WIAW – Creamy Cashew Butter

I’d love to share my eats with you per usual Wednesday tradition but to be honest I haven’t had the time to snap many photos of meals lately.  The little present we came home to Sunday evening has turned into quite the disaster.  To say the least.  The disaster relief/cleanup crew is scheduled to begin demo tomorrow morning.  Yes all the hard work we did just a few months ago remodeling our house will be basically wiped out and we’ll have to start again.  I could wine, moan and complain about it but… what’s the point.  What has happened has happened and there’s nothing we can do about it.  Tomorrow’s another day 🙂


Anyway, since we’ll be a living in a construction zone I’m not sure how consistent my posts will be but I’ll be checking in as often as I can.  I’m sure it will help keep me sane 🙂

Instead of sharing a full day of eats today I’m only sharing one really yummy thing we’ve all been eating lately.

Before we started eating Paleo, The Hubby and I ate a lot of peanut butter.  Especially The Hubby.  He LOVED peanut butter and would eat a PB & Honey at least once a day. After learning that peanuts were a legume and tend to cause inflammation along with digestion issues, we decided to cut them out.  Well, I decided to cut them out after realizing how they were affecting me and sort of forced The Hubby to give it up as well.  He happily obliged when I replaced his beloved peanut butter with a creamy, lightly sweetened, delicious cashew butter. cashew2

I have to admit that I joined in with his obsession for this particular butter as the addition of coconut butter gives it a slight sweetness. I also love the small hint of vanilla and sea salt which is pure perfection!


There’s just one problem… The jar disappears so quickly leaving us in a battle for who’s going to get to enjoy the last scoop!

Creamy Cashew Butter

Creamy Cashew Butter


  • 3 cups raw cashews (I purchased a bag of broken pieces from Trader Joe's)
  • 1/4 cup coconut butter
  • 1 tbsp. coconut oil
  • 1 tsp. vanilla
  • 1/2 tsp. sea salt


  1. In a food processor or blender, puree cashews until a creamy mixture begins to form.
  2. You'll need to scrape down the sides several times.
  3. Melt the coconut butter and coconut oil then add to the cashews.
  4. Add in vanilla and sea salt then continue processing until creamy.
  5. You may need to add more coconut oil to reach that creamy texture.

  1. Yes to cashew butter! It was the first non-peanut butter I tried years ago and I was hooked immediately. Unfortunately it’s not exactly budget-friendly when store-bought but now that you mention it I might just need to let the Vitamix work its magic 🙂 .

      So expensive! I picked up a jar the other day and realized it was $12.99! I gently put it back on the shelf as to not risk breaking it! Crazy!

      It’s so expensive to buy but this is much more affordable especially if you buy the ends and pieces of raw cashews rather than whole.

  3. YUM! That cashew butter sounds delicious!! I’m such a peanut butter fan so I try to switch back and forth between almond butter & peanut butter because I just can’t go completely cold turkey on it. But this looks super yummy and worth fitting into the rotation. 😉

      You wouldn’t need peanut butter again if you tried this! My hubby was definitely addicted to PB but hasn’t craved it at all since I switched him to cashew butter. So good!

  5. OMG, that DOES sound amazing. I definitely am a fan of cashew butter since going Paleo… I was a former PB addict. I enjoy crunchy almond butter & Artisana’s Cashew Butter, but your version sounds really delicious – I’ll have to give it a try!
    Sorry about the house disaster! Hope the fix goes as smooth as possible.

  7. Eeek, CASHEW BUTTER! Only my all-time favorite treat. I can’t even have it around me because I’m so obsessed with it I just eat the whole jar in a matter of days… whoops. Your recipe looks delicious!!

      Haha! The jar diappeared pretty quickly over here 🙂 You could always half it so you didn’t have a full jar. Actually, I probably need to do the same!

  9. So sorry to hear about your little disaster. Things like that are just so frustrating. Cashew butter is one of my favorite of all the nut butters and you’re right, it disappears way too quickly. I’ll have to try adding coconut butter to mine… I bet that’s delish!

  11. So sorry about your house….I can’t even imagine…. I wish cashews weren’t so expensive ( and nuts in general). Actually it’s prob a good thing cause I would house that jar of cashew butter in seconds flat

      Thanks Andrea! It’s not the easiest thing to deal with right now but what can you do… I can’t even believe how expensive cashew butter is. Crazy! Trader Joe’s has a good price on raw cashews 🙂 I have to hide the jar from myself. So good!

  13. I am so, so sorry to hear about your house. I can’t imagine how stressful and disappointing that must be. I have recently discovered that I really like raw cashews so I’m sure I would love this.

      Thank you Nicole! Yes, a big disappointment but it could be worse… Yes, you would love this! Cashew butter is a little naturally sweet and super creamy! So good!

  15. You poor thing!!! The house situation sounds so depressing! I can’t believe that happened. So sorry.

    I’ve never made my own nut butter before but this recipe looks so easy and good, why am I not?? I’m guessing it’s cheaper than buying it, although cashews are pretty pricey raw too. Do you have any idea on the cost difference?

      I buy the cashew bits and pieces from Trader Joe’s I think for around $4.99? Maybe a little more or less but cheaper than the whole raw cashews. I just saw a jar of Artisana Cashew butter for $13.99 the other day so much cheaper! So easy too! The coconut butter is a little pricey but I always find it cheaper at TJ Maxx or Marshall’s 🙂

      I bet the combination of macadamias and cashews would be amazing! I never want to use my macadamias for butters or anything else because I love them so much just by the handful and they are SOOOO expensive!
