What I Wish I Ate Wednesday

Hotel living is starting to wear on me.  Still trying to stay positive and make the best of it but there are lots of things that we normally have at home that we don’t have here.  The majority of my closet, The Love Nugget’s toys, my cooking tools or an oven just to name a few.  Not having an oven I’m realizing how much more I baked than I thought I did.  Not necessarily cakes, cookies or treats but things like roasted veggies, chicken or sweet potatoes.  Oh how I miss my roasted sweet potatoes and apples!

Anyway, rather than show you the regular old boring meals which are really quite repetitive right now.  I thought I’d switch things up a bit and show you what I wished I had eaten yesterday for another edition of WIAW.

Breakfast is by far my favorite meal of the day.  In the hotel it’s been less than sub-par as I just don’t have my oven to make meals like this one,

Can’t wait to have an oven again!

I’ll be honest, I’ve been eating out for lunch more than normal.  Grabbing a salad at Whole Foods is often easier than putting something together at the hotel.  Since I haven’t really been doing any food prep making lunch seems to take longer and make a way bigger mess.  Which just isn’t fun either way.  What I’d love to be eating for lunches are things like this salad,

Definitely doable I just tend to throw what I have in the fridge in a bowl, pour EEVO and apple cider vinegar over it then call it good.  The Kitchen sink type of salad 🙂 Either that or I eat an Epic bar with half an avocado and carrot sticks.  Lazy I tell ya!

With less filling lunches I’ve noticed I snack more in the afternoons which isn’t exactly ideal.  This leaves me not as hungry for dinner so I haven’t been motivated to cook much.

What I’d like to be cooking if we were home would be meals like this Baked Salmon which is a household favorite!

Speaking of pizza,  just a homemade pizza would be awesome!

Don’t even get me started on desserts.  I’ve been missing my homemade banana “froyo” like crazy as the weather warms up!

Instead I’ve been eating coconut butter by the spoonful.  Can’t go wrong with that right!?!

My fingers are crossed for you and the fam. Wish I could send you something delicious but doubt it will travel well

  4. I’ve never had coconut butter… I’m so curious now! I am also definitely going to be trying your quiche. Oh my word! That looks so good! I wish I had had that for breakfast 🙂

    As for the oven problem, I can relate. Ours broke several months ago. We already knew we would be moving and didn’t want to replace it. It was horrible! We ended up getting a mini oven temporarily for only about thirty euro or so. While it’s still not the same, I can roast veggies and make mini pizzas 🙂 I don’t know if you’ll be at the hotel much longer, but maybe you could get a mini oven if that would work for you guys? It’s definitely not the same, but it’s nice to use every now and again.

      You would love coconut butter! It’s so good! A mini oven is a great idea! Hopefully we are home by the end of the month if not sooner 🙂

      Yes it’s definitely wearing on us all. Hopefully by the end of this month we’ll be moving back home 🙂

  7. Ah, I’m sorry you’re still stuck in that hotel! I would be frustrated too. If I didn’t have an oven I’d miss making my “hard boiled” eggs (I bake them), roasted brussel sprouts, & definitely cooking my eggs & veggies on the stovetop.
    OMG, that pizza pic… seriously drooling!!!

      Thanks Karey! I still haven’t tried baking my eggs but have been steaming them and it’s working like a charm! Except when you leave them on too long and the water boils off then burns the eggs…

  8. All of your “what I wish I ate” eats look soooo good. And I totally know what you mean about hotel living or just being out of your house and having to make due in a different environment, you totally start to miss everything you are used to!! That banana froyo and the pizza pie look insanely delicious! xo

      I surprise myself at some of the things I’m missing. I wasn’t making smoothies all that often but now that I can’t make them I’m craving them so much!

  9. Keeping my fingers crossed you’ll be able to move back into your house soon!! If only mailing you food was possible I bet the whole blogger bunch would contribute and make hotel living a little more endurable.
    Life without an oven would be impossible for me. Or at least really hard to imagine because casseroles are my go-to meals. They’re quick to prepare and the perfect comfort food.
