Just 15 more shopping days left! Are you ready? I took advantage of the early mall hours yesterday and did a little shopping while The Love Nugget was at school. Too bad I didn’t get much for anyone else but myself… What is wrong with me!?! Although in my defense I desperately needed mascara, Lush shampoo and a new blouse. Okay well maybe not that last one…
I did manage to get one gift yesterday so that’s a plus! In all honesty, we don’t buy too many gifts for Christmas anymore. Now that we have kids, most my family just buys for them and then we do gift exchanges with the aunts, uncles, cousins, etc. The Hubby and I didn’t exchange gifts last year since we had just moved but are this year. Luckily I was able to get most of what he wanted online so I didn’t even have to attempt to hunt anything down. Definitely helps when you have a 3 1/2 year old!
Anyway, enough rambling about Christmas shopping let’s get on to what’s on todays agenda… Food!
Yesterday began bright and early at 5:00 am. I’ve been waking up around 4:50/5:00 every morning ever since the time change so I figure why not get up and go workout? So I drank some water and ate a few macadamia nuts as I drove to The Studio for a weight class.
Back and Bi’s with a little shoulders and core added in there. It’s always great to get it done first thing in the morning 🙂
I got home and whipped up a bulletproof coffee using my latest addiction,
Pure Indian Foods Coffee++ is a mixture of Pure Indian Foods Ghee and MCT oil. I just mix 1/2 to 1 tbsp. into my coffee using my immersion blender and voila! Smooth, creamy, delicious bulletproof coffee.
I showered and got ready while sipping on my coffee then ate a bowl of chocolate peppermint chia pudding.
It doesn’t look very appetizing but it was pretty good! Still working on this recipe so I’ll share once it’s perfected 🙂
The Love Nugget went off to school and as I mentioned, I headed to the mall and to run a few errands. One of which included a stop at the farmers market for satsumas. Then I promptly dug into the bag and ate one. Or two. Okay maybe three 🙂
They are so good right now!
I also munched on some Shurky Jerky I was sent to try out.
Shurky Jurky features sustainably sourced free-range beef, pork, turkey & bison. It’s flavored with fresh pineapple uses unprocessed animal muscle and has no additives no preservatives no refined sugar added.
The only downside was that the packages I was sent to try out all had braggs aminos which includes soy that I try to avoid due to some sensitivity to it. Luckily I seemed to be just fine after eating a few strips so that’s good! They do have some flavors that are made with coconut aminos or non at all.
Once I picked up The Love Nugget, we headed home for lunch.
A big salad for me with spinach, baby corn, olives, sardines, beets and apple cider vinegar. Sounds strange but it was good 🙂
After lunch I wanted a little something sweet so I munched on a few of these,
SO GOOD and SO GOOD FOR YOU!
- 1 can of whole fat coconut milk
- 3 tbsp. cocoa powder
- 1-2 tbsp. raw honey
- 5 tbsp. Great Lakes Gelatin Powder
- 1 tsp. peppermint extract
- Heat coconut milk over medium heat until warm.
- Whisk in cocoa powder, honey, and peppermint extract.
- Add a tbsp. at a time of gelatin whisking well as added.
- Continue whisking over medium heat for 1-2 minutes longer then pour into silicone molds or an 8x8 baking dish.
- Refrigerate until firm then store in the fridge until ready to eat.
I love anything with chocolate and peppermint but these are extra good because of the Grass fed Gelatin I use. So good for gut healing, digestion, clear skin, healthy nails, hair and many other things!
After The Love Nugget got up from his “nap” (yeah he didn’t sleep), we ran to target and TJ Maxx for some Christmas shopping. Luckily we live in a small town so neither were too crazy for that time of day 🙂
We made a pit stop at the park then came home and shared an apple with cinnamon and a few Peppermint Jello Jigglers. So good!
For dinner I tried out a recipe from Paleo Kitchen called Beef and Bacon
You’ll never guess what I had post dinner…. A peppermint Jello Jiggler!
Plus a cup of peppermint tea. Tis’ the season for peppermint!
