MIMM – Banana Chocolate Chip Muffins

First off I just want to thank you all for the encouraging and supportive comments on Friday’s post.  Opening up like that was very hard for me to do but I have to admit that I’m so glad I did.  As much as I don’t like to hear of others going through the same struggles I am, it’s nice to know I’m not alone.  I appreciate each and every comment and word of advice and will be commenting back soon 🙂

With it being Monday and the start to my birthday week, I figured what better way to start the week than to join Katie and her marvelous MIMM party!

MiMM MIMM #85 Collages of the Weekend!

Despite having to postpone our trip to Sonoma this weekend, due to The Love Nugget being sick, we had a fairly good weekend!

Lot’s and lots of rain!  Good for us since we’ve been in a drought, not so good for wine tasting in Sonoma which made postponing our trip a little easier.  In case you’re thinking I’m a bad parent for letting my son play in the rain while sick, he was outside for maybe 5 minutes total.  I don’t think a little fresh air after being indoors for four days will kill him 🙂

A successful rainy day shopping trip with this little man.  He’s a pretty good shopper and even though he was under the weather, he happily helped me do my grocery shopping.

Marvelous –  A new Paleo sandwich for lunch with my cousin at Whole Foods.

It was just okay. I should have specified what kind of mustard to use as they just used yellow mustard.  I’m not really a fan.  Plus, it was called a wrap but was just two large pieces of romaine with chicken in between.  Needless to say it didn’t work out to well.  However,  it was good and the time spent chatting with my cousin made it even better 🙂

Marvelous – A new snack while running errands.

A few weeks ago I received three different Simple Squares in the mail.

Simple Squares are just that, Simple!  Most made with only 5 ingredients you don’t have to worry about trying to decipher what you’re eating.

Plus with unique flavors like Rosemary, Coffee and Ginger they stand out from your average snack bar.

I have to admit I was a little hesitant about the Rosemary as I’m personally not a huge fan of the herb.  However, I was pleasantly surprised at the slight hint of Rosemary combined with organic cashews, organic almonds, organic coconut and organic honey.  The reason they chose to flavor their bars with certain herbs and spices is because the functional benefits they offer our bodies.  Anti-inflammatory, anti-bacterial and blood sugar reduction are just a few.  Plus, with wholesome, natural ingredients they are Paleo friendly.  Plus for me!  Oh and of course, The Love Nugget loves them so it’s another great snack I can feel good about sharing with him 🙂

Marvelous – A super yummy dinner that was so much easier than it looks.

Roasted chicken, cauliflower butternut squash puree and roasted veggies.  Yum!  I need to replicate all three of these super easy recipes and share soon!

Chocolate Chip Banana Muffins

Chocolate Chip Banana Muffins

Ingredients

  • 2 large ripe bananas
  • 4 eggs
  • 1/4 cup coconut sugar
  • 2 tbsp. coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp. vanilla
  • 1/4 cup natural almond butter
  • 1/2 cup blanched almond flour
  • 1/2 cup cashew meal
  • 1/4 cup shredded, unsweetened coconut
  • 1/2 tsp. baking soda
  • /12 tsp. sea salt
  • 1/4 cup mini chocolate chips ( I use Enjoy Life)

Instructions

  1. Preheat oven to 350 degrees and grease a muffin tin sheet with coconut oil.
  2. In a large bowl, mash bananas.
  3. Add in the eggs, coconut sugar, coconut oil, vanilla, almond butter and applesauce and mix until well combined.
  4. In a separate bowl, mix the almond flour, cashew meal, shredded coconut, baking soda and sea salt.
  5. Add the dry ingredients to the wet and stir until well combined.
  6. Mix in the mini chocolate chips then scoop into prepared muffin tins.
  7. Bake for 20-25 minutes or until golden brown and a knife comes out clean.

Marvelous – Tea

Lots and lots of tea, daily.  I’m obsessed.  My favorites right now are Roobios and peppermint.  I think I drink 5-6 mugs a day!

  1. Oh those muffins! Wow 🙂 I’ve never baked with cashew meal. Do you make it yourself in the food processor? It is so hard to write very personal posts but I think we both have realized (through all the love and support of this community) that it is a truly special place and opening up is always a positive thing.   2. I have been following your blog for a while and this one is just crazy. First you say you cancelled a wine tasting trip due to your kid being sick and yet you post a picture of him playing in the rain puddles. Next you talk about these new healthy foods with JUST 5 ingredients yet there are 7 when you post the picture. Lastly….you post this as your Monday post and yet it is just Sunday…..get it straight.

    One last thing….since you have talked about your previous career as a teacher, maybe you should spell and grammar check your posts.

      Hello Georgia. First, thank you for reading and I’m sorry to disappoint. This post wasn’t actually supposed to be published until tomorrow as it’s not yet Monday and I haven’t completed it…. Accidentally got published. Oops! My son is on antibiotics for a minor cough. He was out in the rain for literally 5 minutes to get some fresh air since he’s been stuck indoors the past four days. The description of the bars should say, “Most with 5 ingredients.” Sorry for the confusion. Thank you for pointing that out 🙂

  3. (To the above comment >> Wow!!) Anyways… I don’t think your a horrible parent AT ALL for allowing Love Nugget to play in the rain. I remember when I was younger, my parents would let both my brother and I outside for a bit of fresh air once we got antibiotics in our system. No biggy! 🙂 The muffin recipe looks awesome. Would subbing cashew meal for almond meal work you think?

      Thanks Jessie! The doc actually told us that the fresh air would help with his cough so in a way, I was taking doctors orders 🙂 So you’re thinking using all cashew meal instead of almond flour? I think it would work okay. Cashew meal is a little new to me so I’m not positive but the consistency between the two seems pretty similar. Let me know if it works out 🙂

  5. Wow….I usually never post but had to on this one. Being in the healthcare field I know a little fresh air does WONDERS. After being in the house for days its good to get out and get some fresh air. Negativity is just a waste of energy…..Anyways, had to post and cant wait to try those muffins 🙂

    This past weekend, we had some sun and some snow, and are expecting more snow at the end of the week. SO over winter!

    Those Simple Squares look delicious and I love that they only have a few ingredients. Definitely need to keep my eye out for them!

    I can imagine, as a non-blogger, that it is difficult to discuss such personal challenges with the world, but I think that’s part of what makes a successful blog and encourages a community of followers. I absolutely love to read blogs, but if I feel they are too “surfacey” (is that a word???) I eventually stop following them. There is something comforting about knowing that the same person with the great recipes, and super cute outfits and organized house also has the same ups and downs and struggles in life that we all do.
