Box Jumps Suck but Carrot Cake Granola Bars Rock!

Happy Second Day of Fall!

I’m not going to lie, I didn’t actually know that yesterday was the first day of Fall until today.  To be honest, half the time I forget what day!  I think not having an actual job to go to has something to do with that or it’s just mom brain 😉  Anyway we definitely had some Fall weather this weekend which was nice in some ways but not so much in others.  As was most of our weekend.  Marvelous but yet not so marvelous too.  Let me explain,

Marvelous – Planning an awesome workout at the gym Friday morning to start my weekend off right.


Not so marvelous – Putting the box on a slippery floor and hitting my shin on the 20th box jump burpee 🙁

This was right after it happened and it looks much better now. 

Ouch!  It definitely put a dent in my workout since it wouldn’t stop bleeding and running was out of the question.  I finished up with some lunges, squats, push-ups, and abs instead.  Not what I was hoping for.

Marvelous – Finally making it up to my home town to visit my family!

Not so Marvelous – Pouring down rain all day Saturday that ruined our hiking Mt. Lassen plans.


Marvelous – Planning to go to a beer and wine festival with my brother and his wife.

Not so marvelous – It being postponed until October due to rain 🙁

Marvelous – Getting to go out for a night without The Love Nugget for drinks and dinner with The Hubby.


The two wine flights we ordered to share.  So much wine!  

Not so marvelous – Choosing a restaurant that had horrible service, sparkling wine out of a can and horrible, overpriced food 🙁


My chicken lettuce cups that were served with wilted lettuce and a mayonnaise chicken salad.  Definitely not how it was described on the menu. 

Marvelous – The Love Nugget sleeping in a big boy bed Friday night at Grammy’s all night!

Not so marvelous – The Love Nugget not sleeping so well in a big boy bed at Grammy’s house the next night.  When we got home at 10:00 he was still awake trying to get up and play, then he refused to fall asleep until well after 11:00 then woke up at 6:30.  Which meant he was a bundle of joy all morning!  Luckily, he passed out within 5 minutes of driving home and slept almost the whole way.

Marvelous – Getting to see The Love Nugget play with his cousins he loves so much!

Not so Marvelous – Not being able to get a good picture of them.  Guess that’s how it goes with kids!

Marvelous – Creating a delicious granola bar recipe

Carrot Cake Granola Bars

Carrot Cake Granola Bars


  • 2 cups of old fashioned oats
  • 1/4 cup flaxseed meal
  • 1/4 cup raw almonds, chopped
  • 1 tsp. cinnamon
  • 1/4 cup date paste
  • 1/2 cup grated carrots
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup unsweetened sunbutter
  • 2 tbsp. 100% pure maple syrup or raw organic honey
  • 1 tsp. vanilla
  • 1/4 cup organic raisins


  1. Preheat oven to 350 degrees.
  2. Pour 1/2 cup hot water over dates and allow to sit for a few hours or heat in the microwave in water until softened.
  3. Drain the dates then mash with a potato masher or pulse in the food processor.
  4. In a large bowl, mix together all ingredients until a wet sticky mixture forms.
  5. Line a 8x8 pan with foil then press the granola mixture into the pan.
  6. Bake for 20-25 minutes then allow to cool before cutting and storing them in the fridge until ready to enjoy.

Not so marvelous – Nothing, these are really good and you should go make them right now 🙂

  1. SO excited Fall is officially here! This season is pretty much guaranteed to be a good one I’m thinking!
    Oh goodness, that wound does not look too great. Man, I swear I always do stuff like that. Hopefully it feels better soon!
    And those carrot cake bars just look fabulous! Yum.
    I definitely have weekends where things are great and then not so great. It just happens every now and again. I think as long as we don’t let those bad times break our spirit then it’s perfectly okay to have days like that:)

    Not good at all about your shin, hope it gets better! I was meant to do a long run Sunday but had to cut it short as my foot was hurting, not exactly sure what I’ve done to it but I know it needs rest.

  4. Ouch, ouch, ouch! That’s pretty much exactly why I’m terrified of box jumps – with my luck, I’m pretty sure my shins would always be looking pretty beat up. And I’m not sure I have a favourite granola bar recipe, to be honest… Since they’re so wonderfully customizable, I usually end up making them differently each time.

  5. Bad service and overpriced, bad food is the worst! Especially when you don’t get out much and are really looking forward to it. Oh well, the company is what really matters! The carrot cake bars look yummy!

  9. I just stumbled upon your blog, and your carrot cake bars look amazing! I seriously adore carrot cake, so if I can have it in a healthier granola bar form, that is a definite win.

    Sorry about your shin though – that looks painful! I’ve definitely given myself similar battle wounds at the gym. I guess that comes with being a klutz. 😛

  10. I worked out with a trainer once who was trying to get me to do box jumps but I was terrified. I told him I didn’t want to hurt myself…he told me it was impossible…case and point that is so not true! Hope you heal quickly! These bars will certainly help 🙂

      I think they are dangerous when you are doing them at 5:30 am, in the dark on a slippery floor. My bad!

      Yeah, Sophia sparkling in a can. I’ve actually had it before and it was not good. The worst part about the box jumps is that my husband seriously (stitches on both shins) injured himself on a box jump a few months ago so I knew better!

  13. I’m sorry about your less than marvelous date night restaurant choice. Tyler and I had a somewhat similar experience this weekend. I love all things about fall especially the smells, foods and colors.

      It’s so frustrating to go out to eat and be disappointed by the food. Part of the reason we don’t go out all that often!

      The sad part is that it looks so ugly and I had planned to wear a dress for a charity event tomorrow! Ugh, now I’m scrambling trying to figure something out…

      It looks worse than it actually was but still no fun! Especially since I bruise so easily and its so ugly!

      I know… Ugly right!?! I have a charity event to go to on Thursday too that is cocktail dress attire. Hmmm… not sure what to wear since my leg is a mess!
