Thankful Thursday Random Things…

Hi there!

Yesterday was a very stormy day around here.  Stormy days make it very hard to get out of the house and to the gym but we did it!  When we got home, the Love Nugget had a snack, then went down for a LONG nap.  Which I was very thankful for since I had a ton of things I wanted to do.  Our office and guest bedroom are in shambles and I’ve been meaning to get in there to organize and clean.  Today was that day and I managed to get a lot done but not quite finished.  I had been wanting to make the Love Nugget a felt tree to hang next to our tree so that maybe he won’t play with the real one… So a little later in the afternoon we headed to Hobby Lobby to pick up some supplies.

This week I’ll be sharing some of my more random things I’m thankful for 🙂

1. I’m thankful that my new car has heated steering and heated seats.  This past week while we were traveling up north, it got really cold.  Hopping into a nice toasty car with a warm steering wheel and warm seats made it a little more bearable!

2. I’m thankful for DVR.  I’m sure I’m not alone on this one.  We have become complete DVR junkies.  I can’t remember the last time I’ve watched a program where I wasn’t fast forwarding through the commercials!  During the day, I don’t have the T.V. on anymore at all since we try to limit the Love Nugget watching any television.  The hubby and I have just a few shows we like to watch together and usually do that a day or two after they air.  It just makes it so much better!

3. I’m thankful that my mom taught me how to cook and bake.  I know several people who are good at one or the other, or often, neither!  My mom taught me at an early age how to cook meals, bake cookies, cakes, pies, can salsa, you name it I’ve probably watched it or done it!  I love that I’m able to make the majority of the meals and snacks for my family.  It makes me feel good to know that they are getting real, healthy foods prepared with love 🙂

*Side note – I am fully aware that many moms work and just do not have the time to prepare all of their families meals.  If I were not a stay at home mom, I’m not sure I would be able to do as much as I do.

4.  I’m thankful that the gym is so close to our house.  There have been many days when I don’t want to get out of bed to go to the gym.  Especially when it’s 5:00 am and raining outside.  The fact that the gym is literally 2 minutes away makes it SO much easier to drag my butt there!  Hopefully our next house will be close to another gym!

5. I’m thankful that it’s FINALLY December!  I love Christmas and am extra excited this year since the Love Nugget is at a fun age.  Last year he was going through a funky, extremely serious stage so Christmas wasn’t all that exciting for him.  This year he is already getting excited over Santa, reindeer, and all the toys he keeps seeing me search for online.  Haha!

That’s it for today!  Sorry for the boring, no photo, post.  We’ve got a busy day ahead of us with some early Christmas shopping then I have a hair apt. and hopefully come home to decorate our house for Christmas finally!

Yesterday I started my day off with one of my favorite breakfasts but with a new twist.  I love overnight oats.  Even though it’s getting colder, I’m still going to eat them because they are oh so good!  I usually make them pretty plain with just oats, greek yogurt, stevia, and almond milk.  Then I’ll top them with some kind of nut butter.  Well this particular batch I decided to get fancy!

Ingredients

  • 1/2 cup old fashioned oats
  • 2 tbsp non-fat greek yogurt
  • 1/2 scoop chocolate protein powder
  • 1/4 cup organic raspberries
  • 2 tbsp unsweetened shredded coconut
  • 1/4 cup unsweetened vanilla almond milk or milk of choice

Instructions

  1. Mix all ingredients together in a bowl. The mixture will be thin but will thicken up as it sits overnight. If it is not thin enough, add a little more milk. Feel free to add more oats too! Cover the bowl and refrigerate overnight or for at least 4 hours. In the morning, stir and enjoy!

After breakfast we headed off to the gym for boot camp.  The Love Nugget still does not like being dropped off at the daycare.  He starts fussing when I tell him were we are going and then when we pull into the parking lot and is clinging to me as soon as we get out of the car.  However, once I’m gone, he’s running around playing and having a ball!

I’ve been wanting to take him to the library for their Mother Goose on the Loose for quite sometime now so as soon as we left the gym we headed over there.  It was super cute and the Love Nugget wasn’t quite sure what to make of the funny lady that was singing, dancing and clapping around the room.  I think he liked it though 🙂

On the way home, I snacked on a Strawberry Cheesecake Quest Bar.  I love this flavor but think I’ll switch it up next time and get the Cinnamon Roll.  Another favorite!

