Hope you all had a great start to your week. We’ve had a busy and rainy week so far. Which is great since we are in dire need of rain. Though I’m sure the small amount we got over the past few days is nowhere near what we really need. We’ll take it though!
Today we have another busy day between teaching at The Studio (hopefully my class fills back up after everyone was gone over Spring Break!), running errands, then an acupuncture appointment for me in the afternoon. I just started going a few weeks ago and am really enjoying it so far. My main goal is obviously fertility but it just so happens that to treat the fertility region you also treat the lower back, digestive system, and liver all of which I could use some cleansing and opening up with. Like I said I just started a few weeks ago so haven’t noticed any major differences but I will say those 40 minutes that I lay there in peace (no phone, no computer, no Love Nugget), are quite relaxing. I’ve been practicing my meditation while there and feel like I’m making some good progress.
Anyway, back on track here…. Today is Wednesday which means it’s time for another WIAW post! This one’s from yesterdays eats and includes a yummy recipe for you all. Enjoy then go check out some more WIAW posts over on Jen’s page.
My day began bright and early at 4:45 again. I was asked to sub the 6:00am class at The Studio so I woke up, pounded my water, apple cider vinegar and lemon, then made myself a Bulletproof coffee.
This one just had 1 tsp. MCT oil, a pinch of cinnamon, turmeric and sea salt.
I ate one of my seed cycling bites as I drove to The Studio around 5:30.
After class I rushed back home so that The Hubby could leave for work. I had an appointment to go sit in an infared Sauna and you’re not supposed to eat much before hand. So I blended up a half caff coffee with Natural Force Protein Powder.
It was so good and very filling!
While I’ve sat in many sauna’s before, I’ve never experienced an infrared sauna. Supposedly they are amazing for detoxification, cell health, improved circulation, relaxation, anti-aging and many other benefits. As I mentioned a month or so ago, I recently learned I have the MTHFR gene mutation. With this mutation, my body struggles to detoxify completely. So sitting in infrared sauna’s is especially beneficial to people with this specific gene mutation. It wasn’t nearly as hot as a regular sauna but I did find it to be somewhat relaxing and will definitely go back for further treatments!
Following that appointment I scarfed down an epic bar on the way back to The Love Nugget’s school to volunteer for his Easter party.
I know, I know, Easter passed but they were on Spring Break last week so they celebrated today. It’s always fun to see him in the classroom setting and I feel so lucky that I have the opportunity to help out on special days like these.
Once the party and school was over we headed to Target to meet a local woman who was selling pasture raised eggs for $4.00 a dozen! Seriously love my little town!
Guess his party wore him out!
Like I said, it was cold and rainy yesterday and luckily I had cooked a big batch of chicken bone broth the day before. So I threw together some soup with leftovers for a comforting lunch 🙂
I also had a Livin’ Spoonful cracker with avocado, then finished my meal with two strawberries and coconut butter.
Which someone else was begging for! He got his own plate full too 🙂
Laundry, house cleaning, book reading, card playing
and a little recipe testing took place yesterday afternoon.
Recipe testing included this yummy, protein packed meal or snack that we just loved.
I’m trying to be more on top of my protein intake lately. Not only mine but also making sure The Hubby and Love Nugget are getting enough protein as well. The Hubby works out at Crossfit a few days a week and is infamous for not fueling or refueling properly for his workouts. So I try to keep foods like these Taco Burger Bites on hand for pre-workout snacks, lunches, or afternoon protein snacks.
- 1 lb ground beef
- 1 tbsp cumin
- 1 tsp. chili powder
- 1 tsp. sea salt
- 1 tsp. ground pepper
- 1/4 cup salsa (no sugars)
- 1/4 cup chopped cilantro
- 2 tbsp. chopped olives
- Juice from 1 lime
- Pre-heat oven to 350 degrees and line a baking sheet with foil.
- Place a wire rack over the foil lined baking sheet.
- In a medium bowl, mix together all ingredients until well combined.
- Shape into golf ball or smaller size balls then flatten into disks.
- Place on wire rack then bake for 20-25 minutes.
- Refrigerate or freeze for quick and yummy protein packed meals!
I had two of these with some dijon mustard before heading to the gym later in the afternoon. Yum!
Once home from the gym I pounded a glass of water with a teaspoon of About Time L-Glutamine for muscle recovery.
A little while later, The Hubby and I snacked on some plantains and salsa while we whipped up fajitas for dinner.
We’ve been having fun with build your own meals lately like build your own salad bar, build your own pizza and last nights build your own fajitas!
Grass-fed beef, Organic Chicken, Bell peppers, onions, Stupid Easy Paleo’s Paleo Tortillas and a mango avocado salsa I whipped up. So good!
After dinner I sipped on a mug of chamomile tea with a splash of coconut milk. So calming and a great way to end the day.
