Happy Monday!

I hope you all had a marvelous weekend!  I had meant to put up a post yesterday with our meal plans and a recap of our fun weekend but it ended up being a busy day at home.  So I figured I’d share a few marvelous weekend happenings along with some other random stuff for Marvelous in My Monday.

 

I love linking up with Katie at Healthy Diva Eats for MIMM.  It’s a great way to begin each week.  I’m also participating in Katie’s #dominatediva action she’s hosting this month.  If you want to find out what it’s all about, make sure to check out her blog!  I #dominated this morning with a bodypump class at the gym and 45 minutes on the elliptical!

Marvelous – This new to me veggie that arrived in our Farm Fresh To You box on Friday.

 

I discovered it’s called a Romanesco and it is delicious!  I chopped it up and roasted half of it with lemon juice, olive oil and a little balsamic.  So good!  It’s less bitter than cauliflower and has a slight sweet taste to it.  It’s also really good with hummus.  I hope I can find it at Whole Foods!

Marvelous – These Coconut Roasted Almonds that I FINALLY found at Target.

 

I had seen Katie post about this delicious snack but hadn’t been able to find them anywhere.  I was pleasantly surprised to see that Target was finally carrying them! They are soo good!

Marvelous – A fun Saturday with the family 🙂

The Love Nugget had a blast at his friends 1st birthday.  He played with lots of friends and found a bunch of new books to read.

 

Then we went to Auntie Gigi’s for dinner, more fun and even a little kissing action from his new little girlfriend 🙂

We were awoken by a crazy storm yesterday morning.

So much rain our back yard looked like a pond for a while!  It was a good reason to have a pajama day!  Which for us meant cleaning, cooking, watching football (for the hubby), and crafting all while in our PJ’s 🙂

It actually turned into a very productive day!  The storm passed by the afternoon and as soon as got dark enough, we walked down the street to the most festive house in the neighborhood.

The Love Nugget was amazed by all the Christmas lights.  Funny story, one year we were driving by this house and noticed that there was a sign out front that said the street would be closed later that night due to filming.  We also noticed that they had all their lights and decorations up which was strange since it was October!  We decided to come back later that evening to check it out and found the house all lit up, Santa, elves and a T.V. crew.  We hung around and fake “oohed and awed” at the Christmas lights for a show called Invasion of the Christmas Lights on TLC.  Months later we turned on the T.V. to see our bright smiling faces gazing at the Christmas lights!

 Marvelous – These little bites of goodness sent to me by the wonderful folks over at Chunks of Energy.

 (Please excuse my disgusting nails!  Ugh!  I’m in major need of a manicure!)

I love finding yummy snacks that are both tasty and good for me.  So when I heard about these Chunks of Energy, I thought I’d give them a try!  This wonderful company is serious about making healthy snacks that include an abundance of good for you ingredients.  They have 14 delicious flavors of energy bites as well as the organic super foods Spirulina, carob powder and cocoa powder.  I was lucky enough to receive a package with two different favors to try.

The 100% Raw Cocoa and the Cha Cha Chia.  The hubby and I sampled both and were impressed with their delicious flavor and texture.  Often these bites can be dry and crumbly but these were perfect!  Not only did they taste good, but they were packed with a ton of healthy ingredients.  The Cha Cha Chia had organic date paste, organic sesame seeds, organic cashews, organic coconut, organic cocoa butter, organic raisins, organic apricots, organic chia seeds, organic orange extract While the Cocoa had organic raw dates, organic raw sunflower seeds, organic raw raisins, organic raw apricots, organic raw cacao powder, organic raw unhulled sesame seeds, organic sunflower meal, organic raw shredded coconut (tree nut), organic raw goji powder, natural flavors (MSG-free & gluten-free).

I found both of these chunks of energy to be pretty marvelous and will be ordering some different flavors soon!

Holy cow it’s December 1st!

I’m so glad it’s here but not 100% prepared for all it entails.  Don’t get me wrong I love christmas but trying to coordinate with all our families can be a little bit stressful to say the least.  We usually celebrate at 5 different locations over the span of a few days to a week.  Luckily most everyone is pretty flexible but it is always a task trying to figure out when we’ll be where etc.  We will however, be waking up at our own house on Christmas day now that we have the Love Nugget.  I always remember traveling when I was younger and being so confused how Santa was going to find me.  So we’re going to try to hold on to that part of Christmas for as long as we can.