 

Lunch was an idea I borrowed from my friend Melissa at Fit ‘N’ Well Mommy.  She always posts pictures of her egg white in a mug over spinach for lunch so I thought I’d have something similar.

 

Two egg whites mixed with chopped spinach then microwaved in a bowl for 1 min 30 seconds and topped with goat cheese and smashed avocado.  It was delish!  I also enjoyed a Satsuma Mandarin on the side.  Love these things!

For dinner I had planned to have butternut squash ravioli with a goat cheese pumpkin sauce but we decided to go get a Christmas tree and go out to eat instead.  We were going to go cut a tree down this weekend but a BIG storm is coming in tomorrow and sticking around through the weekend so we figured tramping through the mud with a toddler wouldn’t be too much fun.  So, a Christmas tree lot it was for us this year!  Which was okay since I’m super picky about my trees and we usually spend a lot of time searching for the “perfect” tree.  When they are already cut for you, it makes choosing a little easier 🙂

After we picked out a tree, we went to sushi for dinner.  Most of  you know that we don’t eat out all that often.  For one, because I’m a pretty picky eater and usually leave unsatisfied and two because I like to know where my food came from and how it is being prepared.  However, we are both always happy and full when we leave our favorite sushi restaurant Mikuni.  It’s so good!  Tonight we started with two Sapporos and some edemame followed by cucumber salad and pepperfin.

Then we each ordered a roll even though I knew it would be too much food for me to eat!  I ordered the Annie Roll without panko shrimp and the hubby ordered a Michi Roll.  Both with soy wraps just because they are easier to eat and we prefer the taste.

After dinner we walked down to the fountain so the Love Nugget could watch the water.  He loves this thing, especially at night.

 

We also made a stop in the cute little candy shop to see if they had the lemon cream almonds.  No luck but they did have a few other yummy treats.  This mint chocolate Christmas Tree pretzel was pretty good!

 

We also grabbed a few peppermint caramels, chocolate covered almonds, and chocolate covered cherries.  I tried one of each!

I ended my evening with a hot cup of peppermint tea.  Ahh… I love winter time tea.

Advent Calendars

Hi there!

Hope you all had a Marvelous Monday!

Yesterday was an off day for us.  I think I was just tired from a long weekend of traveling, visiting family, and eating.  Plus, the Love Nugget didn’t sleep well again!  Ugh!  Anyways, I had planned to get up at 6:00 to work out but evidentially someone else did too because he woke up just a few minutes before my alarm.  And… insisted on me holding him.  Then didn’t want to go back to sleep so, we were up, not working out 🙁  I figured I would go to the gym later in the day but decided to go to Costco and Whole Foods to stock up on groceries which took longer than I had anticipated.  The Love Nugget did take a long nap and I should have hopped on the elliptical but I was busy cleaning, doing laundry, and making a new protein ball recipe for my Fitmixer post on Wednesday.  Luckily, the weather has been gorgeous the past few days so after the Love Nugget woke up, we headed out for a run and some play time at the park.

It was so nice to be out and about but we didn’t plan it too well as far as time goes.  School just got out and the playground became overwhelmed with big kids running all over the climbing structure.  We got in some good play time though 🙂

When I was little, every year we got an advent calendar that had pictures or chocolates in each little window.  We loved waking up every morning anticipating what was awaiting us on our calendar.  I love the idea of the Elf on the Shelf but I think the Love Nugget is still too young to really understand him so we are going to wait until next year.  So, instead I really want to find a fun advent calendar for him.  I’ve seen some really nice wooden boxes where you can put things in for each day.

I  have no doubt the Love Nugget would just adore this but I don’t really adore the $90 price tag that it comes with!  No thanks!

So I’m still on the hunt and need to find something soon since December 1st is this weekend!

Along with the advent calendar, we had some other traditions we always looked forward to.  Of coarse the decorating of the tree, putting out cookies and milk for Santa, and opening one gift each on Christmas Eve.  As the Love Nugget gets older, I hope we start our own traditions that he will be able to look back on some day and enjoy the memories 🙂

Hi there! Sorry I’ve been MIA for a few days. Busy family week/weekend! We got home yesterday afternoon from 5 days of being gone. It’s so nice to come but unfortunatly we came home to an infestation of ants! Ugh! They had made their way to the White Coyote’s food dish 🙁 So annoying! I hopped on Pinterest and found a natural remedy to kill ants and they are gone! Thanks Pinterest!

