Sweat monster!

Good morning!

So ready for April showers to be gone and May flowers be here to stay!  When my alarm went off at 5:00 this morning to go to spin and I heard the rain, I was very tempted to stay in bed.  But… I dragged my butt to spin and was so glad I did!  Last week the instructor was out of town so I skipped because I’m not a huge fan of the other instructor.  So this week she pushed it extra hard and it was awesome!  I literally had to wipe down the floor under my bike when class was over because I had a lake of sweat!  It was disgusting but felt soo good!

I had to run to the store after to grab some applesauce for a recipe so I thought I’d get the hubby some pork bacon for breakfast.  Usually if we have bacon we have turkey bacon but since I don’t really eat it at all anymore I thought I’d treat him.  I had forgotten how bad it stinks up the house!  Yuck!  I know some people love the smell of bacon but I can’t stand it!  So now I have every fragrant candle lit in the house to cover up the smell.

While the love nugget was eating his banana pancakes for breakfast I decided to make him a new snack.

Apple Cinnamon Oat Drops

1 cup of old-fashioned oats

1 cup of whole wheat flour

1 tsp baking powder

1 1/2 tbsp cinnamon

1 tsp nutmeg

1 cup unsweetened applesauce

1 cup chopped organic apples

1 tbsp vegetable oil

Preheat oven to 350 degrees. Mix dry ingredients together in a bowl.  In a separate bowl, mix together wet ingredients then add them to the dry.  Drop onto a lightly greased baking sheet then press down with the back of a spoon.  Bake for 15 – 20 minutes.

The love nugget loves these types of snacks but they can get a little messy.  If you wanted to add some stevia or sugar to the mixture to add a little sweetness feel free!

One of my goals for today is to bake and freeze cut out sugar cookies for the love nugget’s upcoming 1st birthday!  Trying to be on top of things so I don’t get overwhelmed when it gets close.  Hopefully he takes a nice long nap so I can get that done 🙂

Tofu goodness

For dinner the other night, I wanted to try a new tofu recipe so the hubby had beef and I had this.  Although, once it was done the hubby tried it and really liked it!

Nut Butter Tofu and Broccoli Slaw

3 slices of extra firm tofu diced into chunks

1 tsp coconut oil

2 cups of broccoli slaw

Sauce ~

1 tbsp almond butter

1 tbsp all natural peanut butter

1 tbsp

1/4 cup of low sodium soy sauce

1 tbsp coconut sugar or brown sugar

1 tbsp rice wine vinegar

1/4 cup of water

1/4 cup of chopped raw cashews or peanuts

Heat oil in a medium frying pan and add tofu.  Cook until lightly browned on each side.  Meanwhile, blend ingredients for sauce in a blender or food processor until smooth.  Add 1/4 cup of sauce to cooked tofu toss and remove from heat.  Mix the rest of the sauce with the broccoli slaw in a medium bowl.  Top with chopped cashews or peanuts and the cooked tofu.  Enjoy!

Our oven is back in business!  Thank goodness I have such a handy hubby that can fix anything.  Well, he is the one who actually broke the oven so it’s a good thing he fixed it!  Ha!

The love nugget and I decided to stay home this morning and get some stuff done around the house.  After a busy weekend and a busy start to our week I haven’t had much time to make him any food.

I started the morning off by making him some banana pancakes and me a chocolate covered cherry green smoothie that I adapted from Peas and Thank you.  My new Vegan cookbook that I am loving!

Eggless Banana pancakes

1 cup of whole wheat pastry flour or whole wheat flour

1 tbsp baking powder

1 tsp cinnamon

1/3 cup applesauce

1 medium mashed banana

1 tbsp vegetable oil

1 cup of water

Sift together four, baking powder and cinnamon.  In a separate bowl, mix together applesauce, banana, oil and water.  Add to dry ingredients and mix well.  Drop 1/4 cup of mix into a greased pan and cook for a few minutes on each side.  These puff up quiet a bit so after I flip them once, I press them down with the back of a spatula.  Then flip them again.

To go with his pancakes, I decided to try out a little green smoothie for the love nugget.