Along with trying to plan Christmas’ with family yesterday, the Love Nugget and I had a rainy, but fun day.  As I mentioned yesterday, the hubby and I decorated for Christmas while the Love Nugget was sleeping.  So we were really excited to see his reaction when he got up in the morning.  He was really cute when he came down stairs and ran over to his Christmas tree saying (in his little Love Nugget voice) “tismas tee, tismas tee!”

 

He then proceeded to run around the house looking at all the decorations we had put up saying, “wow!” and “ooh..”  So much fun seeing Christmas through his eyes and it’s barely begun!

Yesterday, was excited to find a package sitting on my doorstep when I woke up yesterday.  I ordered my second box of organic produce from Farm Fresh To You.  My first box came a few weeks ago and was a mixture of fruit and vegetables.  This week the fruit that was planned to be shipped was mandarins and apples which we had a ton of.  So I changed my order to be veggies only.  Man, there were a ton of veggies in this box!

Beets, kale, carrots, bok choy, red leaf lettuce, acorn squash, spinach, broccoli and this funky thing…

I forget what it was listed as and I accidentally threw away the information sheet.  Oops!  I think it’s something similar to cauliflower?  I bought some hummus today so I’m going to cut it up and give it a try.

We ate a yummy breakfast, scrambled eggs with ketchup, toast, and yogurt for him and this yummy scramble for me!

I used this yummy kale salad mix that was really good!  I found it at Costco and it’s similar to a cole slaw but way better for you with kale, Brussel sprouts (which I normally hate but they were raw and sliced thin), broccoli and cabbage.  It’s pretty good and the hubby even likes it!

Then we cleaned up and got ready to go to Skyzone with some friends.  Skyzone is an indoor trampoline place that has a large room made up of trampolines and padding.  On Friday’s they block off a set time for toddlers so we decided to go check it out.  The Love Nugget thought it was pretty cool!  He’s so funny because while he can be super clinging, he will also just run off and play by himself without worrying too much about where I am.
He loved the toddler friendly music they were playing and when his favorite Mickey Mouse tune came on he broke down into a little dance.  Too funny!

I had hoped to hop on the elliptical while he was napping but that didn’t happen.  For one he didn’t really want to nap and two I kept getting side tracked with crafts, cleaning and putting laundry away.

When he woke up we did  a little water-color painting.

 

He thought it was a lot of fun!

 

For me however, it was taking all my will power not to hold his hand while he dipped the brush into the water, then the paint.  He was mixing the colors and the control side of me was freaking out a little!  However, I just kept thinking, “the paint was $3.00.  I can buy another if it gets ruined.  What’s really important is he’s having fun!”

 

Besides painting, the Love Nugget spent a lot of time playing with his “tismis tee” (Christmas tree).  This was such a simple project and is so far a hit!

1 yard of green felt

1 8×10 sheet of desired ornament colors (red, yellow, blue, white, brown)

* The thick, firm felt sticks better to the tree than the thinner sheets.

hot glue gun (if making light bulb ornaments with yellow tops)

Double sided tape to stick to the wall

1 tack to secure the tree in place

Fold the green felt in half “hot dog style”  (my second graders used to love that!)  Draw half of your Christmas tree to the desired size you would like it.

Cut out your tree then using your colored sheets cut out desired shapes of ornaments.  You can also add presents which I might do later.  Secure the tree by tacking the top to the wall then using double-sided tape to secure each branch.  You’re little one will love decorating their own tree!

This morning I got up early to get in a workout before heading out to run some errands.  I had been anticipating the Neiman Marcus Target partnership that was starting today!  In case you haven’t heard, Target partnered with Neiman Marcus and will be selling items from 30 major designers during the month of December.  I had been eying this dress for the hubby’s company Christmas party,

After what happened when Target brought in Missoni for a short time (chaos and almost everything was sold out immediately) I figured this line would be gone fast too.

So I got up early and checked online before my workout.  They had both these items so I ordered them but still made my way to the store to see them in person.  I SO wanted to love them…. but I didn’t 🙁  The purse was canvas which would get dirty quickly and the dress was a hot mess.  Well, let me explain.  I’m 5’10” and have a very small upper body frame (meaning, I have no boobs).  So the only size that would fit snug around my waist and rib cage was a size 2.  Well, unless I wanted everyone to get a nice showing of my behind, it wasn’t going to work.  Bummer!

I did manage to get the Love Nugget an advent calendar finally.

It’s pretty plain and the boxes are quite small but I bought a bunch of stickers to put in them and maybe I’ll add in a few of the graham crackers I made him.  I also went to Trader Joe’s to stock up on groceries.  Glad I got that out-of-the-way early this morning 🙂

We have a birthday party to go to at 2:00 then dinner at a friends.  So, off to get some chores done before it’s time to go!