Since it’s Monday, it’s time yet again for Marvelous in My Monday with Katie at Healthy Diva Eats. I’m sure many of us will be sharing our Marvelous Thanksgiving recaps for this fun link up!

Where to begin… As you know Wednesday we spent the day at my grandfather’s house (the grandpa who just lost his wife, my grandmother). It was nice to be able to see him and spend some time with him. He’s been having a really hard time since her passing and we have been trying to be as supportive and helpful to him as possible. It always melts my heart to see the Love Nugget crawl into his lap to read stories together.

The best part about this past week was getting to see the Love Nugget with his Great Grandparents.  With the passing of my grandmother recently, it’s reminded us that as we’re getting older, so are they and as much as we hate to say it, their time in this world is fading.  With that said, we’ve been soaking up every minute we can spend with them 🙂

The next day we drove up to my hubby’s home town to spend the day at his grandparent’s house. He has a large family and everyone gets together on the holidays for a big, delicious dinner. This particular Thanksgiving was extra special because my sister-in-law and cousin-in-law took on the task of cooking Thanksgiving dinner!

They made so much yummy food which was joined by a few other side dishes brought by family members.

The Love Nugget couldn’t wait to dig in and as we finished our prayer and cheered on the chefs, he decided to dip in for a little sample.

After dinner we drove another hour up to my mom’s house for the rest of the weekend. My other Grandfather is selling his house so we spent the majority of the weekend cleaning, packing and having an estate sale.  Friday morning was spent pricing and packing for the garage sale  However after that, we came back to my mom’s and enjoyed some more yummy food and fun times!

In case you didn’t know, I grew up on a hunting club and my two brothers are huge hunters. With a hunting family, there were always guns around and on holidays we would often go out on the ranch and shoot clay pigeons, logs, cans, etc. I know, talk about country living! Anyways, the hubby also grew up around guns and has recently become more interested in owning his own. So he’s purchased a few and even built his own gun over the past few months! So talented my hubby is! So he was itching to not only get out and shoot it, but to have me do so as well.

Now, even though I grew up around guns, they scare the crap out of me. But… I joined in with the boys and auntie Gigi to shoot off a few rounds.

Haha! I have to admit I look pretty funny in my skirt and boots holding a gun!

After dinner, a dear friend from high school who was up visiting her parents came over for some wine and catching up. My brother and hubby had collected some scraps from my grandpa’s house so they decided to build a bonfire.  Yes, I so grew up a country girl! Shooting guns, then standing around a bonfire!  Country living at it’s finest!

Then we headed out on the town to join up with another high school friend.

It was fun to get out and catch up but man did we feel old! We don’t get out all that often and the particular bar we went to was filled with a very young looking crowd. It was still fun though!

We didn’t stay out too long since we are so old but were still in bed much later than our normal bedtime. Unfortunately the Love Nugget didn’t realize this and woke up at 4:00 fussing and wanting to be in bed with us. Wiggling, grunting, crying until 5:30. Then we got up before 7:00 for the garage sale! Ugh! Exhausting! Thank god for coffee!

After a long day of helping out at my grandpa’s garage sale, the hubby and I went out to grab a quick bite while grammie watched the Love Nugget.  It was nice to have a little mini date night after a long day.  We were exhausted though and went right to bed after dinner!  Luckily the Love Nugget slept better but last night was another night with not much sleep.  We aren’t too sure what’s going on with him lately but hopefully he gets back on track!

Today the Love Nugget and I are going to head to the gym, then Costco and grocery shopping.  Fun!  I’m hoping to have some time to get online and do a little shopping for Cyber Monday!  I’ve already seen a few good deals but finding the time is a problem.

Fitness Friday Thanksgiving addition!

It’s Friday!

Hope you all had a wonderful Thanksgiving and enjoyed spending time with your loved ones!  If you’re out braving the crowds for Black Friday, good luck!  I have no desire to do so this year but have in the past.  It seems to have gotten so crazy the past few years with stores opening earlier and people willing to do almost anything just to get a good deal.  Don’t get me wrong, I love a good deal but would much rather get up early and hop online to see if I can score some discounts rather than deal with traffic, angry people, and long lines.

On another note, it is fitness Friday!  Perfect that it is also the day after Thanksgiving when we have all probably indulged in a few too many calories.  Which is okay!  Now we just need to get back on track with healthy eating and exercise!

It’s Thanksgiving Day!  I hope you all are spending time with the ones you love.  We are on our way to my husband’s grandparents for a day with family 🙂

There are many things that I’m thankful for and as much as I’d like to list them all, I’ll keep this short.

