Family Fun, Paleo Pumpkin Hummus, and Giveaway winner!

Good morning!

Hope you all had a wonderful weekend.  We had one filled with lots of family time and lots of fun festivals!  I just love this time of year and all the fun things around our area there is going on.  I’m sharing some of our fun from this weekend today with  you for Marvelous in my Monday!

MiMM MIMM #71 Much Needed Time and Winners!

To start, The Hubby took Friday off so we could drive up to Apple Hill to spend the day.

It gets crazy up there on the weekends in October so we tried to miss the crowds by going on a weekday.  It was still actually pretty busy but we found a few fun places that weren’t as crowded.

Goats that poke their heads through the fence to get some food.  The Love Nugget didn’t mind that they got up close and personal with him.  He said he wants a goat.  Ummm… no way!

Lots, and lots of apples!

I bought 1/2 a box plus more as well as pears.  I’m going to make applesauce, pear/applesauce and hopefully apple butter.  Someday when I find the time 🙂

My mom came down to stay Friday and The Hubby had a work event so The Love Nugget and I hung out with her all evening then woke up Saturday morning and headed to the Farmer’s Market.

They had so many harvest items I almost couldn’t contain myself!  Gourds, all sorts of squash, popping corn on the cob and of course, pumpkins!

After the Farmer’s Market we managed to make it to Sprouts and Costco for groceries which was definitely marvelous to get done early in the weekend!

Then we rushed home to head out to a Family Fun Fest in Roseville.

There were lots of local booths, activities for the kids, music, and bounce houses!

His first time down one of those huge blow up slides.  He was a little hesitant to climb up (he just wanted to bounce), but once at the top he rolled over and slid down on his tummy.  He loved it!

Later we had family movie and pizza night.

He was hilarious laughing at this funny little cartoon character on the movie.   It took him forever to eat his meatza pizza since he was so into the TV!

After he went to bed The hubby and I watched Gatsby which was really great!  I had heard good things about it but was surprised at how much I liked it.  I haven’t seen a good movie in so long so it was definitely marvelous!

Sunday I woke up and headed to the gym for a quick GPP workout then home to get started on meal prep for the week.

Roasted Kabocha, roasted sweet potatoes with apples, roasted brussel sprouts, turnips and broccoli, hard boiled eggs, chopped veggies, rinsed grapes, ground turkey, bacon and egg cups (recipe to come).

Plus,  Paleo Pumpkin Hummus, homemade Paleo mayo (watch this tutorial if your interested in attempting), and a bacon and egg salad for The Hubby.

I was so happy with the Paleo Pumpkin Hummus I made so of course I just had to share the recipe with you!

Paleo Pumpkin Hummus

Paleo Pumpkin Hummus

Ingredients

  • 1 medium zucchini, chopped
  • 1-2 cloves of garlic
  • 1/4 cup organic pumpkin puree
  • 1 tbsp. lemon juice
  • 1/4 tsp. paprika
  • 1/2 tsp. cumin
  • sea salt and pepper to taste

Instructions

  1. Combine all ingredients in a food processor and process until smooth and creamy.
  2. Scrape down sides as needed then refrigerate until ready to serve.

The Love Nugget and I munched on quite a bit of this last night while making dinner.  So good!

After meal prepping and the massive clean up I had to do.  We headed off for some more Fall fun!

First stop was Halloween pictures (coming soon!).  Followed by a trip to The Fountains for their Fall Festival where someone had a blast playing all the carnival games,

and doing the little crafts they had for the kids.

Then we headed off to the Farm to Barn tour that PlacerGROWN puts on every year.

Of course we had to find some tractors!

We also searched for pumpkins but didn’t make it to as many farms as we would have liked to.  Instead we came home to carve our pumpkins!

Carving pumpkins withe a very curious, inquisitive two year old is not as fun as we thought it would be.  Thank goodness we had some really awesome Pumpkin Masters Carving Kits that helped make things quick and easy!   Stay tuned for a full review later this week 🙂

  3. We loved Gatsby too! It actually got us out to the theater when it was out, which is rare for us.

    Our weekend was marvelous because we speant it watching a beautiful wedding!

  12. What a perfect weekend! Looks like The Love Nugget had a blast!

    I really liked The Great Gatsby too. Leo is the best. 😉 I thought some of the music was a little off at times but I think they were just trying to make it modern, kind of like Romeo & Juliet with him and Claire Danes.

    That pumpkin hummus sounds delicious! I love hummus.

  19. It looks like you had a great weekend! I love carving pumpkins to make pumpkin seeds but usually give up on the carving and leave that to my boyfriend. This hummus sounds really good!
