Hi there!

Hope you all had a wonderful weekend.  I think I’m officially in full on nesting mode.  I woke up early Saturday morning with all sorts of energy even though I didn’t sleep great.  I went for a long walk, then spent the morning prepping a few freezer meals, cleaning, and organizing.  I was back at it again on Sunday after another long walk we ran a bunch of errands then came home to do more organizing and meal prepping.  Usually around 1:00 I’m dead tired and have take a nap but the past few days I’ve just been tackling one thing after another.  Nesting?  Yep!

One of the “meals” I prepped this weekend were these cookies that I know will definitely be enjoyed soon.

There are a lot of great things about living in California.  The great weather, the mountains, the beaches, rivers, lakes, and all the amazing landmarks we have to visit.  However, one of my absolute favorite things about living in California, is abundance of natural resources we have.  In particular, the fresh fruits, vegetables, nuts and pasture raised animal products produced from our awesome farmers.  California farmers generate over 100 billion annual economic activity for our state and farming is one of the largest employers in our state.  We feel blessed to live in an area where if we wanted, we could go to a farmer’s market everyday to purchase nearly everything we need to flourish with healthy living.  Not only do we have farmers markets to purchase local foods from, but many of our grocery stores carry California Grown products.

How my Diet has Changed

Let me ask you a question.  Do you still eat the exact same foods you did when you were a kid?  In college?  Or even last year?  The answer is probably no right?  I mean, sure you may eat some of the same foods but I doubt you’re eating cocoa puffs, Mc Donalds Happy meals or frozen Lean Cuisines right?  Our diets were constantly changing as we grew and changed.  Even though we are now adults, we are still constantly evolving.  We might find a new food we like or dislike, a new fitness program we enjoy, or a new diet that works for us in that moment.

Which is 100% okay!

There were many years that I didn’t eat beef or pork.  I mostly ate chicken and fish for my protein sources which was easy when I was at home cooking for myself.  When I went other places, it got harder.  Especially with my family since they are all big meat eaters.  After several Christmas’ going to my grandparents and eating only the salad while everyone else ate prime rib, my grandma cooked up something else for me.  Nothing special, just some fish and zucchini but ever since then I’ve LOVED this particular kind of fish.   For one because it tastes great and for two it will always remind me of the special meal she would make me every year until she passed.

You guys, I’ve been SO hungry lately!  I remember in my first trimester at one of my doctor appointments when I was throwing up everyday and complaining about how sick I felt he said something I almost didn’t believe.  He said, “You just wait, in a few weeks you’ll be starving all the time and wanting to eat everything in sight.”  I laughed.

Oh he was right!  I’ve been so hungry lately especially when I wake up in the mornings.  I tend to eat a little something first thing after I wake up like one of these snack bites.  Then by the time The Love Nugget wakes up I’m ready for something more substantial.

My first trimester I didn’t really want anything except carbs.  Mostly in the form of pizza or crackers.  My normal foods like vegetables, fruits, and smoothies were not my friend.  I wanted to drink them especially since it was a way I could get in some produce but I couldn’t even think about drinking them.  Luckily around 14 weeks something changed and suddenly smoothies sounded so good!  Perfect timing too since drinking smoothies is such a good way to reboot your system after a few weeks of holiday splurges.  Cookies, chocolate, and more cookies sound familiar to anyone else?  Well I sure enjoyed quite of a few of those and now that I’m finally craving some good, healthy food again I’m looking forward to drinking some daily green smoothies.

Happy New Years Eve!

Okay so I admittedly didn’t realize it was NYE today until yesterday morning.  It’s never really been all that of an exciting holiday for me and this year is no different.  Actually, while most people are toasting to a new year, I’ll most likely be in bed since I can barely make it up past 9:00pm these days!   We will probably stay home, get takeout and watch the New Years Eve celebration on Netflix while sipping on sparkling apple cider.   New Years Day we have big plans to take down our Christmas decorations and clean our house.  Which I’m both sad and excited about.  I love having Christmas decorations up but I’m ready to clean up and start the New Year fresh!

Speaking of the New Year, I thought I’d finish up 2015 with a short round up with my top 5 food posts from the last year.  I didn’t do as much recipe creating as I’ve done in the past but the few that I did do were definitely enjoyed!

Paleo Thanksgiving Round-Up (from the archives)

So we had a bit of a rough weekend.  The Hubby’s Grandfather passed away recently so we were out of town for his services.  It was good to remember his life and lots of happy memories but not necessarily a fun way to spend the weekend.  On top of that I was feeling a bit under the weather with a little stomach bug so spent a lot of time lounging around watching Parenthood and not blogging.  So rather than getting a post done on some NEW Thanksgiving recipes, I’m pulling this one from the archives 🙂