I’ve said it before but… I’m so thankful for my husband.  I don’t mean to be one of those annoying girls that rants and raves about how great their signifigant other is and how awesome their relationship is but… I’m gonna!  I feel so blessed to be married to this wonderful man who is the most amazing husband and father a girl could ask for.  The amount of love and support that he gives me is beyond words.  He puts so much effort into making sure we are happy and taken care and I can’t thank him enough.  To top it off, he blessed me with this little guy who has sort of become the best thing in our lives 🙂 I coudn’t imagine going through this life with anyone else and I am so grateful to have him as my best friend and father of my child.  Thank you hubby!  You are the best!

Happy Wednesday!

Hope you are all having wonderful week!  Yesterday was such a busy day for us!  We spent the day cooking, prepping food, cleaning and packing for our Thanksgiving weekend.  Luckily my little Love Nugget was in a much better mood.  He even played at the gym daycare while I took boot camp!  He still cried when I left but was fine when I went back to check a little while later.  Made my workout so much more pleasant knowing he was happy 🙂  He also took a very long nap which made it possible for me to get a ton of stuff done.

Since it was such a busy day, I wasn’t all that great with my eats, but I did manage to snap some photos 🙂  I’ll be linking up again with Jenn over at Pea’s and Crayons.

She always has the most amazing eats and makes some really yummy looking sushi.  I wish I could figure out how to make my own sushi like she does!

Breakfast was a recipe I’m sharing over at Fitmixer.com today.  Pumpkin Protein Pancakes topped with Nut Butter Yogurt Spread.

So good and so filling!

After the gym, I was so busy making lasagna (for dinner with my grandpa tomorrow), oat drops for the Nugget, no-bake Pumpkin Granola Bars for the Nugget, coconut oil sweet potatoes for the Nugget, and chopping up three butternut squash, that I didn’t snap any pictures of my snacks.  I’m guilty of snacking while cooking which isn’t really a good thing.  Today I snacked on some trail mix (from my foodie pen pal), chocolate chip banana bread, and baked sweet potatoes.  Yeah, way too much snacking!  Needless to say I wasn’t all that hungry for lunch.  So when the Love Nugget woke up around 2:00 I made him lunch and made myself a Pumpkin Pie Green Smoothie.

A little while later, I snacked on a Satsuma Mandarin and enjoyed a cup of my favorite winter time tea.

I went to drop my tea bag in my mug and realized the box was empty!  Luckily I had stocked up last year since it’s a seasonal item.

Dinner tonight was crockpot chicken tacos which I forgot to get a picture of.  So I’ll share a picture of last nights dinner which was a really yummy tempeh lettuce wrap.

It was really good but I might have added a little too much chili sauce, spicy!

Today we are headed to my Grandpa’s to spend the afternoon with him.  We’re also planning to stop at the outlet’s along the way and hopefully get a little Christmas shopping done!  I’m not a big Black Friday shopper although I have gone in the past.  Maybe we’ll catch a few pre-Black Friday deals 🙂

7 pounds!

Good morning!

Did you know that the average person gains 7 pounds over the holiday season?  Holy cow!  I mean, seven pounds is a lot!  The average newborn baby weighs about 7 pounds so if you happen to be one of those “average” people, you gain an infant!  The worst part is that while it might only take a month (about the length of the holiday season) to gain the weight, it will take much longer to take it back off.  So…. let’s not be a statistic this year people!

Here’s a few tips to make sure we stay on track over Thanksgiving.

1.  Try to get in some form of exercise the daily.  I know, I know, we’re busy right?  I’m right there with you.  House to clean, laundry to do, pies to bake, ect. ect. ect….  I’m not saying get out there everyday and run 5 miles.  I’m saying get in some form of physical activity every day.  Go for a walk, ride a bike, have a dance party with your family 🙂  Anything that will get you moving and will burn a few extra calories.

2.  Drink lots of water.  Not only is it going to keep you hydrated, but it will also keep help you feel full and avoid over eating.  To spruce up your water a little, add some fresh fruit, lemons, or switch to sparkling water and add in a splash of unsweetened cranberry juice and fresh orange wedges for a refreshing holiday beverage.

