Okay, I’ll admit that I indulged WAY too much over the holiday season.
Hope you all had a great weekend. I mentioned on Friday that we were going to a wedding this past weekend but unfortunately The Hubby ended up going alone. I wasn’t feeling that great and The Love Nugget was still recovering from a cold so we opted to stay home and rest.
I taught the morning classes at the gym then we ran a few errands which ended up taking much longer than anticipated. Once we got home we parked it on the couch and got in some good resting time. Which included cuddling and a movie. Dumbo! Although, The Love Nugget wasn’t sure he wanted to watch it and I couldn’t figure out why. It’s not really scary like some other Disney movies that he dislikes. Well, when they animals are making fun of Dumbo and he gets sad The Love Nugget turned to me angrily and said, “See mom, this is why I didn’t want to watch this movie!” I fast forwarded it 🙂
I woke up Sunday feeling a little better so got in a quick 21 Day Fix workout before spending the morning meal prepping and cleaning. It’s been a few weeks since I’ve gotten in a good meal prepping Sunday and I forgot how I tend to get going once I get started. I only planned to roast some veggies, bake some chicken apple sausage, boil some eggs and chop some veggies but I ended up throwing together some protein bites and baking a fall inspired treat.
- 1 1/2 cups blanched almond flour
- 2 tbsp. coconut flour
- 2 tsp. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt
- 1 cup pumpkin puree
- 3 eggs
- 1/4 cup coconut oil, melted
- 3 tbsp. maple syrup
- 1/4 cup coconut sugar
- 1 tsp. vanilla
- Optional 1/4 cup mini chocolate chips (I use Enjoy Life), chopped walnuts or raisins
- Pre-heat oven to 350 degrees.
- Line a loaf pan with parchment paper and lightly grease with coconut oil.
- In a medium bowl, whisk together the dry ingredients expect the coconut sugar.
- In a stand mixer or seperate bowl, mix together the wet ingredients.
- Add the dry ingredients to the wet and stir until combined. Add in the chocolate chips, walnuts or raisins and mix in.
- Pour into the prepared baking pan and bake for 30-35 minutes.
Who’s ready for the weekend? We’re almost there I can see it! I’m ready as it’s been a long, but fun week. The Love Nugget and I have been having fun while The Hubby has been gone but are very much anticipating his return today. We missed him greatly but were so busy we didn’t have too much time to notice he was gone. Last night for example, we were out late partying it up at Afterburn!
Last month I led a clean eating challenge with a handful of clients from the gym. They all worked so hard and we wanted to celebrate that hard work with a fun little celebration.

It’s been awhile since I’ve given you a peak into my daily eats. So I figured I’d go ahead and do that today since I actually managed to capture a few meals before I inhaled them the other day 😉
Monday morning I was wide awake at 5:15 so pounded some water then got in a 21 day fix workout. Love that I can do a quick 30 minutes before the Love Nugget wakes up 🙂
After a quick shower, I brewed a cup of my favorite herbal coffee, Teeccino!

Yay for back to school! Okay so I have to admit it’s a little bitter-sweet for me as this time of year always brings back so many happy memories from teaching. The anticipation of the first day and meeting all those adorable faces was one of my most favorite times of year. Now I just get to experience it through all my teacher friends as they anxiously await (and majorly prep) for the first day. Well okay I don’t only get to experience it through them. The Love Nugget goes to school too!

Who’s still melting in hot weather?!? I am! This week we’re back up in the 100’s. Which I know is mild compared to those in places like Death Valley where it reached 120! Do people actually live there? Crazy!
The Love Nugget still insists on playing outside. While I try to keep him indoors when it’s over 100 degrees it’s hard to argue when he’s happily playing in his sandbox while I try to get something done. He’s in the shade so i usually allow him to play for a little while but then bring him inside to cool him down. Which we do by enjoying lots of popsicles, frozen grapes, smoothies and smoothie bowls.
It’s been a much slower paced week so far around here which has been nice. Although it’s been ridiculously hot again. So much so that I think people are hiding indoors and avoiding even leaving their houses. It’s been a slow week at Afterburn and yesterday no one showed up for my 8:30 class which was a bummer 🙁 I made the most of it by walking on the treadmill, and rowing with The Love Nugget since I had to wait around until my 9:45 class.
As you read this I’m high in the sky on my way to Blogfest/Idea World Expo. Hopefully my flight left on time at 5:25am because I literally have to land, hop in a cab and jam over to the convention center for Schwinn training. Not sure I planned this the best way but fingers crossed it all works out!
Then tomorrow is the first day of Blogfest! I’m excited but it’s definitely coming at a time that’s a bit stressful for us. We are right in the middle of our infertility treatments and I even have to give myself injections while traveling. Not ideal but gotta do what you gotta do!
On another note, it’s Wednesday and I haven’t done a WIAW post in several weeks. BUT… Monday I actually remembered to snap photos of some eats so I’m joining Jenn for Wednesdays food filled shin dig!
Sorry for the lack of posts this week. I’ve been busy studying for my AFFA exam on Saturday! I feel prepared for the instruction portion but not as much for the test. It’s just been so long since I’ve had to take a test i’m nervous! Plus I’ve been so busy I haven’t had as much time as I’d like study. Fingers crossed I pass!
I’ve also been feeling a bit off lately which has attributed to my absence. I mentioned our infertility treatments were going through the other day and Monday I went in to check that the drugs worked and I was ready for the next step. Unfortunately they didn’t work. So I was put on a double dosage of the same drug I had been so happy to get off of, then prescribed an injection that I’ll have to give myself starting this Friday. I know many people go trough numerous cycles and infertility treatments but I was just so optimistic the first time would work. Plus the side effects from the hormones and drugs are taking a toll on me. Anyway, since I’ve been feeling so off from the drugs and just not being as clean on my diet as I’d like to be I decided to do something I never thought I’d do. A juice cleanse!
I’ve mentioned this a few times in the past month or so but man, we’ve been so busy lately! Which had definitely had an effect on our meals. I haven’t had much time to meal plan very well, meal prep or some nights even cook dinner. This means we are often eating thrown together salads, smoothies, and left overs upon left overs upon left overs. So when I heard about a new meal delivery service that features fresh, organic ingredients with gluten-free, vegetarian and even paleo options I jumped at the chance to try them out.
