Happy Monday Friends!

Hope you all had a marvelous weekend.  Despite a rainy one, we had a pretty good weekend so I’m joining Katie and her Marvelous in My Monday link up!

MiMM MIMM #89 Weekend with Date Night, Sister Time, and More!

After a rough couple of weeks I woke up Friday finally feeling back to normal.  Which was great as we had a fun filled day ahead of us.

Starting with a pizza making lunch at Campelli’s with friends.

I think there was around 17 kids there making their own pizza pies and they all had a blast!  So cute!

Later that afternoon we met up with Gigi and The Hubby at The Nugget Market for their Friday night wine tasting.


We enjoyed a few tastes while The Love Nugget snacked and played games on the iPad.


Then my cousin and I headed next door to get a pedi while the boys ran a few errands before meeting up with them at Zocolo’s for dinner.


He loves going there and orders his own meal as soon as the waiter comes to take our drink order.  “Quesadilla, rice and beans please!”

Saturday The Hubby headed up the Mt. to go snowboarding so The Love Nugget and I went to the gym where I unexpectedly completed the Crossfit Opens workout.

The owner had said that Saturday’s class wouldn’t be the opens workout but surprise!  It was…. So while I hadn’t planned on doing it, I did it and it was tough!  But in a good way 🙂

After that we managed to grocery shop at Trader Joe’s, Costco, Sprouts and drive up to Auburn to pick up Grass-fed beef from a rancher.


I’ll share more about that beef later but needless to say we’re stocked up for awhile!

The Hubby and I planned a little at home date night Saturday night which was started with my favorite thyme dirty martini with blue cheese stuffed olives,


and goat cheese stuffed bacon wrapped dates.



Dinner was one that was a first for me.


Broccoli, roasted butternut squash and bacon wrapped filet with blue cheese and a red wine balsamic reduction sauce drizzled over the top.    The butternut squash and broccoli obviously aren’t a first for me but the filet is!  I’m trying to incorporate a little more red meat into my diet.  I honestly didn’t expect to like this but I did!  Although I’m not sure I would have enjoyed it as much if it didn’t have the bacon.  Or blue cheese.  Or the sauce.  But it’s a start!

After dinner we curled up on the couch to watch Gravity while sipping on some wine and enjoying my latest chocolate obsession.

Remember when I posted about Coconut Secret and some of their wonderful products?


Well Lena generously sent me a few more of their goodies to try out.

One special for The Hubby too since he didn’t get to try the others.  Lena is so sweet!

Anyway, this is seriously my new favorite chocolate.  Coconut and dark chocolate are my weakness and Coconut Secret has come up with the perfect combination in these Chocolate Crunch  Bars.  The ingredients are so clean and simple making them delicious and a great choice when looking for a good, healthier treat.

Sunday morning we woke up and I whipped up a yummy breakfast for us all.


This is one of those dishes that takes a little longer to bake but well worth the wait and perfect for a weekend.


It’s a great dish to make for a Sunday brunch with friends or family and also makes great left overs!

Sausage & Butternut Squash Casserole

Sausage & Butternut Squash Casserole


  • 2 cups roasted butternut squash, diced
  • 1/2 lb. ground breakfast sausage, cooked
  • 1 zucchini, shredded
  • 6 eggs
  • 1/4 cup almond milk, coconut milk or organic milk
  • 1 tsp. fresh or dried thyme
  • 1 tsp. garlic powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. pepper
  • 1 tbsp. coconut oil


  1. Pre-heat over to 400 degrees.
  2. Melt coconut oil then brush onto the bottom and sides of a 8x8 baking dish.
  3. Evenly spread butternut squash in the baking dish.
  4. Spread sausage over butternut squash then top that with the shredded zucchini.
  5. In a small bowl whisk together eggs, milk, and seasonings.
  6. Pour egg mixture evenly over the sausage, butternut squash and zucchini.
  7. Bake for 35-45 minutes or until the center is cooked through.
  8. Allow to sit for 5 minutes before serving.
  9. Enjoy!

It was perfect served alongside some blood oranges and pumpkin muffins.  Yum!

We made a run to Barnes and Nobles, Nordstrom Rack and Marshalls before coming home for lunch and naps.  Which meant The Love Nugget napped, The Hubby worked outside and I parked it on the couch to get some work done while sipping my tea 🙂

When the Love Nugget woke up we made a little trip down to Davis Dean Cellars to pick up a bottle of their Zin then home to watch the Oscars!  We spend the rest of the evening watching that between playing, reading books and cooking dinner.


Which was mahi tacos in lettuce cups with broccoli on the side.



A great finish to a marvelous weekend!

  1. Sounds like such a nice weekend!! I love the Love Nugget with his little apron. 🙂 And that steak looks amaaaazing–balsamic reduction, omggg. I’ve been thinking about getting a big box of meat like that too, but might need to get another freezer first? All we have is the one in our fridge, and it’s tiny!

  4. Those goat cheese stuffed dates wrapped with bacon look fabulous! I need to try that! We entertain fairly often, so this would be a perfect appetizer to try out.

    I live in the beautiful Pacific Northwest so we had snow, snow and more snow!

    I can’t wait to hear all about your beef. For the first time we purchased 125 lbs of grass fed beef from a nearby (small) farm where we also pick blueberries all summer. They only had about four cows and they had about 20 acres to graze on. I got it in November and so far it’s working really well. I’ve even been seasoning the ground beef to give it a sausage flavor so I don’t have to hunt down high quality sausage.

    I’ve never tried any coconut secret chocolate bar, but they do sound tasty. Where do you usually pick them up at?

  10. Your casserole looks delicious! Our weekend was marvelous, because I got to take a nap on Saturday and Sunday, thanks to my lovely husband for taking Keenan to do “boy things!” It felt good to get some much needed sleep!

  13. Ooh, you lucked out with those goodies! I might have to make this recipe on Saturday. We’re hosting friends for brunch who are gluten free and I wanted to do some type of breakfast casserole. This looks so yummy!