Hope you’ve all had a wonderful weekend!  It sure did fly by for us!

Yesterday I had a hair apt and the Love Nugget had to tag along.  He did such a good job waiting for me to finish and then it was his turn!

 

He didn’t really enjoy it all that much but luckily I had some of these crackers I had made this week for him to snack on.

 

I also had a little helper while making them 🙂

He LOVES them!

 

They taste pretty similar to graham crackers but are much healthier since they don’t have all the added over processed ingredients.

Whole wheat graham crackers (adapted from Weelicious)

Ingredients

  • 1 1/2 cup whole wheat flour
  • 1 cup flax seed meal
  • 1/4 cup brown sugar
  • 1/2 salt
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • 1/3 cup butter, chilled and cut into cubes
  • 1/4 cup 100% pure maple syrup
  • 3-4 tbsp water

Instructions

  1. Preheat oven to 350 degrees. In a food processor, combing the first 6 ingredients. Add in the cubed butter and pulse until a crumbly mixture forms. Add maple syrup and pulse again. Continue pulsing adding in water a tbsp at a time until a sticky dough forms. Seperate into two balls then roll out on a floured surface into a 1/4 inch thick oval. Cut out into squares or desired shapes. Place onto a parchment lined baking sheet and bake for 12 minutes. Remove from the cookie sheet imediately to cool

I’ll admit I might have snacked on a few of these myself.  Smear some nut butter on them and you’ve got a pretty yummy snack!

After we were all fresh and fancy with our new hair cuts, we went to check out a store my hairstylist mentioned to me.  Evidentially, there is a store that sells things that Costco cannot.  Items that are damaged, returned, etc.  Since it was close by, I figured I’d make a quick stop to check it out.  So glad I did because I found this sandbox for the Love Nugget!

They had to take it apart to fit into my car so I don’t have a picture but it’s just like this one.

We had been talking about getting him one since we have a large covered patio and it would be nice for him to play if it’s raining or just whenever!

I also found him a nice weather proof jacket for when we go to the snow in January.

We came home and cleaned up more ants!  These are seriously the most determined ants I’ve ever seen!  We’ve lived here for 5 years now and have never had to deal with ants.  Where are they coming from!?!  They are driving me crazy!

Sorry, enough ranting about ants…  The hubby was able to get home a little earlier last night so we could start decorating our Christmas tree!  We have several boxes of Christmas decorations but for some reason I always think we need more!

We ate a quick dinner of this crock pot chili with spinach instead of swiss chard.  So glad I thought to do this before leaving for the day!

Then we got our decorating on!

 

Like most of you, I love putting on holiday music and decorating our house.  No better way to get into the holiday spirit!  This year was extra fun since we got to reminisce as we pulled out some special decorations from the Love Nugget’s first Christmas last year.

Along with our Christmas tree, I put up a little felt Christmas tree that I made for the Love Nugget that I’ll share in  tomorrows post.  This one is already way too long and I didn’t even talk about fitness for fitness Friday!

We’ll skip it this week.   Although I will say it was really nice to get back on track after Thanksgiving 🙂

It’s already Wednesday!  Wow, this week is flying by!

Yesterday I started my day off with one of my favorite breakfasts but with a new twist.  I love overnight oats.  Even though it’s getting colder, I’m still going to eat them because they are oh so good!  I usually make them pretty plain with just oats, greek yogurt, stevia, and almond milk.  Then I’ll top them with some kind of nut butter.  Well this particular batch I decided to get fancy!

Ingredients

  • 1/2 cup old fashioned oats
  • 2 tbsp non-fat greek yogurt
  • 1/2 scoop chocolate protein powder
  • 1/4 cup organic raspberries
  • 2 tbsp unsweetened shredded coconut
  • 1/4 cup unsweetened vanilla almond milk or milk of choice

Instructions

  1. Mix all ingredients together in a bowl. The mixture will be thin but will thicken up as it sits overnight. If it is not thin enough, add a little more milk. Feel free to add more oats too! Cover the bowl and refrigerate overnight or for at least 4 hours. In the morning, stir and enjoy!

After breakfast we headed off to the gym for boot camp.  The Love Nugget still does not like being dropped off at the daycare.  He starts fussing when I tell him were we are going and then when we pull into the parking lot and is clinging to me as soon as we get out of the car.  However, once I’m gone, he’s running around playing and having a ball!

