips it’s going to have less sugar than a milk or semi-sweet chocolate chip.  I used Enjoy Life mini chips which are non-dairy, gluten-free, egg free, and only contain evaporated cane juice.

They were definitely a hit with The Love Nugget and will freeze nicely making them a great go-to breakfast on our busy mornings.

An Easy Christmas Craft and Vegan Fudge Recipe!

It’s almost Christmas!

Are you ready?  Excited?  Anxious!  We’re having my family over tomorrow which will probably be 13-15 people.  Thankfully everyone was okay with just doing appetizers and bringing a dish so I have less cooking to do the day of.  It’s much for fun to relax, play games and enjoy company than to be in the kitchen cooking half the time.  When ever I’m hosting a get together, I start planning weeks in advance.  Prepping to-do lists, menu ideas, grocery lists, etc.  Then just a few days before, I get out all my serving dishes I’m going to use, and start preparing what ever food I can do ahead.  Usually the day before is cleaning and setting up the tables, bar, setting out plates, silverware and glasses.  I’ve learned that starting early means less for me to do the day of and way less stress 🙂

Yesterday I spent most the day baking away.  I love to bake during the holidays and no matter how organized I try to be, I end up being a crazy multitasker and doing way to much at one time.  I also squeezed in some time to finish up a craft project the Love Nugget and I have been working on.

Simple salt dough ornaments

1 cup flour

1 cup salt

1/2 cup water

Mix flour and salt together then slowly add in water.  If the mixture is too sticky, add a little more flour.  If it’s too dry, add a little more water.  Once you have a dough formed, remove from the bowl and lightly knead on a floured surface.  Roll into a ball then roll out into a flat 1/4 inch thick disk.  Cut out desired shapes and poke a small hole to hang them with.  Then, place onto an ungreased baking sheet.  Bake in an oven heated to 250 degrees for 1 1/2 – 2 hours. or until hardened.  Allow to cool for several hours or over night.

Once they are completely cooled, you can paint them however you’d like.  We used tempura paint and poster paint which are pretty much the same thing.  If you’d like to seal the paint you can spray a little clear sealant or even hair spray!

The Love Nugget had a great time helping to cut them out,

Along with finishing up crafting and baking a few recipes I found online, I came up with a really yummy recipe I wanted to share with you.

Crispy Chocolate Peanut Butter Vegan Fudge

1 cup All Natural Smooth Peanut Butter

1 cup Powdered Sugar

1/2 cup Coconut Butter

1/4 tsp. Sea Salt

2 cups Rice Crispy Cereal

1 cup Vegan Chocolate Chips

1/4 cup All Natural Peanut Butter

1 tbsp. Coconut Oil

Line a 9 x 9 baking dish with parchment paper.  In a medium saucepan, melt coconut butter and peanut butter over medium high heat.  Add in powdered sugar and sea salt and bring mixture to a boil.  Continue to boil for 3 minutes stirring constantly.  Remove from heat and stir in 2 cups of rice crispy cereal.  Stick into the fridge to set for 30 minutes.  In the meantime, melt chocolate chips, peanut butter and coconut oil in a microwave safe dish on low or a defrost setting.  Remove the peanut butter rice crispy dish from the fridge and pour the chocolate peanut butter over the top.  Place back into the fridge and chill for 2 – 3 hours.  Cut into squares and store in the fridge until ready to enjoy!

When the hubby got home, I handed him a large piece to try.  He said, “I don’t want that big of a piece.”  I said, “I think you do, just try it.”  He ate the big piece and said, “wow, those are good!”

Now that I look at the photos I wish I would have sprinkled some coarse ground sea salt on top.   Mmmmm…. peanut butter, chocolate, sea salt.  Devine!

Besides this delicious recipe I also made a few other sweet treats,

Bourbon truffles rolled in chopped walnuts and toffee.  These were supposed to actually be fudge but it didn’t set up all the way so I improvised 🙂

Once I get started baking I feel like I can’t stop!  I always see ONE more thing I want to make.  A little later I also made candy cane brownies and today I’m making fudge for the hubby.  Then it’s time to clean, finish putting together The Love Nugget’s toys and prepping some appetizers for tomorrow!  Can’t wait!

The Love Nugget has been battling a little cold so we haven’t been able to make it to the gym this week 🙁  Frustrating because I’m pretty sure he got his cold from the daycare there since I watched a father drop off their coughing child the other day.  Ugh!  Luckily he doesn’t have a cough, just a runny nose and is as happy as can be!  Unlucky for me, my gym routine is all messed up but, it happens.

