Monday, I went to the mailbox twice.  No mail… Then when the hubby got home I mentioned to him that the mail hadn’t arrived when I checked.  He ever so kindly reminded me that it was a holiday.  What!?!  Do I live in a box?  It was Martin Luther King Jr. Day and I had no idea.  Probably due to a few reasons.  1. Since I don’t go to work (although I work 24-7), I don’t look forward to days off.  2. I watch so little T.V. I don’t know what’s going on in our world.  3.  I’ve got so much on my mind lately that I completely tune things out.  Ahhh!  I think it was a wake up call to slow down and pay a little better attention to the world around me.  After all, it’s an important day and respect should be given 🙂 So, thank you Dr. Martin Luther King Jr. for fighting so hard in what you believe!

7 pounds!

Good morning!

Did you know that the average person gains 7 pounds over the holiday season?  Holy cow!  I mean, seven pounds is a lot!  The average newborn baby weighs about 7 pounds so if you happen to be one of those “average” people, you gain an infant!  The worst part is that while it might only take a month (about the length of the holiday season) to gain the weight, it will take much longer to take it back off.  So…. let’s not be a statistic this year people!

Here’s a few tips to make sure we stay on track over Thanksgiving.

1.  Try to get in some form of exercise the daily.  I know, I know, we’re busy right?  I’m right there with you.  House to clean, laundry to do, pies to bake, ect. ect. ect….  I’m not saying get out there everyday and run 5 miles.  I’m saying get in some form of physical activity every day.  Go for a walk, ride a bike, have a dance party with your family 🙂  Anything that will get you moving and will burn a few extra calories.

2.  Drink lots of water.  Not only is it going to keep you hydrated, but it will also keep help you feel full and avoid over eating.  To spruce up your water a little, add some fresh fruit, lemons, or switch to sparkling water and add in a splash of unsweetened cranberry juice and fresh orange wedges for a refreshing holiday beverage.

3.  Along with drinking lots of water, avoid too much alcohol.  Not only do they pack on calories (a glass of eggnog has 343 calories in 1 cup!), but they cause you to retain water and puff up.  I don’t know about you but I can’t stand the puffy feeling after a night of indulging in too many cocktails.  However, I do like to enjoy a drink here and there.  So in order to avoid all the extra calories and water retention, I’ll be sticking to red wine (90 calories per glass) or this yummy Pomegranate Champagne Punch from Eating Well.

Pomegranate Champagne Punch Recipe


  • 2 cups champagne
  • 1 cup pomegranate juice
  • 1 cup seltzer
  • 1/2 cup citrus vodka
  • Lemon twists, for garnish


  1. Combine champagne, pomegranate juice, seltzer and vodka in a large bowl or pitcher. Serve over ice with a twist of lemon.

4. Start the day off with a healthy breakfast.  I am guilty of skipping this important meal a few times during the holiday season.  First it’s easy to do when your busy and don’t have time.  Second, when your planning to indulge in appetizers and a big dinner, skipping breakfast seems like a good way to save some extra calories.  However, by doing this you are actually setting yourself up to eat more food and to make unhealthier choices.  If your busy, start your day with a smoothie that you can drink as you get things ready.  My pumpkin pie green smoothie is both yummy and super filling.

  • 1 scoop vanilla protein powder
  • 1/2 frozen banana
  • 1 cup unsweetened vanilla almond milk (any milk will do)
  • 1/4 cup pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1 large handful organic spinach


  1. Place all ingredients in a blender and mix until smooth and creamy. Enjoy!

5. Take tastes of desserts rather than entire servings.  My husband gets so mad at me sometimes because I’m infamous for baking cookies, eating just one, then leaving the rest for him.  I’ve gotten very good at doing something similar with holiday desserts.  I love desserts and want to try all the wonderful baked goodies that are on our Thanksgiving spread.  So rather than serving myself up a helping of each, I take small, sample size servings or just a few bites from my hubby’s plate.  This way I’m not over doing it on the sweets but still getting to enjoy the delicious sweet treats 🙂

So there you have it.  5 tips on ways to keep off those holiday pounds!  They seem pretty easy compared to the hard work it would take to get the weight gain back off!

Chocolate covered cherry smoothie, yum!

Our oven is back in business!  Thank goodness I have such a handy hubby that can fix anything.  Well, he is the one who actually broke the oven so it’s a good thing he fixed it!  Ha!

The love nugget and I decided to stay home this morning and get some stuff done around the house.  After a busy weekend and a busy start to our week I haven’t had much time to make him any food.

I started the morning off by making him some banana pancakes and me a chocolate covered cherry green smoothie that I adapted from Peas and Thank you.  My new Vegan cookbook that I am loving!

Eggless Banana pancakes

1 cup of whole wheat pastry flour or whole wheat flour

1 tbsp baking powder

1 tsp cinnamon

1/3 cup applesauce

1 medium mashed banana

1 tbsp vegetable oil

1 cup of water

Sift together four, baking powder and cinnamon.  In a separate bowl, mix together applesauce, banana, oil and water.  Add to dry ingredients and mix well.  Drop 1/4 cup of mix into a greased pan and cook for a few minutes on each side.  These puff up quiet a bit so after I flip them once, I press them down with the back of a spatula.  Then flip them again.

To go with his pancakes, I decided to try out a little green smoothie for the love nugget.

Baby Green Smoothie

2-3 slices of frozen organic peaches

1/4 cup frozen organic blueberries

1/2 cup organic spinach

1 tbsp plain baby yogurt or greek yogurt

1/2 – 3/4 cup of water (the love nugget hasn’t had milk yet but if you’re little one has you can use that instead)

Place all ingredients into a blender and blend until smooth.  If it’s too thick, add in a little more water/milk.

The love nugget was in heaven!  Great way to get in some fruit and vegetables!

 Chocolate Covered Cherry Smoothie

1/2 banana

1/2 cup frozen cherries

1 tbsp almond butter

1 tbsp cocoa powder

1 cup chard, kale or spinach (today I used chard)

1 cup almond milk

Dash of Stevia

Blend all ingredients in a blender, enjoy!

Now that we’ve started our morning with a yummy, healthy breakfast, we’re off to cook away!

Good morning!

We are off to a rainy start again today.  My goal this morning was to get up and do my elliptical when the hubby got up for work but… when his alarm went off and I heard the rain I decided to stay in bed.  Which means I’ll have to work out tonight.  Oh well!  The love nugget woke up in a much better mood today.  Not as much fussing through breakfast which meant I got to enjoy my smoothie and get a few things done around the kitchen.

One of my favorite food combinations is peanut butter and bananas.  Second to that is peanut butter and chocolate.   I never really have it because I know where it will end up on my butt or thighs 🙁  However, I discovered a way to have all three in a delicious green smoothie!  A much healthier way to enjoy my favs!

Chocolate Peanut Butter Green Smoothie

half a frozen banana

1/2 cup of frozen blueberries

1/2 scoop vanilla protein powder

1 tbsp PB2 or natural peanut butter

1/2 -1 tbsp unsweetened cocoa powder

1 cup of almond milk

2 handfuls of chard,  spinach or kale

Optional squirt of agave or honey

Put all ingredients into a blender and blend until smooth.  Enjoy!

The love nugget had some pancakes, cantaloupe, cottage cheese and applesauce for breakfast.  This is why I wait to get him dressed until after breakfast!

You can’t really tell but he has food all over his face, hair, and arms.  Messy eater!

We are off to our first day of gymnastics class then lunch with a friend and hopefully a stop to Hobby Lobby.  The love nugget’s birthday is fast approaching and I’ve got a ton of things to do to prepare.  Have a great day!
