Cranberry White Chocolate Nut Bar

Ingredients

  • 1 cup of almonds
  • 1 cup of walnuts
  • 1/2 cup of all natural peanut butter
  • 1/3 cup of honey
  • 1/3 cup of dried cranberries
  • 1/4 cup of white chocolate chips
  • 1 tsp vanilla
  • 1/2 tsp sea salt
  • 2 tbsp hemp seeds (optional)

Instructions

  1. Place walnuts and almonds into a food processor and pulse until chopped but not too much.
  2. Add in the rest of the ingredients and pulse until mixed well.
  3. Do not over pulse, you want it to be chunky but sticky.
  4. If it isn’t sticking together good, add in more honey.

Banana Nut Bar

Banana Nut Bar

Ingredients

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 mashed banana
  • 5-6 pitted dates
  • 1/3 cup shredded coconut
  • 1/2 cup quick cooking oats
  • 1/4 cup agave
  • 1/4 dark chocolate chips
  • 1/2 tsp cinnamon
  • dash sea salt

Instructions

  1. Pulse almonds and walnuts in a food processor until chopped well.
  2. Dump into a bowl and reserve for later.
  3. Chop dates in the food processor until chopped well.
  4. Add nuts back into the food processor with the dates and add the rest of the ingredients.
  5. Pulse until combined then press into a loaf pan lined with parchment paper. refrigerate until firm.

Chocolate Chip Peanut Butter Granola Bars

Ingredients

  • 3/4 cup raw Almonds
  • 3/4 cup raw walnuts
  • 1/2 cup quick cooking oats
  • 3 pitted chopped dates
  • 1/3 cup agave nectar
  • 1 tsp vanilla
  • 1/4 cup dark chocolate chips

Instructions

  1. Put almonds and walnuts into the food processor and pulse until chopped but chunky.
  2. Add in dates and pulse a few more times.
  3. Pour nut and date mixture into a mixing bowl and add in the rest of the ingredients.
  4. Mix well then pour into a parchment lined loaf baking dish.
  5. Press evenly and pop into the fridge for at least an hour to set.
  6. Slice then wrap individually and keep refrigerated.

Peanut Butter and Jelly Protein Bars

Peanut Butter and Jelly Protein Bars

Ingredients

  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp sea salt
  • 1 cup all natural peanut butter
  • 1/2 cup almond butter
  • 4 cups raisin bran cereal (you could use 5 if you don’t want to add the Kashi Go Lean Crunch)
  • 1 cup Kashi Go Lean Crunch
  • 1/2 sugar-free strawberry jelly
  • 1 scoop protein powder (optional)

Instructions

  1. In a large sauce pan melt the brown sugar and agave until bubbling. Add in the vanilla, cinnamon, salt, and nut butters. Mix until smooth. Add in the cereal and protein powder and mix well. If possible, mix with a stand mixer which will break up the bran cereal a little.
  2. Line an 8×8 pan with foil and pour half of the bran mixture into the pan. Press down firmly with a spatula. Spoon jelly over the mixture and spread evenly.
  3. Pour the remaining cereal mixture over the jelly and press down evenly. Cover with plastic wrap and chill for several hours or overnight. Cut and store in the fridge or the freezer for a quick, protein packed yummy snack!

Granola Nut Bar

Granola Nut Bar

Ingredients

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup old-fashioned oats
  • 1/3 cup dried cranberries
  • 1/3 cup white chocolate chips
  • 1 large scoop vanilla protein powder
  • 1/4 cup raw sunflower seeds
  • 2 tbsp flax sees
  • 1/2 tsp sea saltds
  • 1/2 tsp cinnamon
  • 1/4 cup honey
  • 3 tbsp coconut oil
  • 1 tsp vanilla

Instructions

  1. Pulse almonds and walnuts in a food processor until slightly chopped.
  2. If you like your bars chunky, do not overpulse.
  3. Pour the nut mixture into a medium bowl and add oats, sunflower, cranberries, white chocolate chips, seeds, flax seeds, protein powder, cinnamon and sea salt.
  4. In a small sauce pan, heat honey and coconut oil.
  5. Bring to a boil and let bubble for about 20 seconds stirring constantly.
  6. Remove from heat and add 1 tsp vanilla then pour into bowl with nut mixture and combine well. Spread evenly into a 8×8 pan lined with parchment paper.
  7. to chill and set in the fridge for several hours.