Baby Green Smoothie

2-3 slices of frozen organic peaches

1/4 cup frozen organic blueberries

1/2 cup organic spinach

1 tbsp plain baby yogurt or greek yogurt

1/2 – 3/4 cup of water (the love nugget hasn’t had milk yet but if you’re little one has you can use that instead)

Place all ingredients into a blender and blend until smooth.  If it’s too thick, add in a little more water/milk.

The love nugget was in heaven!  Great way to get in some fruit and vegetables!

 Chocolate Covered Cherry Smoothie

1/2 banana

1/2 cup frozen cherries

1 tbsp almond butter

1 tbsp cocoa powder

1 cup chard, kale or spinach (today I used chard)

1 cup almond milk

Dash of Stevia

Blend all ingredients in a blender, enjoy!

Now that we’ve started our morning with a yummy, healthy breakfast, we’re off to cook away!

 

Pinterest

Okay, seriously if you haven’t gotten pinterest yet you are really missing out.

When a friend introduced it to me a few months back, I wasn’t so sure about it.  It was somewhat confusing to start up and seemed like a lot of work.  But, once I finally got the hang of it I was addicted!  I had a hard time breast feeding my love nugget so I switched to pumping.  Which meant I spent a TON of time attached to my new “best friend” feeling slightly like a cow.  Pinterest became my saving grace during this time.  I could spend hours searching various boards and discovering all sorts of fun ideas.

Now that the love nugget is older and much more time consuming,  I don’t have as much time to browse Pinterest.  However, I still seem to find time to pop on daily and see what others have pinned or i are any new ideas for my own boards.

I’ve gotten lots of great organizing ideas from Pinterest.  With the help of my wonderful hubby, we’ve done quite a few of them in our home.

A magnetic make up board and brush holders.   Make-up board tutorial   This one was really easy!  I found an old frame at Goodwill, bought a metal sheet from Home Depot and had the hubby cut it to fit the frame.  You could always ask at Home Depot if they can cut it for you or buy a frame to fit the metal sheet.  I bought some frabric and wrapped the frame using a hot glue gun to secure it to the back.  The hubby attached the burlap the the metal board using spray glue.  Then I glued magnets to the back of each make-up container.  For the brush holders I bought two vases from Michaels and black beans from the dollar tree.  So simple!

An earring hanger and necklace hanger.  I had a picture frame cupboard for all my jewelry but the necklaces were too long and I had too many earrings to store.  So I found these ideas on Pinterest and the wonderful hubby helped me out.  The necklace hanger was for sale on Etsy for $45!  We bought a peice of wood from Home depot, some fabric and small hooks.  The hubby drilled small holes into the board before I glued on the fabric.  Once I had covered the board with fabric, I used a razor blade to cut a small slit over each of the holes that were previously drilled.  Then I just screwed the hooks in and the hubby hung it on the wall.  For the earring hanger, I followed the turorial on the link.

We had been looking for something to put in our shower/toilet area to store towels and toilet paper.  When I saw this idea we went out and bought a few baskets and put the hubby put it up in a jiffy!  http://www.imbusyprocrastinating.com/

We had a space on the bathroom wall that was blank and bothering me.  I had been looking for some art work for a while but wasn’t finding anything I liked for the price I wanted to pay.  I  had a few old frames that I spray painted black, bought some cute scrapbook paper and wooden words.  I painted the words black, hot glued them onto the scrapbook paper, took the glass out of the frames and hung them on the wall.  Cute, simple and easy!  I borrowed the idea from an Etsy sale item, http://www.etsy.com/listing/69308862/custom-made-small-vintage-frame-with?ref=sc_2

I hate digging through drawers to find the measuring cup or spoon I need and as hard as I try to keep them attached, it never lasts.  So when I saw this idea for a measuring storage, I asked the hubby to help me create it.  He loves to make things so he was game!

It helps that I have such a wonderful hubby who loves to help me out, especially if it means he gets to use his tools.  Although, many of these things can be done without a hubby 🙂

Spring craft

Hi there, happy Monday!

