MIMM – Time for Pumpkin Food!

Hi friends!

I have to admit that I’m starting to get fall/pumpkin crazy!  Even though it’s still over 90 degrees and even though it’s not officially Fall yet.  I can’t help it, I just love everything about this season.   Which is why I’ve got so many things in mind to do this year. If you missed it, you can check yesterdays post where I shared my Fall Bucket List.  So much fun things planned!

Like I said, I’m getting pumpkin crazy already.



You’ll have to keep reading to get the recipes but before I get to that let’s talk about a few Marvelous things from our weekend.

MiMM MIMM #67 Just a Chill Kind of Weekend!

Friday night we had planned to have somewhat of an at home date night.  When The Hubby got home from work we relaxed out back enjoying a cocktail, some light snacks and play time with The Love Nugget.

Unfortunately The Nugget didn’t go to bed as early as we had hoped.  He took forever eating his dinner then wanted to play in the shower so we didn’t get to sit down and enjoy our dinner until well after 8:00pm.  Which is late for us old folks!  We had talked about watching a movie but instead watched a few episodes of True Blood.  Almost up to season 6!

Saturday I headed to boot camp to start my day then refueled with one of these,

Pumpkin Pie Protein Smoothie

Pumpkin Pie Protein Smoothie


  • 1/2 cup pumpkin (mine was frozen)
  • 1/3 cup frozen banana
  • 1 tsp. Pumpkin Pie Spice
  • 1 scoop vanilla protein powder
  • 1/4 cup organic plain yogurt
  • 1/3 cup liquid of choice (coconut milk, almond milk, milk, or water. I used 1 splash of coconut milk and 1/4 cup coconut water)
  • 4 ice cubes


  1. Place all ingredients in a blender and run until smooth and creamy.
  2. If you want it thick use less liquid. If you want it drinkable through a straw, use a little more liquid.

So creamy, pumpkiny (yes I know that’s not a word), and just over all good!


After my smoothie we headed out to run some errands which included a stop at the mall where the new Lululemon had just opened!

I could have spent all day in there!  Along with the amazing clothes, they had kombucha on tap and fresh juice to sample!  So fun!  Instead I went and met The Hubby and Love Nugget for  lunch at Pluto’s.

I haven’t been there in so long and forgot how big their salads were!  This is their side salad and then you get to add seven toppings before they toss it all together.  It was pretty good but… my tummy was not a fan and I was not feeling too hot when we got home 🙁

Later that day we had a birthday party to go to where these two had a blast running around together!

So good and refreshing!

Sunday we headed out to the farmer’s market bright and early where we picked up a ton of fresh produce!


For $24 we got grass-fed beef, a bag of dates, organic strawberries, grapes, peaches, tomatoes, basil, a sweet potato and green beans.  Score!

Then we stopped at the Aerospace Museum to check out the planes!

Oh my he had a blast!

After seeing every plane, playing in the kids area then the climbing structure, we headed home for nap time.  While the Love Nugget napped I headed out to get the grocery shopping done.  So much more fun when I’m solo!  Not that I don’t enjoy having a little helper but I was able to hit up three stores in under 2 hours.  I planned our meals and grocery list around the sales and coupons I had for Whole Foods, Raley’s and Trader Joes.  I managed to spend just over my goal of $100 which I felt great about!

I got to work on food prep which included a recipe experiment!

Grain & Nut-Free Pumpkin Chocolate Bites

Grain & Nut-Free Pumpkin Chocolate Bites


  • 1/4 cup pumpkin puree
  • 1/4 cup sunbutter
  • 1/3 cup coconut flour
  • 1/3 cup + 1 tbsp. unsalted roasted pepitas
  • 4-5 mejdool dates
  • 1 tsp. pumpkin pie spice
  • 1 tbsp. honey or maple syrup
  • 2 tbsp. Enjoy Life Mini Chocolate Chips


  1. Place dates and 1/3 cup pepitas in a food processor and pulse until chopped well.
  2. Add in sunbutter, pumpkin puree, coconut flour, pumpkin pie spice, and honey.
  3. Add 1 tbsp. pepitas and chocolate chips and pulse a few times.
  4. Roll into bite size balls and store in the fridge for up to two weeks.
  5. Enjoy!

Told you, I’m getting pumpkin crazy already!

Good thing I picked up a few cans of pumpkin at Whole Foods yesterday 🙂

  1. The weather here has been perfect. 70-80 during the day and maybe upper 50’s at night. I’ve had my windows open and I love it.

  2. It is just into Spring here but I am loving for the most part the warmer weather (although it rained today!).

    I wish we had that pumpkin pie spice here it sounds so good! I think I’m going to have to buy some and have it shipped to me here in Australia 🙂

      So crazy to think that it’s spring there! Also crazy there there is no pumpkin pie spice. I’d definitely have to order some!

  7. It sounds like you had an all around amazing weekend – minus the stomach ache. There are no Lululemon stores around here but from all I’ve heard about it that must be an awesome place to shop at. … and leave lots of money :).
    Calling my pumpkin consumption any less than ridiculous would be an understatement :). We don’t have canned pumpkin over here but I’ve been having kabocha every day the past weeks. Obsessed.
    Going for a hike in the gorgeous forests around where my parents live is high up on my Fall Bucket List.Other than that lighting many scented candles, collecting chestnuts as decorations and spending hours snuggled up in bed reading are things I’m looking forward to.

      Thanks! This was my first visit to Lululemon and while I was impressed with the friendly service and quality products it was so expensive I won’t be making it a normal shopping stop. At least not for awhile 🙂 Forest hikes definitely sound like a fun fall activity!

  11. How do you freeze pumpkin? Do you just use canned purée? I’m so excited for fall/pumpkin everything!! My newest recent addiction is Pumpkin Spice Chai Latte! Yummmmm!

      I made a bunch last year from scratch and froze it but I was thinking about freezing some canned in ice cube trays. That or just making some more when I have some free time 🙂

  12. I’m definitely ready for pumpkin everything and had my first Starbucks pumpkin latte of the season yesterday. I’ve always wanted to do a pumpkin smoothie…. yours looks delicious!!

      I made a batch of homemade pumpkin pie creamer so I wouldn’t be tempted to go to Starbucks for the pumpkin pie latte. While I do enjoy them my tummy does not enjoy the soy or the milk so I try to make them at home more often. I do enjoy them for a weekend treat though!

  13. I would love a lululemon to open up near me, but at the same time, I’m glad we don’t have one, as it could be dangerous!

    I love your pumpkin bites! I’m SO ready to start making pumpkin baked goods (or pumpkin EVERYTHING, rather!), but I just want our weather to start feeling like Fall! I’m so sick of this hot weather!

      You’ll have to come to Roseville to shop at Lulu with me 🙂 Although I’m going to be avoiding that place for awhile for the sake of my bank account! I’m with you on the hot weather! So over it and ready for fall!

  14. I love that you are going pumpkin crazy already! I haven’t had pumpkin yet this year. I’m holding out and enjoying the last bit of fruits that are out. I’m ready for pumpkin though. It has only been in the 70’s here, so I’m ready for some warm comfort foods.

      Oh 70’s sounds heavenly! Yesterday was a much more mild climate day with temps just reaching 90 and we enjoyed it by spending most the afternoon outside.

      It’s so hard to not go pumpkin crazy when fall decor and supplies came out month ago. It was tempting me to go pumpkin crazy much sooner but I held out until September 🙂