3.  Along with drinking lots of water, avoid too much alcohol.  Not only do they pack on calories (a glass of eggnog has 343 calories in 1 cup!), but they cause you to retain water and puff up.  I don’t know about you but I can’t stand the puffy feeling after a night of indulging in too many cocktails.  However, I do like to enjoy a drink here and there.  So in order to avoid all the extra calories and water retention, I’ll be sticking to red wine (90 calories per glass) or this yummy Pomegranate Champagne Punch from Eating Well.

Pomegranate Champagne Punch Recipe

Ingredients

  • 2 cups champagne
  • 1 cup pomegranate juice
  • 1 cup seltzer
  • 1/2 cup citrus vodka
  • Lemon twists, for garnish

Preparation

  1. Combine champagne, pomegranate juice, seltzer and vodka in a large bowl or pitcher. Serve over ice with a twist of lemon.

4. Start the day off with a healthy breakfast.  I am guilty of skipping this important meal a few times during the holiday season.  First it’s easy to do when your busy and don’t have time.  Second, when your planning to indulge in appetizers and a big dinner, skipping breakfast seems like a good way to save some extra calories.  However, by doing this you are actually setting yourself up to eat more food and to make unhealthier choices.  If your busy, start your day with a smoothie that you can drink as you get things ready.  My pumpkin pie green smoothie is both yummy and super filling.

Ingredients

  • 1 scoop vanilla protein powder
  • 1/2 frozen banana
  • 1 cup unsweetened vanilla almond milk (any milk will do)
  • 1/4 cup pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1 large handful organic spinach

Instructions

  1. Place all ingredients in a blender and mix until smooth and creamy. Enjoy!

5. Take tastes of desserts rather than entire servings.  My husband gets so mad at me sometimes because I’m infamous for baking cookies, eating just one, then leaving the rest for him.  I’ve gotten very good at doing something similar with holiday desserts.  I love desserts and want to try all the wonderful baked goodies that are on our Thanksgiving spread.  So rather than serving myself up a helping of each, I take small, sample size servings or just a few bites from my hubby’s plate.  This way I’m not over doing it on the sweets but still getting to enjoy the delicious sweet treats 🙂

So there you have it.  5 tips on ways to keep off those holiday pounds!  They seem pretty easy compared to the hard work it would take to get the weight gain back off!

Happy Monday and welcome to my new blog!  I’m still figuring out some kinks and how to add buttons etc. so stick with me through this process.

First off, I’m joining in on the Marvelous Monday fun with Katie at Healthy Diva Eats.  Thanks again Katie for hosting a fun link up party as always!

This new blog design is of coarse a pretty Marvelous happening for me!  When I began blogging I had no idea it would take off to the extent it has.  I’m loving every minute of it and realized recently if I wanted to continue, I needed to upgrade and get a make over.  So, thank you, thank you to Jenny at Peanut Butter and Jenny designs.  She did an amazing job designing my new blog and I love it!

We had a pretty low-key, but marvelous weekend at home.  Friday the hubby worked late so this is pretty much how I spent my evening,

Saturday despite the rain, we decided to go to the local Mandarin festival since we had free tickets.  Unfortunately, it was mainly outdoors so the rain put a huge damper on things.  We weren’t there too long but did grab a bag of fresh, locally grown, Satsuma Mandarins!  My favorite!

We had a birthday dinner at a friend’s house that evening that was really fun!  I kept trying to snap photos of the kids playing but no such luck.  They just move to fast for the iPhone camera!

Sunday morning, with the hubby’s encouragement, I ventured out SOLO for a day of shopping.  I seriously can’t remember the last time I went shopping by myself!  I’m so used to having the Love Nugget that I walked right past the escalator making my way for the elevator since I usually have the stroller.  Ha!

It was fun to be able to take my time browsing shops, trying on clothes and wondering the mall.  Another marvelous happening on Sunday was meeting a friend for lunch.

She too got to have some time without her son so we were both enjoying the day 🙂  Not that I don’t love spending every day with the Love Nugget but it had been a long week and I needed a day for myself.  I think we all do even without kids!

Marvelous was also that this little guy has been in a much better mood.

Also marvelous is baking vegan banana bread so the Love Nugget can enjoy licking the spatula.  He thought it was the best thing ever!

This week we are crazy busy so don’t be surprised if I’m a little MIA.  Grocery shopping, packing, and baking today and tomorrow then Wednesday we are headed to spend the day at my Grandpa’s, Thursday to my in-laws and Friday – Sunday to my mom’s house.  Our holiday’s are always a little out of control as far as traveling.  Too much family to try to see in such a short amount of time.  Fun though!
