Paleo Thanksgiving Round-Up (from the archives)

So we had a bit of a rough weekend.  The Hubby’s Grandfather passed away recently so we were out of town for his services.  It was good to remember his life and lots of happy memories but not necessarily a fun way to spend the weekend.  On top of that I was feeling a bit under the weather with a little stomach bug so spent a lot of time lounging around watching Parenthood and not blogging.  So rather than getting a post done on some NEW Thanksgiving recipes, I’m pulling this one from the archives 🙂

Halloween Fun!

Halloween Fun!

Hey there!

Happy second day of November!  I feel like it’s come way too quickly this year but I’m looking forward to this month.  Thanksgiving will be here before we know it and then… Christmas!

We had a great weekend celebrating Halloween!  Friday night we kept things pretty mellow, just cleaning up around the house and relaxing.  It was great!  Especially since I had to be up early to get things ready for the special Halloween class I was teaching at Afterburn!

Friday Favorites – Halloween Edition

Confession…  I don’t really enjoy Halloween.  I’m sure there was a time when I enjoyed it more.  Like when I was a kid and ate the candy I worked so hard for.  Countless house after house to get a bag of sugar that I normally didn’t eat.  Yeah, it was great!  Now however, I actually dread the day it comes.

For one, I don’t like all the blood, guts and death associated with it.  Scary and gross.  Two, the sugar is major overkill.  I mean, I definitely splurge from time to time and eat candy.  I also allow The Love Nugget to have treats every once in awhile.  However, the massive overload of sugar, preservatives, food dyes etc. that are poured into kids mouths this time of year is ridiculous.  #sorryimnotsorry

However, I do have a four year old who is VERY excited about Halloween.  Even though he’s terrified of half the houses on our block, he still can’t wait to go trick-or-treating.  So, I’m putting on my happy face, hanging sticky spider webs, carving pumpkins and getting into the Halloween spirit as much as I can.  All for my little man 🙂

Happy Wednesday!

I’m still not feeling all that great.  The Love Nugget’s cold germs spread to me and I’m hanging on to it 🙁  No bueno!  Hoping it’s gone by this weekend for Halloween fun!  AND have tons of fun planned for Halloween day.  Starting with a special workout I’ll be teaching at Afterburn,

Then home to shower, change and get ready for some fun with friends at one of our favorite local wineries.

After we have our fun there we are heading back to our house with friends for trick-or-treating, chili and just hanging out with my little fighter pilot 🙂

Anyway, that’s our Halloween plans!  So I’m resting and trying to get better by Saturday…  Wish me luck!

On another note, I thought I’d share a little of what I ate yesterday for today’s WIAW post!

I was up at 6:00am which is actually sleeping in for me.  I grabbed a few macadamia nuts and raisins, pounded a water then jumped into my 21 day fix leg workout.  Glad to have these 30 minute workouts on hand when I want something quick to do at home.  Since I wasn’t feeling all that great, I took it easy and was glad it wasn’t a cardio day.  By the time I was finished, The Love Nugget was up asking for breakfast.  So I made us both our breakfasts then sat down to eat with him.

A simple one this morning of Teeccino with organic heavy cream, a hard-boiled egg with avocado, a turkey apple sausage patty and a slice of my Paleo Pumpkin Bread.

I taught the morning classes at the gym and after ran into Target to grab a few things.  Which included a box of my favorite seasonal LARABAR.

After picking up The Love Nugget, we ran to Pressed Juice and Whole Foods to grab a few things for lunch.

I wasn’t feeling all that hungry so drank a juice, munched on some kale chips and an un-pictured Epic Bar.

A little later I drank the rest of my pressed juice and ate more kale chips for a snack.

We had a busy afternoon and by the time we got home it was time to make dinner and eat dinner.

Baked salmon, roasted kabocha and steamed broccoli.  Yum!

After, we finally carved some pumpkins something The Love Nugget has been looking forward to doing for weeks!

Although, he’s still not much of a helper on the actual carving part…  Which is why we went with the basic this time.  No stencils or fancy faces.  They still look good though!

I’m off to an acupuncture appointment this morning which I’ve been loving lately!  I’ll have to share more about it soon but I highly recommend it for any ailments you’re suffering from.  Or if you just need to de-stress and relax 🙂

It’s Halloween week!  Not only that but it’s a full moon tonight.   Oh I feel for teachers right now!  A full moon and Halloween week?  No fun!  The only plus side for them is that everyone has Sunday to recuperate after Halloween.  AND its daylight savings so we get an extra hour of sleep.  I’m sure teachers everywhere are singing their praises for that!

Paleo Pumpkin Chocolate Chip Bread

Good morning!

Hope you all had a great weekend.  I mentioned on Friday that we were going to a wedding this past weekend but unfortunately The Hubby ended up going alone.  I wasn’t feeling that great and The Love Nugget was still recovering from a cold so we opted to stay home and rest.

I taught the morning classes at the gym then we ran a few errands which ended up taking much longer than anticipated.  Once we got home we parked it on the couch and got in some good resting time.  Which included cuddling and a movie.  Dumbo!   Although, The Love Nugget wasn’t sure he wanted to watch it and I couldn’t figure out why.  It’s not really scary like some other Disney movies that he dislikes.  Well, when they animals are making fun of Dumbo and he gets sad The Love Nugget turned to me angrily and said, “See mom, this is why I didn’t want to watch this movie!”  I fast forwarded it 🙂

I woke up Sunday feeling a little better so got in a quick 21 Day Fix workout before spending the morning meal prepping and cleaning.   It’s been a few weeks since I’ve gotten in a good meal prepping Sunday and I forgot how I tend to get going once I get started.  I only planned to roast some veggies, bake some chicken apple sausage, boil some eggs and chop some veggies but I ended up throwing together some protein bites and baking a fall inspired treat.

Paleo Pumpkin Bread

Paleo Pumpkin Bread

Ingredients

  • 1 1/2 cups blanched almond flour
  • 2 tbsp. coconut flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1 cup pumpkin puree
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 3 tbsp. maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp. vanilla
  • Optional 1/4 cup mini chocolate chips (I use Enjoy Life), chopped walnuts or raisins

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Line a loaf pan with parchment paper and lightly grease with coconut oil.
  3. In a medium bowl, whisk together the dry ingredients expect the coconut sugar.
  4. In a stand mixer or seperate bowl, mix together the wet ingredients.
  5. Add the dry ingredients to the wet and stir until combined. Add in the chocolate chips, walnuts or raisins and mix in.
  6. Pour into the prepared baking pan and bake for 30-35 minutes.
  7. Enjoy!

Really?  Already Fourth of July?  This summer is just flying by!  We actually don’t have big plans which is kind of nice.  It’s supposed to be pretty hot so we’ll probably go to our towns parade in the morning, relax during the day, then hit up the fireworks show in the evening.  Relaxing but fun!

Of course with most American holiday’s the day wouldn’t be complete without good food!

My husband is the hardest person to shop for.  For one, he has everything he wants and if he wants something, he buys it for himself.  Two, he’s not the type of guy to like your typical “guy” gift items.  Coffee mugs, ties, money clips, wallets, fancy cologne, etc. just don’t interest him.  So when it comes to gift giving I often struggle.  Especially since we are going on year 11 of buying gifts I’ve pretty much used all my creative ideas.  This year however I think I found the perfect Father’s Day gift!
