So this is the third time this week that I’ve finished a post and saved it or posted it and it deletes half the post!  Today was the worst.  The only thing left after hitting save on a completed post was one sentence.  Triple grrr….

Today after and awesome workout at Stroller Strides we went to one of our favorite stores, Target!  Just to grab a few things for the hubby and love nugget while I’m gone this weekend.

Then we came home and while the love nugget napped I started packing.  I’ve always been one of those obsessive packers that has an organized list broken down into categories and starts a few days to a week in advance.  When we went to Europe for two weeks a few years ago, I think I started packing two weeks ahead of time!  While this can be a good thing, it also tends to lead me to over pack.  I like to have my options 🙂  Although this weekend since it’s just me and I’m flying, I only want to take one carry on and a large purse.  So far it’s pretty stuffed!

On top of packing today, I needed to make the love nugget some food for this weekend while I’m gone.  Usually during the day if I don’t have anything pre-cooked, I just throw something together for him.  The hubby isn’t as resourceful so I want to make sure they’re both all taken care of.  So today I managed to make him Turkey and Kale Meatballs, Cauliflower Cream Cheese Won Tons, and Chicken Nuggets (recipe coming soon!)

For the Turkey and Kale Meatballs I started by pulsing two leaves of organic kale and 6 steamed baby carrots until they were chopped and combined.


Then I put the puree into a mixing bowl along with 1/4 pound of organic ground turkey breast.

I added to that, 1/2 tsp Mrs. Dash seasoning, 1/4 cup parmesan cheese, and 1/4 cup whole wheat bread crumbs.

Using my hands I mixed it together until just combined then rolled the mixture into small meatballs and placed them onto a baking sheet sprayed with cooking spray.

I baked them for 20 minutes then added a few to some whole wheat spaghetti noodles and organic plain tomato sauce (not pasta sauce, the plain tomato sauce in a can.)

Turkey and Kale Meatballs with Spaghetti

1/4 lb organic ground turkey breast or ground turkey

2 organic kale leaves

6-7 steamed organic baby carrots

1/4 cup bread crumbs

1/4 cup grated parmesan cheese

1/2 tsp Mrs. Dash seasoning

handful of broken whole wheat spaghetti noodles

1/4 cup organic no salt added tomato sauce

Preheat oven to 375 degrees.  Puree kale and carrots until combined.  Place kale mixture and the rest of the ingredients in a small mixing bowl.  Using your hands, mix until just combined.  Roll into small balls and place onto a slightly sprayed baking sheet.  Cook for 20 minutes then add a few to pasta and sauce.  Store the rest in the refrigerator or freezer.


So, evidentially last nights post titled Zoo or not did not fully upload for some reason 🙁  So frustrating!

I’ll give you the gist of it.  We planned a trip to the zoo with some friends but when we got there, discovered Monday’s are a day of rest for the animals.  Luckily there is a park right next to it that had a nice play area and good shady spot for lunch.

I’m extremely ready for the crawling stage to be over though.  Everything that gets stuck to his hands goes directly in his mouth, dirt, twigs, sand… yuck!

Last night for dinner I made one of my favorite healthy meals.  I’ve been obsessed with sugar snap peas lately and bought a huge bag from Costco the other day.  It’s seriously over halfway gone already.  I love this Chicken Scallopini recipe that calls for sugar snap peas so instead of making Chicken parmesan, I made this.

Chicken Scallopini

2 organic chicken breasts pounded flat

1/2 cup chicken or vegetable broth

1/4 cup dry white wine

1-2 cups sugar snap peas cut in half

1-2 cups asparagus diced bite size

2 tbsp lemon

1 tbsp olive oil

1 1/2 tbsp fresh mint

salt and pepper

In a small mixing bowl whisk together lemon juice, olive oil, mint, salt and pepper.  Set aside.  Steam cut sugar snap peas and diced asparagus just until tender.  Drain and run under cold water to stop the cooking process.  Add to the bowl of lemon juice mixture and place in the refrigerator to chill.  Spray a non stick  pan with cooking spray and heat over medium.  Sprinkle chicken with salt and pepper and cook in pan until no longer pink inside.  Add in broth and wine and simmer until reduced by half.  Place chicken on your plate and top with sugar snap pea/asparagus mixture as well as some of the lemon mixture.  Enjoy!

This meal is so healthy and refreshing.  We enjoyed it with a salad of mixed greens, tomatoes, goat cheese, sunflower seeds, shredded carrots and miso dressing.

