What WE ate Wednesday

Good morning!

We’ve had quite the busy week so far and it’s only going to get busier!  Tis’ the season!

I mentioned this past weekend that I’ve been in a food rut and had high hopes of getting out of it this week but… it hasn’t been going all that great.  Breakfasts and lunches have been fine but dinner has been a struggle still.  Thinking the holidays are partly to blame since we are just so busy but still… I need to get back on track!

Regardless of not doing that well with cooking full meals,  we have still been eating.  So I’m joining Jen to share our day of eats from yesterday.

To start off our day, I made a new Almond Flour Pancake recipe from Andrea’s new e-cookbook.


I’ve been following her blog for a while and am so envious of her homesteading skills!  She’s also talented in the kitchen and recently released a Paleo e-book titled, The Pencils and Pancakes Real Food Cookbook. 

A great gift for any paleo fan!

Back to those pancakes, someone loved them!


Even though he doesn’t look too thrilled in the picture, he gobbled them up!

They were pretty tasty as I had a few myself 🙂

Snack for me while I was out running errands was two cuties and half a Pumpkin Pie LARABAR.  Still loving those things!


We were a little rushed for lunch since I had an apt. so I whipped up some tuna salad with Dijon, avocado, sun-dried tomatoes, lemon juice, salt and pepper and rolled it up with romaine into nori wraps.


The Love Nugget ate sushi rolls and tuna salad on crackers.  He was hungry!


He had already eaten two crackers with tuna and a few sushi rolls.

In between running errands and my apt. I stopped to get a tea for me and a smoothie for The Love Nugget at a new to us place downtown.


It’s an organic juice and smoothie cafe called Sun and Soil Juice company.  I got a hot tea and The Love Nugget got the Cocotini smoothie.


I managed to sneak in a few sips before he chugged it all.  He LOVED it!  Side note, when I snapped a pic of myself after getting into the car he said, “Mom let’s take a selfie.”  Oh no, it’s started!

A few hours later on our way home we munched on some carrot sticks.  I was pretty hungry though and they weren’t really doing the trick.  Luckily by the time we got home it was just about dinner time!


The Hubby was gone to a basketball game so I whipped up The Love Nugget and I some chicken, broccoli and sweet potatoes.  I had cooked a whole chicken earlier in the crock pot for broth so just cut some up and sautéed it with pre-steamed broccoli, coconut oil, salt and pepper.  So good!

The Love Nugget wasn’t as thrilled as I was for dinner tonight.


He wanted grilled cheese but you get what you get.  He ended up liking it and ate most his dinner.

I finished the evening with a cup of hot tea and a few bites of this lemon cheesecake I picked up from that juice cafe earlier.


Paleo friendly, and so good!

Today I’m hoping to finish my Christmas shopping in between classes at The Studio.  Just a few more gifts to get!

  1. Those sushi rolls look so good! I haven’t had tuna in a while, but have a major craving now! That last photo of your son is so cute 🙂

    To answer a question- to get out of a food rut, it really depends on how bad it is. Usually, I go to our big market, which always helps to some extent. Otherwise, pinterest or foodgawker. This last time, I watched some masterchef reruns and bought a new notebook for writing recipes 🙂

      New cookbooks always help! My mother in law gets us Barnes and Nobles gift cards for Christmas so maybe a new cookbook is in order 🙂

  2. I usually search pinterest when I am in a good rut. There are so many recipes on there I always end up finding some new ones to try!

      I’ve been spending hours on Pinterest and find good stuff but then never go back and make it… I think with the New Year I’ll be able to get back into the groove of things 🙂

  3. I look through my multitude of cookbooks when I get in a food rut (Just got Med paleo cooking and every last crumb- amazing!). Glad you liked the pancakes- thanks for mentioning me!

      I was eying both those cookbooks and ordered Every Last Crumb for my Mother in law. Maybe I’ll have to get one of them for some inspiration for myself 🙂

  4. Everything looks yummy! LOL at the selfie request. My two year old does that too! We take them almost every Sunday before church, while daddy is getting dressed.

      Kids and their tech language. Funny thing is, I didn’t think I ever really said “Selfie” Kids!

    I am not done with my Christmas shopping but I know where I need to go which makes it a little easier 🙂

    I died laughing at what The Love Nugget said about taking a selfie! Haha! I love it.

      I did a double take when he asked to take a selfie. Really? He normally doesn’t like taking pictures either. Silly guy!

    I’m finally all done with my shopping and wrapping everything. I just finished tonight! Now, I just need to think about what we want to serve for Christmas Eve dinner since we are hosting!