We’ve been enjoying this beautiful day of sunshine and nice weather while we can.  The weather man says rain for the next few days 🙁  Hopefully it clears up by Sunday for my 12k.  I’m not a big fan of running in the cold or rain.

We enjoyed a nice outdoor workout this morning followed by a short run.  The love nugget enjoys being outdoor so much.  Can’t wait for this weather to stick around for more than a few days!

Last weekend, we finally had a little bit of time to get a Spring craft done.  Every month we do a hand print to hang in our living room.  This month we switched it up a little bit and did a footprint craft instead.  It turned out pretty cute and was very simple so I thought I’d share 🙂

Supplies ~

  • canvas (I used 12 x 12)
  • your choice colors of tempura paint
  • ribbon
  • hot glue or craft glue
  • your little ones cute feet!

This craft is easiest if you have more than one person to help out with painting and stamping the foot prints.  Luckily Grammie was here to help out!

 

Make sure to have a wet, old towel close by to wipe off your little ones feet.

Using a paint brush, paint a few different colors onto one foot.

Carefully, stamp the foot onto the canvas.  The easiest way I’ve found is to hold the canvas and press it up to their foot rather than trying to put the foot onto the canvas.  Don’t worry if it slips, it just adds a little character!  The paint is also waterproof and will wipe off with water if you make a big boo boo.

Repeat with the other foot trying to copy the paint pattern from the previous foot.  When you stamp the feet together, make sure you do them in the opposite direction with big toes facing outwards.

Since I used a larger canvas, and the love nugget has pretty small feet, I stamped his feet four times creating two butterflies.

 

 

 

 

 

 

 

Happy Easter!

Happy Easter!!!

Talk about a busy weekend!

Grammie, A.K.A. my mom, came to stay with us for a few days on Thursday. 

I had high hopes of doing all sorts of fun stuff while she was here.  Zoo, wine tasting, gardening, brunch, park, church, and maybe some crafting.

Ha!  Things don’t happen like they used to with a 10 1/2 month old.  While we didn’t get to do a lot of the things I had wanted to, we still had a great time visiting with her.

Saturday we went to an Easter Celebration with some friends at a golf course.  It was a beautiful day and a lot of fun!  They had real bunnies for the kiddos to pet, an Easter egg hunt and a visit from the Easter Bunny.  The love nugget hadn’t seen the Easter Bunny yet so I wasn’t sure how he was going to react but he seemed to like him!

I’m not sure I’ll ever get used to standing next to a grown man in a bunny suit to take a picture.  Strange!   I will say this Easter Bunny was much nicer looking than the one at the mall.

After our Easter extravaganza, we went to a nursery and picked out some plants for our yard.  Grammie helped the hubby get them planted while I went and got a pedi/mani.  It’s been way too long!  Then we went to one of our favorite sushi restaurants for dinner and splurged on frozen yogurt after.

This morning we woke up, made breakfast, then took off to go visit family.

Again it was such a beautiful day and we spent most of the afternoon outside enjoying it.  The love nugget made some progress with his latest hurdle, standing by himself.

He tends to do it more when we are away from home and this time he stood for the longest time yet!  Long enough for me to get LOTS of pictures!

We had such a fun Easter this year!   We are so blessed to have such an amazing family that we love dearly.

Home body

Yesterday was the first day in a while that we were home all day.  Well, with the exception of me going to the gym in the morning to get a run in and spin with my favorite instructor.  Oh how I missed her!

For me, there are some pros and cons about being home all day.

Pros ~

  • I get a lot of cleaning done, especially when the weather is nice.  It motivates me.
  • I drink a TON of water.
  • The love nugget gets some good naps in.
  • I can catch up on emails and other online tasks.

Cons ~

  • I snack more.
  • I tend to get cabin fever, I think the love nugget does too.

The pros definitely out way the cons but it depends on the day.  If I hadn’t had a lot of cleaning to do, we might have been really bored!

Due to the fact that I tend to snack more often when I’m home or bored, I make sure to only keep healthy snack options in our house.  Here are a few options that we usually have on hand.