Today we had a very busy, fun morning!  Headed to Stroller Strides at the Whole Foods shopping center and got in a great workout.  Then did a little shopping until it was time to meet some friends for free train rides and lunch.

I think with how often we ride the train the love nugget might be obsessed soon!  He is really starting to love it more though and watches it very intently as it goes around the circle.

We eat at Whole Foods a lot because it’s so fresh and healthy.  Plus I can get a box of food from the salad bar just for the love nugget.  He will sit there and eat away forever!

After lunch we did a little grocery shopping then finally headed home.  The love nugget was exhausted from his morning excursion and has been out cold  since we got in the car 🙂

I can’t believe in a month my little love nugget is going to be 1 year old!  I know everyone always says they grow so fast but I don’t think I really understood until now.

Every month we do a birthday picture in his monthly birthday tie.  This morning he was very sleepy and it was difficult to get a good picture of him with his tie on.































Wine tasting fun!

Good morning!  We had a great day yesterday on a birthday wine tasting trip.

It was a georgous day and despite some complications with the limo we had a wonderful time!

I wish I would have taken pictures of the spread we had for lunch because it was really yummy!  I picked up a few things from Costco and made my new favorite hummus from Peas and Thank You as well as a super easy Quinoa Salad.  Everyone asked for the recipe so I’ll be posting later 🙂

We enjoyed some delicious wine and some much needed girls time!  Such a fun birthday celebration complete with party favors made by one of the girls, so cute!

After our wine excursion, we went back to the birthday girls parent’s house for a birthday dinner.  Our hubbies and love nuggets joined us as and had a fun time playing together.

The only way we could get them to sit still together was by bribing them with Cheerios!  They are all on the move right now.

All our little nuggets were born in May, basically one week after another which means May is filled with birthdays for us!  Super fun though!

We had a delicious dinner with a lasagna cook off between the birthday girls dad and myself.  Mine with turkey, his with beef… Both were so yummy that nobody could decide on a winner 🙂

The love nugget partied with us until way past his bedtime then crashed on the way home.  He was such a good little guy and we had a great evening.

I’m off to make some apple cinnamon pancakes for breakfast then we are taking advantage of this wonderful weather and getting some yard work done.

Green Smoothie Mustache

Good morning!

I finally woke up feeling better!  Woo hoo!  Got my butt out of bed and hit up the gym for a run.  Although I should have just gone outside since it was already in the 60’s!  It’s going to be a beautiful weekend!

I’ve got a ton of stuff to do today in preparation for tomorrows girls wine tasting trip so we are home this morning cooking.  The love nugget was on strike this morning from his eggs and would only eat blueberries.  This is new for him.  I wanted him to get a little protein in so I made him a new green smoothie.

Tofu Green Smoothie (Baby friendly)

1/2 cup silken tofu (this is a very soft tofu that works great in smoothies)

2-3 frozen peach slices

1/4 cup frozen blueberries

1 cup organic spinach

1/2 – 3/4 cup organic milk or non dairy substitute  (The love nugget just started on milk this week and loves it!)

Blend all ingredients in a blender until smooth.  This ended up making quite a bit so I popped the extra in the freezer to use tomorrow.  It was also pretty thick so he wasn’t able to suck it out of a straw.  Which meant he had a major smoothie mustache!

He loved it and every time I put the cup down he screamed in protest.  Ha!  Smoothie monster!

The love nugget is napping and I’m off to do some laundry before we head to gymnastics.  Does anyone else feel like they are constantly doing laundry?  I don’t understand how 2 1/2 people can use so much laundry!  Well, the love nugget should be counted as a whole person because he goes through at least 2 outfits a day, not counting his pajamas.  But his clothes are so small and I usually only do one load of his laundry a week.  Between the hubby and I,  feel like I am constantly drowning in our laundry!

Tofu goodness

For dinner the other night, I wanted to try a new tofu recipe so the hubby had beef and I had this.  Although, once it was done the hubby tried it and really liked it!

