I’d love to share my eats with you per usual Wednesday tradition but to be honest I haven’t had the time to snap many photos of meals lately. The little present we came home to Sunday evening has turned into quite the disaster. To say the least. The disaster relief/cleanup crew is scheduled to begin demo tomorrow morning. Yes all the hard work we did just a few months ago remodeling our house will be basically wiped out and we’ll have to start again. I could wine, moan and complain about it but… what’s the point. What has happened has happened and there’s nothing we can do about it. Tomorrow’s another day 🙂
Anyway, since we’ll be a living in a construction zone I’m not sure how consistent my posts will be but I’ll be checking in as often as I can. I’m sure it will help keep me sane 🙂
Instead of sharing a full day of eats today I’m only sharing one really yummy thing we’ve all been eating lately.
Before we started eating Paleo, The Hubby and I ate a lot of peanut butter. Especially The Hubby. He LOVED peanut butter and would eat a PB & Honey at least once a day. After learning that peanuts were a legume and tend to cause inflammation along with digestion issues, we decided to cut them out. Well, I decided to cut them out after realizing how they were affecting me and sort of forced The Hubby to give it up as well. He happily obliged when I replaced his beloved peanut butter with a creamy, lightly sweetened, delicious cashew butter.
I have to admit that I joined in with his obsession for this particular butter as the addition of coconut butter gives it a slight sweetness. I also love the small hint of vanilla and sea salt which is pure perfection!
There’s just one problem… The jar disappears so quickly leaving us in a battle for who’s going to get to enjoy the last scoop!
- 3 cups raw cashews (I purchased a bag of broken pieces from Trader Joe's)
- 1/4 cup coconut butter
- 1 tbsp. coconut oil
- 1 tsp. vanilla
- 1/2 tsp. sea salt
- In a food processor or blender, puree cashews until a creamy mixture begins to form.
- You'll need to scrape down the sides several times.
- Melt the coconut butter and coconut oil then add to the cashews.
- Add in vanilla and sea salt then continue processing until creamy.
- You may need to add more coconut oil to reach that creamy texture.