Yesterday, since we had a little more time, I had a yummy breakfast while enjoying a second cup of coffee and catching up on emails.

Green Egg Muffins

1 cup shredded carrots

2 large handfuls of spinach (chopped fine or pulse in a food processor)

6 eggs

1/4 cup parmesan cheese

mozzarella cheese to top

Preheat oven to 350 degrees and spray a muffin tin with cooking spray.  Mix all ingredients together in a bowl.  Pour into muffin tins and bake for 25 -30 minutes or until cooked through.

These were really tasty and my little nugget ate them even though they were green!  He’s been a little picky about his veggies lately so this was a great way to get in a few without him noticing.

After breakfast, since we weren’t going to the gym, I decided we should go run a few errands before it got too busy out.  While at Target, I grabbed one of my favorite Luna bars for a snack.

We got home and the Love Nugget was fast asleep so I got in a quick workout, wrapped some gifts, and got some meal planning done for our Christmas events.  Big grocery shopping trip tomorrow!

When the Love Nugget woke up, he was starving!  As I prepped his lunch I snacked on a few carrots with sunflower seed butter.  Loving this snack lately.  Then I made a lettuce wrap with turkey and goat cheese along with more carrots.

It doesn’t look like much but it was just what I wanted!

After lunch I had a few squares of this delicious chocolate I got in the mail a few days ago.

Lily’s Chocolates caught my eye on another blog about a month ago.  Being a huge chocolate fan, I immediately hopped onto their website to see what they were all about.  I was blown away by the story of Lily, Chuck’s (co-founder of the company) niece who was diagnosed with brain cancer at seven.  Luckily she beat it and while in the hospital recovering she was saddened by the lack of supplies for the other children.  After returning home, she and her family raised 9,000 to donate to the hospital.  She continues to raise money for kids with cancer and in honor of her determination and bravery, these delicious chocolate bars were named after her.  Not only that, but a percentage of  profits is donated to kids with cancer and the services they need.

Besides such a wonderful story, these bars are delicious and healthier than your average bar since they are sweetened with Stevia!  In case your new to stevia, it’s a natural sweetener that has a low glycemic index and virtually no calories.

When my package arrived, this bar was calling my name…

Coconut and dark chocolate?  Sure, don’t mind if I do!  I love that the chocolate is divided into smaller bite size pieces making me less likely to eat the whole bar in one sitting 🙂

Also pretty awesome was that there are only 170 calories per serving and that’s half the chocolate bar!  That’s pretty good!  Besides the wonderful nutrition facts and ingredients, this chocolate tastes delicious!   Smooth and creamy with little coconut flakes mixed in giving it the perfect amount of coconut flavoring.

As I said the wonderful folks over at Lily’s sent me a few bars to taste and a few to giveaway.  Pretty cool!  One lucky winner will receive two delicious Lily’s chocolate bars.  One Almond and one Crispy Rice (the Love Nugget opened the original).

When we were all cleaned up from lunch, we got some supplies out to do a little painting and crafting.

He loves to paint but isn’t all that sure about getting it on his hands.  He decided he should wipe it off on my pants.  So nice of him!  Good thing I live in workout clothes half the time!

When he was done painting, we started making a wrapping paper wreath.  The hubby got home early and joined in on the fun.

Since he was home early we decided to make some cookies with the Love Nugget.  I had picked up a bag of sugar cookie mix at Target to have on hand so we just used that.  I was so disappointed!  I love the recipe I normally make and wish I just would have done that.  Oh well, the Love Nugget had a blast!

Then after they were cooled, he got to frost one then learn about sprinkles!

I tried to show him how to shake them on but…

He doesn’t normally get to eat a lot of sugar so he gets pretty excited to eat cookies!  Since it was so close to bed time though, we only gave him a few bites.   We saved the rest to decorate and eat tomorrow 🙂

Dinner tonight was quick and tasty.  I’m glad I picked up a few frozen pot pies from the farmer’s market earlier.  I had a feeling we wouldn’t be in much of a cooking mood and we weren’t.  These pot pies aren’t just any pot pies…. these are called Z-pies and are gourmet pot pies.  They have a ton of unique flavors to choose from and since they are frozen you can stick them in the freezer for later, or cook them up right away!

I got the Chicken Mushroom pie and chose the Italian Sausage for the Hubby.  The pie was pretty rich and filing so I only managed to eat half of it but it was good!

After dinner, I enjoyed one of my favorite treats lately.