Nut Butter Tofu and Broccoli Slaw

3 slices of extra firm tofu diced into chunks

1 tsp coconut oil

2 cups of broccoli slaw

Sauce ~

1 tbsp almond butter

1 tbsp all natural peanut butter

1 tbsp

1/4 cup of low sodium soy sauce

1 tbsp coconut sugar or brown sugar

1 tbsp rice wine vinegar

1/4 cup of water

1/4 cup of chopped raw cashews or peanuts

Heat oil in a medium frying pan and add tofu.  Cook until lightly browned on each side.  Meanwhile, blend ingredients for sauce in a blender or food processor until smooth.  Add 1/4 cup of sauce to cooked tofu toss and remove from heat.  Mix the rest of the sauce with the broccoli slaw in a medium bowl.  Top with chopped cashews or peanuts and the cooked tofu.  Enjoy!

Home body

Yesterday was the first day in a while that we were home all day.  Well, with the exception of me going to the gym in the morning to get a run in and spin with my favorite instructor.  Oh how I missed her!

For me, there are some pros and cons about being home all day.

Pros ~

  • I get a lot of cleaning done, especially when the weather is nice.  It motivates me.
  • I drink a TON of water.
  • The love nugget gets some good naps in.
  • I can catch up on emails and other online tasks.

Cons ~

  • I snack more.
  • I tend to get cabin fever, I think the love nugget does too.

The pros definitely out way the cons but it depends on the day.  If I hadn’t had a lot of cleaning to do, we might have been really bored!

Due to the fact that I tend to snack more often when I’m home or bored, I make sure to only keep healthy snack options in our house.  Here are a few options that we usually have on hand.

  • Fresh, cut up veggies.  Some of my favorites are cucumbers, carrots, celery, daikon radish, and blanched asparagus
  • Homemade or store bought hummus to go with the veggies
  • Raw, unsalted nuts.  My favorite is raw frozen almonds.  To make sure I don’t eat too many I measure out 1/4 cup and put them in a zip lock bag for quick snacks.  I also keep raw walnuts, cashews, and macadamia nuts on hand so when I want a quick trail mix I just mix them with some cranberries and dark chocolate chips.
  • Fresh fruit
  • Frozen grapes.  This is a good after dinner sweet treat too!
  • Dried cranberries.  I add these to my frozen almonds
  • Peanut butter bites
  • Homemade granola bars
  • Protein powder
  • Dark chocolate bar or dark chocolate chips

What healthy snacks do you like to keep on hand?

When I was breastfeeding I bought a HUGE water jug that I helped me to keep up on my fluid intake.  I think it holds 60 ounces or close to it.  When I’m home, I often fill it up and make it a goal to drink at least one a day.  When I get bored with plain water, I add in some sliced lemons or oranges to give it a little flavor.  I’m not a soda drinker, but I do like sparkling water.  Instead of buying flavored sparkling water, I take soda water and pour it over ice.  Add a little unsweetened cranberry juice and a splash of orange juice.  It’s a refreshing, low-calorie, low sugar, yummy beverage!

Since I was home all day yesterday, I had a little time to get together a fun activity for the hubby and I that I found on The Dating Diva’s blog.  A few years ago, we went on a cruise and one night they had a Newly Wed game that they hubby and I were a part of and won!  We both had fun and when I saw this idea, I thought it would be fun to do.  So I prepped it and after dinner we turned off the TV and enjoyed some game time.

I printed it out on card stock, cut and numbered the cards from 1-10 without reading the blue ones.  No cheating 🙂

Then the hubby got the blue, I got the pink and we went through and wrote our answers for each question.

When we were done, we took turns reading a card and allowed the other to give their answer.  If it matched what we had written down, we got 1 point.

Funny, we each scored 7 points!

All in all it was fun and a good way to spend the evening rather than watching TV or sitting on our computers 🙂


I love… I like…

June 28th, 2008 was the date I married my best friend.  We were together four years prior to that so in total we’ve been together for almost 8 years.  Wow, time goes by so fast!

We have always been pretty good at communicating and expressing our feelings to each other.  However, busy lives, a little love nugget and exhaustion means we have to work a little harder at our relationship.

As I’ve posted before we put forth a lot of effort to do weekly date nights in as well as date nights out when we get a chance.  But… what about the rest of the time and the little things?  Like compliments, loves, etc.  Those things seem to go by the wayside with the added stresses of life.  But aren’t they just as important as date nights?  I think so!

So I came across a book that at the time seemed a little silly.  Then when I got it in the mail it seemed even more silly because the entire book was filled with this….

That’s it!  You also put your name and the date but really, I paid $15 for this?

Hmmm… I went ahead and told the hubby about it and we got started listing things daily that we like about one another.  Well… it was great!  We really enjoy thinking of something to write down and look forward to seeing what the other has written.

