MIMM – Is it really January?

Happy Monday!

Hope everyone had a fabulous weekend!  We had a GREAT one!  I’m pretty sure the weather had something to do with it since we enjoyed temps in the 70’s!

Only problem is that we desperately need rain.  Actually, the State of California was declared a state of emergency because of this drought we’re having.  Authorities are actually driving around monitoring people who are wasting water!  here’s an aerial photo of what our local lake looked like before and what it looks like now,

Friday The Love Nugget and I had a lunch date,

He had such a great week of making good choices, being responsible and being an all around good kid.  So I told him we could go on a lunch date to where ever he wanted.  Of course he chose Whole Foods 🙂

With gorgeous weather we ate our lunch outside.  A salad for me and mac and cheese for my little man!  Followed by a special Dinosaur cookie for him 🙂

Friday evening The Hubby and I cooked up a yummy dinner,

Pan fried venison steaks topped with mushrooms and onions served with steamed veggies.

It was good but I’m still not sold on “steak”…

Saturday I woke up and headed to the gym.  The great thing about my Crossfit membership is that I have access to Golds Gym as well and can use the Crossfit room anytime I want.  So after a warm up 1 mile jog I had the whole Crossfit room to myself to complete this workout.

It was a good one!

I came home to enjoy a yummy breakfast,

Bacon Butternut Squash “Quiche” with plantains and coconut butter.  So good!  Then we packed some lunch and headed out for the day.

First stop, the Farmer’s Market!

Then a stroll through the town for some antique shopping.

My little hipster!  Sweater(similar) – Baby Gap, Jeans and suspenders – H&M, shoes – H&M, sunglasses – Target.

No purchases but we did see some cool stuff and some interesting…

We then headed to a nearby winery for a little bit of tasting,

followed by a picnic lunch on their patio.

We were sweating it was so warm out!

It was naptime after that so we headed home.  The Hubby and The Love Nugget had a boys evening planned watching Monster Trucks, so I took off to go do a little shopping on my own.

Sur La Table and West Elm then the grocery store.  Solo for the first time in ages!  I think I was in Sprouts for over an hour!  It was amazing being able to hear myself think for once.  I love my little man but he talks ALL. The. Time!  It makes shopping a little more complicated.

I enjoyed my evening alone on the couch watching House Hunters and catching up on blog reading.  Pretty exciting Saturday evening but also, pretty marvelous!  Shows how old I am right!?!

The boys didn’t get home until after 10:30 and The Love Nugget was so excited to tell me all about his evening.  It was really cute but we were up way too late and of course, he awoke at 6:00 which meant I was up at 6:00 🙁  Even better, he went back to sleep with The Hubby and I was wide awake…. They slept until 8:00… I did manage to get some more blogging done then breakfast made before they awoke.  After breakfast I got straight to work.  Meal prep Sunday!

I started by roasting a spaghetti squash while we ate breakfast,

As soon as we were done I boiled eggs, diced veggies, sweet potatoes and apples to roast.

While those cooked I shredded cabbage and carrots in the food processor to toss in salads or saute with coconut oil.

Then I washed and chopped veggies to have for snacks,

and finally made The Hubby protein bars using this new Plant Fusion protein powder I was sent to sample,

I haven’t tried it since I’m doing a month of whole30ish eating but The Hubby has and really likes it!  Which is big for him since he isn’t typically a fan of plant based protein powders.

Plant Fusion uses a combination of four exceptional plant proteins (from pea, artichoke, sprouted quinoa, and sprouted amaranth proteins) to create a highly digestible, free of food irritants protein powder.  It has 120 calories per scoop and 3,350mg of L-Glutamine to support muscle strength, energy, and help with recover.  It is completely gluten-free, soy-free, (free of all allergens), vegan (free of all animal products) , non-GMO, and hypoallergenic.  Pretty good for a protein powder!

I threw together this recipe for him and when he tried it his exact words were, “oh my god these are amazing!”  I almost thought he was kidding he was so enthusiast!

Chocolate Raspberry Protein Bars

Chocolate Raspberry Protein Bars

Ingredients

  • 1 cup raw almonds
  • 1/2 cup raw cashews
  • 1/2 cup raw pecans
  • 1 packet of Chocolate Raspberry Plant Fusion Protein Powder (could use any flavor desired)
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1 tsp. vanilla
  • 2 tbsp. coconut oil, melted
  • 1/4 cup mini chocolate chips (I use Enjoy Life)

Instructions

  1. In a food processor, pulse nuts until finely chopped.
  2. Pour into a stand mixer or large bowl.
  3. Add in remaining ingredients and combine until a wet sticky mixture forms.
  4. Pour into a 8x8 baking dish and refrigerate for a few hours until firm.
  5. Cut into bars then store in the fridge.

I put them in the freezer then tried to cut them too soon and one broke apart.  Which was okay because the hubby put it in a bowl, poured milk in and chowed down!

Meal prep led to cleaning for a while then we decided to head downtown for lunch and to Target.

My lunch of spinach, mushrooms and artichoke hearts with poached eggs and fruit, The Hubby’s Monte Crisco French toast, The Love Nuggets huge plate of fries and grilled cheese and us making silly faces 🙂

We had planned to go to a friend’s house to watch the game but found out our little White Coyote has a torn ACL and needs to rest.  We felt bad leaving him alone in the house all afternoon so we came home and spent the afternoon with The Hubby watching football, The Love Nugget playing and me working.  Relaxing and enjoyable 🙂

      Thanks Christie! I was surpised how much my husband enjoyed the protein powder since it was plant based. He’s usually not a fan of those but he loved it!

  2. Ugh…will you just be quiet?!?! Farmer’s market…..70 degree temps….I’m over here putting off the grocery store because I have to venture into sub zero temps!

      I think this was our last weekend of warm temps. We’ve got rain in the forecast this week… no sub zero temps though! No fun!

  5. What a fun weekend! I have to say that despite the drought you’re having, I’m super jealous of your warm weather. The freezing cold is going to return this week and we’re getting 6-8 inches of snow tomorrow. Ugh!

      We are supposed to be getting rain this weekend and I have a feeling we’ll be having a very late, long winter 🙁

  6. I can’t even handle that picture of your little guy in his shades — what a cutie! That’s kind of crazy about the drought though… Our temperatures have been above average around these parts too, but definitely no where near that. Hopefully you guys get some rain soon!

      I have to admit I’m not jealous of your snow. I’ll take rain but snow I’m not good with… We are supposed to get rain this weekend which will be great for the drought but I’ll miss the springlike temps!

  13. I am all for the weather, but the drought issue sure is putting a damper on things. I love that the love nugget chose Whole Foods and is a mini hipster to boot, you sure got lucky with him. 🙂 Wine and picnics are one of the best weekend activities, in my opinion. I tried an amazing wine yesterday from a small winery in Southern California, and am no on the hunt to find it around here. Now if only I could remember the name of it…

  14. Such a busy weekend, but sounds like it was lots of fun! Those protein bars look amazing. I never make my own bars because it seems daunting to me, but I really really want to!

  16. I don’t go to the monster truck shows here either. A chance to get the house to myself? Yes please! Oh and last summer, we met some family at Folsom lake for a birthday party. Yes, water is much needed! In my parts too.
