Woohoo! It’s Monday! You’re probably thinking, why in the world are you excited for Monday?!? Tomorrow is the last day of my Whole30! As much as I’ve enjoyed it, I’m really looking forward to enjoying a glass of wine. Saturday night the hubby cracked open one of my favorites and I’d be lying if I said I wasn’t tempted to take a sip or pour myself a glass. Earlier in the month I wasn’t craving it as much but this weekend I was missing it so I’m definitely ready to enjoy a delicious glass of Zin come Wednesday 🙂
Other than missing my wine this weekend, we had a pretty marvelous one! October is quickly becoming my favorite fall month with the Love Nugget as there has been so many fun festivals and local events happening that we’ve been enjoying.
Friday we started off our weekend with a fun Harvest Festival put on by a friends church.
If you follow me on Instagram you probably already saw that I went with the bangs! They are growing on me. Sort of a big change but I needed something different 🙂
Anyway, the Love Nugget had a blast bouncing in the bounce houses with his friends and sliding down the slides.
They also had Trunk-or-Treat (which was new to me) carnival games, and pony rides. We hung out for awhile enjoying the fun then left to go find dinner. I will say, dining out on the Whole30 is somewhat difficult. I’ll touch more on this when I do my recap but I basically just didn’t do much eating out. Which worked out well since we were trying to cut back on that this month. Anyways, we decided on The Cheesecake Factory since I had heard they had a new Gluten-free menu. The Love Nugget really wanted sushi and was a little disappointed when his pasta with veggies arrived.
However, he proceeded to chow down almost this entire bowl – veggies and all – so I don’t think he minded too much. I went with a bun-less turkey burger and side of steamed veggies. Not too bad but sushi would have been better 😉
- 1 egg
- 2 tbsp. whole fat canned coconut milk
- 3 tsp. cinnamon
- 2 tbsp. applesauce (I used my homemade Apple Pear Sauce)
- 1 Apple
- 2 tsp. coconut oil
- 2 tbsp. Sunbutter or nut butter of choice
- Heat a small pan over medium heat and melt coconut oil.
- Peel, core and slice apple then toss with a tsp. of cinnamon - Feel free to use more if desired.
- Cook apple slices, flipping once, until softened then set aside.
- In a bowl, whisk together egg, coconut milk, applesauce and 1 tsp. of cinnamon.
- In a medium skillet, melt remaining 2 tsp. coconut oil.
- Pour egg mixture into pan and cook for about 2 minutes before flipping.
- Cook for a minute then spread Sunbutter onto omelet and top 1/2 with apple slices.
- Gently fold over and cook for about 1 minute more.
- Remove from the pan, top with more applesauce if desired and enjoy!
This was so good and even The Hubby loved it who is not a huge fan of eggs this way.
After breakfast we got ready and headed off to our second Harvest Festival! This time at Growing Brilliant which he was SUPER excited about. Even with all the fun stuff they had set up outside he ran right in to play with all their learning toys and have Dad read him some books.
Such a book lover! When his buddy arrived they took off to enjoy all the fun stuff they had set up.
Face painting, bounce houses, train rides, butternut squash bowling, tractors, and more. They had a blast! We ran some errands after and came home to hang out for the rest of the day. The weather has been pretty warm during the day but cooling down in the afternoon/evenings so we enjoyed a nice long stroll later on. After coming back and putting on some cozy Pj’s I definitely wanted to curl up with a glass of red wine! Three more days 🙂
Sunday was pretty mellow. It started with a marvelous breakfast from my new cookbook, Against All Grain.

Then it was back home to food prep for the week. Speaking of food prep, I’ve been getting a lot of comments and questions about my meal prep and was wondering if you would like to see a more in depth post dedicated to what I prep for the week. While food prepping I enjoyed listening to Katie from The Wellness Mama discuss a real food lifestyle for children, families, pregnancy and breast feeding without breaking the budget. Very informative and while the audio is no longer available since Real Food Con is over, you can check out her blog for tons of helpful information on raising a family on real food.
When the hubby got home he tore apart half the kitchen to work on the tile so The Love Nugget and I hung out. He got to watch Cars 2 while I blogged and worked online. It was chilly and windy out so a cozy day inside was marvelous!
We ended the day with a yummy dinner of sweet potato nachos,
I was planning to make stuffed sweet potatoes but didn’t have time to bake the potatoes. Luckily I had roasted some sliced potatoes the Saturday so I whipped up some quick nachos and they were a hit!
Perfect end to a great weekend which is why I’m joining Katie for Marvelous in my Monday!