Sometimes though, we get busy and forget to write in the book or it disappears for a few days and then we stumble across it in the love nugget’s toy box.  For these days and any other time we feel like it, I found this and posted it on the wall in our bathroom.

The latest message the hubby left for me 🙂

Super easy, free and a little more accessible than the “I like” book since we both use our bathroom every day.  I just downloaded the free printable and put it in an old frame.  Grabbed a white board marker we had at the house and started writing love notes 🙂

The website I downloaded it from is The Dating Diva’s.     Great blog with tons of idea’s for making sure you keep the romance alive!

I feel like these little things help to keep us close and feeling special even on those days where we don’t get a chance to verbally tell each other how much we love one another 🙂

Sad day…

Sorry for the lack of post yesterday.  We had a very busy day!  The day started off disappointing for me.  I woke up at 5:10 and headed to spin only to arrive to a full class 🙁  Bummer!  Double bummer because I didn’t grab my iphone when I left so I had to do my cardio with no music.  Grrr… not a great gym morning.

Instead of going to Stroller Strides we went and met a friend for Story time at Megusta (kids store).  It was super cute but the love nugget’s still a little too young.  I can’t wait until he is older and we can go enjoy it!  Then we headed to the mall to get him some more spring clothes.  After that we ran home to make some Kale chips and  for our play date and the love nugget got in a quick nap.  We had a fun play date then home for dinner and bedtime and I got to relax on the couch with my Us Weekly 🙂

This morning I woke up nice and refreshed and ready for a fun filled day.  Stroller Strides then another play date with some friends.  The weather is supposed to be nice and sunny so we are excited to head to the park for a change.  But… then the saddest thing ever happened!  I put all my ingredients into the blender for my green smoothie, pushed the button and pow!  Buzzz…..  nothing happened but a yucky burned motor smell.  Uh oh…. the blender died 🙁  Leaving me with no green smoothie 🙁  I tried to put it in the food processor and blend it but it was pretty chunky and not as appetizing.   Really!?!  So hopefully today I can squeeze in some time to go and purchase a new blender.  Any good recommendations?  We had cuisinart, and to be fair, I think it was a blender/food processor combo that we got as a wedding gift so it was about 4 years old.  We are thinking maybe the Ninja?  I really want the vitamix but I can’t seem to talk the hubby into spending $400 on a blender.  Hmmm… decisions.

Another busy Sunday has gone by super fast!  Well, another busy weekend at that.  Dinner with friends last night was fun!  The love nugget wanted to be the life of the party!  He was louder than I think he has ever been just talking away.  He also didn’t want to go down at bedtime which meant a quick dinner for mom and dad then headed home.

This morning we got up and headed to church, brunch with a friend and then ran some errands.  I hadn’t gotten my weekly Target fix yet so we had to go there to grab a few household things.  I love that store 🙂

I came home and had some free time to clean out my car and finish cleaning around the house.  I was craving something baked so I decided to try to come up with a gluten-free chocolate chip cookie.

Gluten-Free Peanut Butter Cookies

1 cup of coconut flour

1/2 cup of almond meal

1/2 tsp sea salt

1 tsp baking soda

1/3 cup of unsweetened coconut

1/2 cup of all natural peanut butter or almond butter

1 organic egg

1/2 cup of 100% pure maple syrup

1/4 cup of agave nectar or honey

1 tsp vanilla

1 tbsp coconut oil melted

1/3 cup of dark chocolate chips

Preheat oven to 375 degrees.  Stir together dry ingredients.  In a separate bowl, mix together wet ingredients.  Pour wet into dry or dry into wet.  I like to mix my wet in my stand mixer then add my dry.  Add chocolate chips once wet and dry ingredients are blended.  Line a baking sheet with parchment paper or spray with cooking spray.  Drop cookie dough onto cookie sheet using a scoop.  Flatten slightly with the back of a spoon or fork.  Bake for 8-10 minutes or until light brown color.  This is the first time I’ve baked gluten-free without a recipe.  Well, now that I think about it, maybe the first time I’ve ever baked completely gluten-free.  So please let me know what you think if you try them!

The love nugget munched on some dried blueberries while I baked away.  The problem with creating your own recipe, is you have to taste test as you go along.  This can be a problem if they’re not right the first time.  Which was the case today!   Double workout Monday!

Now I’m off to do a little crafting while the hubby feeds the love nugget dinner.  Them maybe a movie with dinner 🙂  Have a great Sunday evening!
