You guys, I’ve been SO hungry lately! I remember in my first trimester at one of my doctor appointments when I was throwing up everyday and complaining about how sick I felt he said something I almost didn’t believe. He said, “You just wait, in a few weeks you’ll be starving all the time and wanting to eat everything in sight.” I laughed.
Oh he was right! I’ve been so hungry lately especially when I wake up in the mornings. I tend to eat a little something first thing after I wake up like one of these snack bites. Then by the time The Love Nugget wakes up I’m ready for something more substantial.
Something that is going to keep me full for more than an hour or two because let’s face it, I just don’t have time to stop and eat every hour. Although sometimes I definitely do! The other problem with making sure I get a good, filling breakfast is that I often just don’t have time in the mornings. Between teaching 3 days a week at 6:00am, to get The Love Nugget ready for school, to trying to get some work done, to getting things ready for the day (including myself), I just run out of time. So the past few weeks I’ve been making a big batch of this deliciously filling oatmeal that the whole family enjoys!
The added bonus is that all I have to do is measure a few ingredients, dump them into the crock pot, then go to sleep! I wake up in the morning to the house smelling like apple pie and a delicious breakfast ready to go. Oh and it’s healthy!
- 1 cup steel cut oats
- 2 peeled and chopped apples
- 1 cup unsweetened almond milk
- 1 cup water
- 2 tsp. cinnamon
- Place all ingredients into a crockpot and stir.
- Cook on low for 6 - 7 hours
- Stir in the morning and enjoy!
- *depending on how your crockpot cooks, it might take less time or more time so adjust as needed.
While I think it’s sweet enough and enjoy mine with just a little nut butter, The Hubby and Love Nugget like to have a little maple syrup and pecans over theirs. Anyway you serve it, hope you enjoy it!