I’ve been wanting to take him to the library for their Mother Goose on the Loose for quite sometime now so as soon as we left the gym we headed over there.  It was super cute and the Love Nugget wasn’t quite sure what to make of the funny lady that was singing, dancing and clapping around the room.  I think he liked it though 🙂

On the way home, I snacked on a Strawberry Cheesecake Quest Bar.  I love this flavor but think I’ll switch it up next time and get the Cinnamon Roll.  Another favorite!

 

Lunch was an idea I borrowed from my friend Melissa at Fit ‘N’ Well Mommy.  She always posts pictures of her egg white in a mug over spinach for lunch so I thought I’d have something similar.

 

Two egg whites mixed with chopped spinach then microwaved in a bowl for 1 min 30 seconds and topped with goat cheese and smashed avocado.  It was delish!  I also enjoyed a Satsuma Mandarin on the side.  Love these things!

For dinner I had planned to have butternut squash ravioli with a goat cheese pumpkin sauce but we decided to go get a Christmas tree and go out to eat instead.  We were going to go cut a tree down this weekend but a BIG storm is coming in tomorrow and sticking around through the weekend so we figured tramping through the mud with a toddler wouldn’t be too much fun.  So, a Christmas tree lot it was for us this year!  Which was okay since I’m super picky about my trees and we usually spend a lot of time searching for the “perfect” tree.  When they are already cut for you, it makes choosing a little easier 🙂

After we picked out a tree, we went to sushi for dinner.  Most of  you know that we don’t eat out all that often.  For one, because I’m a pretty picky eater and usually leave unsatisfied and two because I like to know where my food came from and how it is being prepared.  However, we are both always happy and full when we leave our favorite sushi restaurant Mikuni.  It’s so good!  Tonight we started with two Sapporos and some edemame followed by cucumber salad and pepperfin.

Then we each ordered a roll even though I knew it would be too much food for me to eat!  I ordered the Annie Roll without panko shrimp and the hubby ordered a Michi Roll.  Both with soy wraps just because they are easier to eat and we prefer the taste.

After dinner we walked down to the fountain so the Love Nugget could watch the water.  He loves this thing, especially at night.

 

We also made a stop in the cute little candy shop to see if they had the lemon cream almonds.  No luck but they did have a few other yummy treats.  This mint chocolate Christmas Tree pretzel was pretty good!

 

We also grabbed a few peppermint caramels, chocolate covered almonds, and chocolate covered cherries.  I tried one of each!

I ended my evening with a hot cup of peppermint tea.  Ahh… I love winter time tea.

Advent Calendars

Hope you all had a Marvelous Monday!

Yesterday was an off day for us.  I think I was just tired from a long weekend of traveling, visiting family, and eating.  Plus, the Love Nugget didn’t sleep well again!  Ugh!  Anyways, I had planned to get up at 6:00 to work out but evidentially someone else did too because he woke up just a few minutes before my alarm.  And… insisted on me holding him.  Then didn’t want to go back to sleep so, we were up, not working out 🙁  I figured I would go to the gym later in the day but decided to go to Costco and Whole Foods to stock up on groceries which took longer than I had anticipated.  The Love Nugget did take a long nap and I should have hopped on the elliptical but I was busy cleaning, doing laundry, and making a new protein ball recipe for my Fitmixer post on Wednesday.  Luckily, the weather has been gorgeous the past few days so after the Love Nugget woke up, we headed out for a run and some play time at the park.

It was so nice to be out and about but we didn’t plan it too well as far as time goes.  School just got out and the playground became overwhelmed with big kids running all over the climbing structure.  We got in some good play time though 🙂

When I was little, every year we got an advent calendar that had pictures or chocolates in each little window.  We loved waking up every morning anticipating what was awaiting us on our calendar.  I love the idea of the Elf on the Shelf but I think the Love Nugget is still too young to really understand him so we are going to wait until next year.  So, instead I really want to find a fun advent calendar for him.  I’ve seen some really nice wooden boxes where you can put things in for each day.

I  have no doubt the Love Nugget would just adore this but I don’t really adore the $90 price tag that it comes with!  No thanks!

So I’m still on the hunt and need to find something soon since December 1st is this weekend!

Along with the advent calendar, we had some other traditions we always looked forward to.  Of coarse the decorating of the tree, putting out cookies and milk for Santa, and opening one gift each on Christmas Eve.  As the Love Nugget gets older, I hope we start our own traditions that he will be able to look back on some day and enjoy the memories 🙂
