Happy Wednesday!

Woop woop!  We are looking at SEVERAL days of rain ahead of us which I’m not looking forward to.  Don’t get me wrong, we need the rain but I also need my sanity which I start to lose after being cooped up inside for days on end with a four year old…  Luckily we’ve got placed to go indoors where he can run around and play.  I’m already scheduling play dates to do so for next week to keep us both entertained!  Plus we spent the entire afternoon outside playing yesterday to stock up on the fresh, dry air 🙂

Hi guys!

Hope you all had a wonderful Monday.  I spent the day cleaning and unpacking which wasn’t really ideal but had to be done.  This week is one of those that are going to be pretty crazy so I may be absent a day or two.

Gotta do what you gotta do 🙂  Today though I thought I’d share a yummy recipe we had a few weeks back.  One that includes an ingredient I don’t use as often as I should.  Pumpkin!  For some reason it’s just one of those ingredients I tend to only eat in the cooler months.  When October rolls around I jump on the bandwagon with everyone else rushing to the store to get all the pumpkin!

Most mornings we have time to make and eat breakfast before running out the door.  I actually enjoy a hot cooked breakfast every day and don’t mind making something for the whole family.   Most days…  Some days I’m lazy, we’re running late, or I’m off teaching and The Hubby is home getting The Love Nugget ready.

For those mornings it’s nice to have a quick, healthy, protein packed breakfast that will keep us full until we have time to eat a regular meal.

I’m pulling this one from the archives for this lovely Turkey Day!

Turkey, sweet potatoes, green beans, roasted butternut squash, pumpkin and apple pie. Oh my! Who doesn’t love the food that comes along with this special holiday? I know I do!
I’m all for indulging and enjoying the holiday to it’s fullest. However, I also know how stuffed and uncomfortable I feel afterwards when I over do it. So to avoid this I’ll be taking a few steps to ensure I don’t over do it on all the delicious food being served. After all, we typically have at least two full Thanksgiving dinners. This year we may have three!
To begin I’ll be starting my day off with a healthy breakfast to ensure I don’t partake in mindless snacking throughout the day. I’m sure there are many people who will feel the need to skip breakfast on Thanksgiving day in order to save room for all those extra calories they’ll be taking in later. However, research shows that if you begin your day with a healthy, protein packed breakfast, you are less likely to over eat the rest of the day.
Since we’ll be waking up at my mom’s house on Thanksgiving day with a houseful of family I plant to urge them to enjoy a healthy breakfast with me. I’m hoping to entice them with one, two or all of these yummy festive breakfasts 🙂

Pumpkin Pie Protein Smoothie

1/2 cup pumpkin (mine was frozen)
1/3 cup frozen banana
1 tsp. Pumpkin Pie Spice
1 scoop vanilla protein powder
1/4 cup organic plain yogurt
1/3 cup liquid of choice (coconut milk, almond milk, milk, or water. I used 1 splash of coconut milk and 1/4 cup coconut water)
4 ice cubes

Place all ingredients in a blender and mix until smooth and creamy. Enjoy!

Pumpkin Pie Yogurt Parfait

2 tbsp Vanilla Protein Powder
1 cup plain organic yogurt like Stonyfield
1/4 cup pumpkin puree
1/2 tsp pumpkin pie spice
1/4 cup low-fat granola
1/2 small banana chopped

In a bowl, combine the yogurt, pumpkin puree, pumpkin pie spice, and protein powder. Mix well. In a separate container (I use a jar because it’s pretty and if I don’t finish it, I can save it for later), layer 2 tbsp of granola, top with a half of the yogurt mixture, then layer half the chopped banana, scoop the rest of the yogurt on the banana. Finally top with the remaining granola and banana. This is such a filling breakfast and packs a whopping 32 grams of protein! Plus, it’s pretty tasty 🙂

Pumpkin Pie Breakfast Scramble

1 egg
2 egg whites
2 tbsp. Coconut Milk
1 tbsp. Banana flakes (found in the bulk section at Whole Foods) or half a mashed banana
1 tbsp. Pumpkin Puree
1/2 tsp. Pumpkin Pie Spice
1/2 – 1 cup chopped spinach (optional but I like to add some greens to mine and you can’t really taste it)
1 tsp. Coconut oil

In a small pan, heat coconut oil over medium heat. In a bowl, mix together eggs, banana flakes, pumpkin puree, and pumpkin pie spice. If using mashed banana, add that to the pan prior to the egg mixture and sauté for a few minutes. Other wise, add spinach first and cook until slightly wilted. Add egg mixture and cook stirring frequently until cooked through. The mixture will look a little more moist than a normal scramble which is normal. Scoop into a bowl and top with almond butter, sunflower butter, or nothing at all! Enjoy!

Along with my healthy protein packed breakfast, I’ll be drinking lots of water throughout the day to keep me hydrated. I also plan on encouraging my family members to join in on a pre-turkey feast workout.

Remember a few weeks ago I mentioned how we had plums coming out our ears?

Okay maybe not that many but the plum tree we inherited in our backyard was literally overflowing with the yummy stone fruit.  While I ejoy them.  There’s only so many you can eat whole.   After giving away a bunch, made a super easy chia seed jam that turned out pretty good but still had a ton of plums!

I tried to think back to what types of things my mom would make after we would spend hours picking fruit from our neighboring orchards.  She canned a bunch but I wasn’t in the mood to do all the peeling.  She made a lot of jams but again, didn’t feel like canning nor did I have time.  Then I remembered her yummy cobblers and crisps she would make using the left over fruit.  We would eat them in the morning with breakfast or at night warmed up with a big scoop of vanilla ice cream on top.  So good!

Paleo Plantain Pancakes with Chia Berry Compote

Can I just tell you how excited I am to finally post a recipe!?!

Not just any recipe either but a delicious, Paleo friendly, refined sugar, gluten and dairy-free one.


A recipe that is packed with healthy carbohydrates and antioxidant rich berries.


Carbohydrates from plantains, which have become one of my favorite carb replacements after a good workout.  I typically saute them in coconut oil with cinnamon then top them with coconut butter.  However, these pancakes have become my new favorite way to enjoy them.

Plantain Pancakes with Chia Berry Compote

Plantain Pancakes with Chia Berry Compote


  • 2 ripe plantains
  • 4 eggs
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1 tbsp. coconut oil or grass-fed butter
  • Chia Berry Compote
  • 1 cup chopped strawberries
  • 1 cup fresh or frozen blueberries
  • 2 tbsp. water
  • 1 tbsp. chia seeds
  • 2 tsp. coconut nectar, 100% pure maple syrup or honey (optional)


  1. Place all ingredients in a blender and pulse until a smooth mixture forms.
  2. Melt coconut oil in a pan over medium heat.
  3. Pour desired amount of pancake batter into the heated pan.
  4. Cook about two minutes or until you see small bubbles forming on the batter side.
  5. Flip and cook two more minutes on the other side.
  6. Serve with Chia Berry Compote.

  8. In a small saucepan, heat berries and water until softened and slightly bubbly.
  9. Using a potato masher, gently mash them into a chunky mixture.
  10. Add in the syrup and chia seeds then simmer for a few minutes.
  11. Remove from heat and serve over Plantain Pancakes.

So simple to make and such a good meal for anyone looking to enjoy a delicious pancake breakfast without gluten or dairy.
