Man I’ve had a busy week! Between returning from Blend and getting ready for The Love Nugget’s birthday party on Saturday my week has been crazy! All good though and looking forward to celebrating our little guy tomorrow! Not really little anymore though.
It’s crazy to think just four years ago I was anxiously waiting for his arrival. Anyway, I’ll save the mushy stuff for tomorrow’s birthday post. That is if I can get myself together enough to get that done. Can there be more time in the day?
This week became a little more crazy because I jumped on an opportunity to do a trial instructor run at a new gym called Afterburn.
I went and tried it out last week via my partnership with Classpass (more to come on this later) and absolutely loved it. Think Orange Theory but not as crazy and more targeted to specific body parts.
After chatting with the owner, Sam, I learned he was looking for new instructors and thought I’d be a great fit! So he invited me to come in and teach a class designed by me and I of course said yes! This is the class I taught yesterday and it was awesome!
I actually ran through the class at my gym before hand and it was a good one. I couldn’t wait to teach it and was so pleased that everyone really seemed to enjoy it. Even the owner joined in and said he LOVED it! So… I’m going to be joining the team at Afterburn teaching a few days a week and am so excited. Just from the few classes I’ve taken I can tell it’s a great fit for me and such an awesome community of people. If you’re in this area come check it out! After teaching yesterday morning at 6:00 at The Studio then at 8:30 at Afterburn, I decided to use the time I had free before picking up The Love Nugget and go for a quick run outdoors. It’s not very often I get to do this anymore and it was absolutely marvelous! The weather was perfect and I was plugged into my newest obsession, Undisclosed which is a continuation of Serial. I only ended up running for about 35 minutes or so but definitely felt it after since, like I said, it’s been awhile since I’ve run outdoors. So later in the afternoon I whipped up a big helping of this protein ice cream to replenish my carbs and proteins.
Okay so maybe I shouldn’t call it ice cream since it’s made with bananas. And you don’t need an ice cream maker to create it either. Just a few simple ingredients, a blender or food processor and a freezer!
- 1 large frozen banana
- 1 scoop vanilla protein powder (I used About Time)
- 1/2 cup frozen blueberries
- 1/4 cup whole fat coconut milk
- 2 tbsp. unsweetened shredded coconut for topping (optional)
- Place bananas, blueberries and protein powder in a high speed blender or food processor.
- Blend on high or pulse on high until finely chopped.
- Add in coconut milk, continue blending until thick and creamy.
- Scoop into serving dishes and top with shredded coconut.
- *note, if the mixture becomes to soft, you can place it in a tupperware container and freeze for 30 minutes until hardened. Then scoop into bowls and enjoy!
It was delicious and Love Nugget approved as well 🙂
Speaking of The Love Nugget. His actual birthday is on Saturday but we have family and friends here from tomorrow through Sunday so we took him out to dinner to celebrate last night.
We went and did a few of his favorite things. Train rides at The Fountains followed by some play time at the playground, dinner at Mikuni’s sushi so he could spin the wheel. Of course we finished the evening with gelato! He’s sporting his cool shades he won at Mikuni’s 🙂 Such a big boy!
Today we have lots to do before a birthday party this afternoon then a friend coming to visit tonight. AND lots of last-minute things to do for his big birthday bash tomorrow!