  • Fresh, cut up veggies.  Some of my favorites are cucumbers, carrots, celery, daikon radish, and blanched asparagus
  • Homemade or store bought hummus to go with the veggies
  • Raw, unsalted nuts.  My favorite is raw frozen almonds.  To make sure I don’t eat too many I measure out 1/4 cup and put them in a zip lock bag for quick snacks.  I also keep raw walnuts, cashews, and macadamia nuts on hand so when I want a quick trail mix I just mix them with some cranberries and dark chocolate chips.
  • Fresh fruit
  • Frozen grapes.  This is a good after dinner sweet treat too!
  • Dried cranberries.  I add these to my frozen almonds
  • Peanut butter bites
  • Homemade granola bars
  • Protein powder
  • Dark chocolate bar or dark chocolate chips

What healthy snacks do you like to keep on hand?

When I was breastfeeding I bought a HUGE water jug that I helped me to keep up on my fluid intake.  I think it holds 60 ounces or close to it.  When I’m home, I often fill it up and make it a goal to drink at least one a day.  When I get bored with plain water, I add in some sliced lemons or oranges to give it a little flavor.  I’m not a soda drinker, but I do like sparkling water.  Instead of buying flavored sparkling water, I take soda water and pour it over ice.  Add a little unsweetened cranberry juice and a splash of orange juice.  It’s a refreshing, low-calorie, low sugar, yummy beverage!

Since I was home all day yesterday, I had a little time to get together a fun activity for the hubby and I that I found on The Dating Diva’s blog.  A few years ago, we went on a cruise and one night they had a Newly Wed game that they hubby and I were a part of and won!  We both had fun and when I saw this idea, I thought it would be fun to do.  So I prepped it and after dinner we turned off the TV and enjoyed some game time.

I printed it out on card stock, cut and numbered the cards from 1-10 without reading the blue ones.  No cheating 🙂

Then the hubby got the blue, I got the pink and we went through and wrote our answers for each question.

When we were done, we took turns reading a card and allowed the other to give their answer.  If it matched what we had written down, we got 1 point.

Funny, we each scored 7 points!

All in all it was fun and a good way to spend the evening rather than watching TV or sitting on our computers 🙂

 

I love… I like…

June 28th, 2008 was the date I married my best friend.  We were together four years prior to that so in total we’ve been together for almost 8 years.  Wow, time goes by so fast!

We have always been pretty good at communicating and expressing our feelings to each other.  However, busy lives, a little love nugget and exhaustion means we have to work a little harder at our relationship.

As I’ve posted before we put forth a lot of effort to do weekly date nights in as well as date nights out when we get a chance.  But… what about the rest of the time and the little things?  Like compliments, loves, etc.  Those things seem to go by the wayside with the added stresses of life.  But aren’t they just as important as date nights?  I think so!

So I came across a book that at the time seemed a little silly.  Then when I got it in the mail it seemed even more silly because the entire book was filled with this….

That’s it!  You also put your name and the date but really, I paid $15 for this?

Hmmm… I went ahead and told the hubby about it and we got started listing things daily that we like about one another.  Well… it was great!  We really enjoy thinking of something to write down and look forward to seeing what the other has written.

Sometimes though, we get busy and forget to write in the book or it disappears for a few days and then we stumble across it in the love nugget’s toy box.  For these days and any other time we feel like it, I found this and posted it on the wall in our bathroom.

The latest message the hubby left for me 🙂

Super easy, free and a little more accessible than the “I like” book since we both use our bathroom every day.  I just downloaded the free printable and put it in an old frame.  Grabbed a white board marker we had at the house and started writing love notes 🙂

I feel like these little things help to keep us close and feeling special even on those days where we don’t get a chance to verbally tell each other how much we love one another 🙂

Do you ever have those days that seem to fly by?   Today was one of those days.

After Stroller Strides today we went and did a little shopping then came home to cook up some food for the love nugget.  Since I had stocked up on veggies the day before I wanted to make one of his favorites.

