An Evening in France Dinner Party

An Evening in France Dinner Party

Bonjour!

I mentioned yesterday that we hosted a super fun, French dinner at our house this past weekend so today I wanted to share a little more about that.

There’s a small group of us that get together once a month for a fun family dinner.  We rotate who hosts it and the hosts picks a country/theme, plans a yummy dinner then the guest bring wine that goes along with the theme.  Our first dinner was Spanish themed and we enjoyed Sangria and Paella.  Yum!

Friday Favorites + 5 Ingredient Breakfast Cookies!

Happy Friday!

Man this weekend came fast.  Did anyone else feel like they just blinked and the week was gone?  I guess it’s a good thing since I have a fun weekend planned with my girls!  Can’t wait to relax in Tahoe with the two of them.  We have dinner planned on the lake tonight, a hike tomorrow morning followed by a wine and brew fest in North Star Village.  So looking forward to catching up and relaxing 🙂

It wasn’t until I sat down last night and was browsing online that I realized today is September 11th.  A day that will never be forgotten.

I can vividly remember exactly where I was, what I was doing, who I was with and the explosion of emotions I felt.  Memories that I’m sure I’ll always remember but wish I never had.  My heart goes out to the families who lost loved ones on that day.

Hi friends!

Hope your week is off to a great start.  I love/hate 4 day weeks.  They are great for the obvious reason, the weekend is one day closer.  However they can also be a struggle since I feel like I’m trying to play catch up all week long.  Which is exactly how I’m feeling this week.  Lots to do with a little less time.  The reason I have so much to do though is because I’m heading off to Tahoe on Friday with my besties!

So excited and looking forward to a nice relaxing weekend with my two closest friends from high school.

Quick and Healthy Bruschetta Chicken

Quick and Healthy Bruschetta Chicken

Good morning friends!

How’s everyone’s week going?  Mine started out great but unfortunately I came down with a bit of a cold 🙁  Grrrr… I think I’m more frustrated than anything as I just don’t have time to be sick.  Luckily I loaded up on vitamins, elderberry syrup, bone broth and gelatin so am feeling much better today.  Good thing because we have fun plans for the weekend that I just can’t be sick for!

Speaking of our weekend, I’ve got a ton of things to do to get ready for our adventure so I’m just popping in real quick today to share a quick and easy dinner with you all.

With school back in session and life getting a bit busier, quick and easy dinners are a favorite around here.  As I’m sure they are in many other households 🙂  You all know I’m a fan of healthy meals but sometimes healthy can mean multiple ingredients, steps, and time.  However there are TONS of recipes that are very healthy and can be made in a very short amount of time.  One we’ve enjoy is this quick and easy Bruschetta Chicken recipe that is simple to whip up on a busy evening.

The bruschetta is made with fresh, in season ingredients and the chicken is simple to cook on the grill or indoors on a grill pan.  Which is the method I used the last time we ate it.   AND it was enjoyed by all!

Why I Stopped Drinking Caffeine and the Delicious Drink I found to Replace it!

Why I Stopped Drinking Caffeine and the Delicious Drink I found to Replace it!

There’s nothing better than a warm cup of coffee in the morning to start the day.  I just love it!  The smell, the warmth, the comfort, the taste.  I’ve just always enjoyed it.  While I’ve never been addicted to caffeine or anything I definitely would look forward to at least one cup of coffee each day.   Not only for the boost of energy, but just the sheer comfort of sipping a  warm, soothing beverage in the early hours of the day.

If You’re Eating Tuna, You Should be Eating Safe Catch!

If You’re Eating Tuna, You Should be Eating Safe Catch!

I used to dislike tuna.  Not fresh tuna but canned tuna.  Mainly because I had heard such horrible things about the fish they use and the way they catch the fish.  Many big brands use longline fishery which is the use of a long fishing line with multiple hooks that can stretch for many miles. Thousands of tons of seabirds, sea turtles, sharks and other marine life are hooked and then left to die on the lines.

So I just avoided it.  Then I discovered that there were companies that were committed to sustainable fishing practices and distributing a product that is safe to eat.  Even still I worried about mercury.  What most people these days worry about when they think about tuna.  Especially those of us with kiddos.  Mercury is highly toxic and kids are most susceptible to the harmful effects.

Luckily there is a brand that is creating a product that is not only sustainable but is produced with tuna that has been individually tested for mercury.  Yes you read that right, EACH fish is tested for their mercury level.

Tropical Smoothie Bowl with Blue Diamond

Who’s still melting in hot weather?!?  I am!  This week we’re back up in the 100’s.  Which I know is mild compared to those in places like Death Valley where it reached 120!  Do people actually live there?  Crazy!

The Love Nugget still insists on playing outside.  While I try to keep him indoors when it’s over 100 degrees it’s hard to argue when he’s happily playing in his sandbox while I try to get something done.  He’s in the shade so i usually allow him to play for a little while but then bring him inside to cool him down.  Which we do by enjoying lots of popsicles, frozen grapes, smoothies and smoothie bowls.