Veggie Patties

1 cup of steamed vegetables of your choice (broccoli, zucchini, carrots, bell peppers, cauliflower

1/2 tbsp vegetable oil

1/2 cup cheddar cheese

1/2 tsp garlic powder

1/2 tsp baking powder

1 cup panko bread crumbs

Preheat oven to 350 degrees.  Steam vegetables until tender.

Puree vegetables in a food processor until chunky.  Add in the rest of the ingredients and pulse until mixed scraping down the sides with a spatula once or twice.

Using a cookie scoop, drop onto a baking sheet lined with parchment paper and press down to make a nugget.  Bake for 10 minutes then flip and bake for 7 minutes more.  Alow to cool before your little one enjoys!

Today I threw in zucchini, bell peppers, and broccoli but there are a lot of options here.  The love nugget enjoys them all!

Spinach Chickpea Nuggets

1 cup of rinsed chickpeas

2 cups of fresh baby spinach

1/3 cup of grated parmesan cheese

1/3 cup of panko bread crumbs

2 tbsp vegetable broth

Pulse chickpeas and vegetable broth in a food processor until smooth.  Add spinach and continue pulsing until mixed scraping down sides with a spatula.  Add parmesan cheese and bread crumbs.

Drop onto a cookie sheet lined with parchment paper using a cookie scoop then press down to make a nugget.  Bake for 10 minutes on one side, flip and bake for 7 minutes more.

Tofu Pineapple Won Tons

1 cup of extra firm tofu

1/2 cup of chopped fresh pineapple

12 -14 won ton wrappers

water

Pulse tofu in a food processor until chopped.

Add in pineapple and puree until blended and smooth.

Lay out won ton wrappers and wet the sides with water.  Drop a teaspoon of tofu pineapple mixture onto the center of the wrapper then fold diagonally and press down.  The water should seal the edges.  Place onto a cookie sheet lined with parchment paper and bake for 5 minutes then flip and bake for 5 more minutes.

You could use any fresh fruit you have on hand this was just what I had in my fridge ready to go!

People are always asking me what type of tofu I buy.  I prefer the extra firm tofu that is in a vacuum sealed pack compared to the water soaked type.  At most grocery stores the brand is Wildwood  but Trader Joe’s has their own brand as well.  This tofu is a bit firmer than the other brands and you don’t have to press it with paper towels trying to dry it out some.

After a long day of cooking food for the love nugget, we went and met a friend at the park for some play time.  But… the weather started to get yucky on us and the boys weren’t having that much fun so we cut it short.

Now I’m off to make dinner for the hubby and I.  Tofu and broccoli slaw for me, steak and zucchini for the hubby.

Freeze Dried Fruit

Good morning!

It was a busy Monday over here.  Lots of spring cleaning got done which was great!  The warm weather really helps to motivate me.  We started the day off with a nice workout out doors at the park with Stroller Strides.  Then went to Trader Joes to stock up on some healthy food.  I discovered a new snack for the love nugget.

 

 

Freeze Dried bananas!  I heard awhile back that freeze dried bananas is much better for you than banana chips.  So I tried them but I wasn’t a fan.  The love nugget however loves them!  There were lots of other freeze dried fruits there too and they have nothing added to them but the fruit!  I have given freeze dried blueberries to the love nugget before and they are pretty messy.

Since the weather was so nice yesterday we went for a run which is one of our favorite things to do.  He just kicks his feet and talks away.

 

 

This morning we are off to Stroller Strides, the farmers market and possibly the mall 🙂

I tried out a new mug muffin for breakfast and it turned out pretty good!

Blueberry Mug Muffin

1/4 cup flaxseed meal

1/4 cup quick cooking oats

1 tsp baking soda

1 tsp melted coconut oil

1/4 cup diced blueberries

1 tsp cinnamon

1 tsp stevia

1 egg.

Spray a coffee mug with cooking spray and then mix all ingredients together in the mug.   Make sure to mix well.  Pop it in the microwave for a little over 1 minute.  It should slide right out of the mug.  I topped mine with a little bit of coconut butter and enjoyed with my berry green smoothie!  I’m stuffed but it will keep me full until lunchtime 🙂
