Just a few marvelous things…

Happy Monday!

I’m starting the week off in a great mood as I’m feeling much better!  After several days of rest I’m ready to get back into my routine of fitness and fun with The Love Nugget!

Speaking of The Love Nugget, he’s been really pushing his limits with us lately especially this past weekend while at Gigi’s house for dinner.  He was a monster!  I’m sure it didn’t help that I wasn’t feeling 100% and my patience was slim to none but all the same he’s definitely trying to see more of what he can get away with lately.  Hoping this week since I’m feeling back to normal I’ll be able to give him some more attention and we can actually get out of the house to play.

Like I said though I’m starting today off in a much better, and more optimistic mood which is perfect for Marvelous in My Monday!

Marvelous – Fresh flowers to brighten the room!

Love having flowers in the house and don’t buy them often enough.  They just die so quickly I never feel like it’s worth the money but these were just too bright and cheery to pass up.

Marvelous – These Raspberry Coconut Bites I made yesterday for the week,

Raspberry Coconut Bites

Raspberry Coconut Bites

Ingredients

  • 3-4 large pitted dates
  • 1/4 cup coconut flour
  • 1/3 cup shredded unsweetened coconut
  • 1 tbsp. coconut butter
  • 1/3 cup fresh raspberries
  • 1 tbsp. coconut oil
  • 1 tsp. vanilla

Instructions

  1. Place all ingredients except coconut oil in a food processor.
  2. Pulse until a wet sticky mixture forms.
  3. Turn on food processor and slowly pour in coconut oil.
  4. Continue running for about 30 seconds.
  5. Roll into balls and store in the refrigerator for up to 2 weeks.
  6. Enjoy!

I’m trying to limit my nut intake these days as I’ve been overdoing it a little too much lately so these are the perfect nut-free, naturally sweetened snack to have on hand.

Along with this fresh beet, carrot, apple and pear juice, egg cups, and beet chips I also made these protein bars for the hubby, chopped up veggies for snacks, made Paleo hummus, roasted butternut squash and washed kale for the week.

 Marvelous – This package of amazing Vega products that arrived at my door the other day.

I’ve tried a few of Vega products before but none of the ones they sent me so I was very excited to try these out.

Vega is an amazing company started by Brendan Brazier, a former professional Ironman triathlete.  He felt that one should not have to compromise between whole food goodness and fast food convenience so was born Vega.  A company that creates plant-based whole foods free of refined sugar, dairy, gluten and soy free.  Vega also has a commitment to sustainability by using ingredients that are plant-based, locally grown, minimally processed, and non-GMO as well as organic and raw when possible.

Vega just came out with a new sugar-free energizer that was created to enhance mental focus, increase energy, and boost endurance.  It comes in either acai berry or lemon lime and contains only 5 calories.  We got the Lemon Lime to try and it taste great and definitely gave me a little boost of energy to get me through my spin!  The Hubby also gave it a try before his 5:30 am spin class and said it worked great!

I love their Sport line as well and have used their prepare, sustain and recover products before half marathons or other long runs.  They definitely help without adding all the extra junk to my body.  Love that!

Well, that’s it for today.  We’re off to the gym for bodypump and hopefully a walk after.

  1. Preping food on Sunday is such a great thing. It helps with time issues during the week but is also a great way to unwind, in my opinion. I love to spend my Sunday afternoons, baking, cooking, cutting, prepping and cleaning the kitchen afterwards. Other people meditate, duh… 🙂

      I feel so much better and eat much better if I have my food prep done. Plus, I actually enjoy it!

  2. So happy to hear you are doing better!! I can understand the Love Nugget pushing his limits.. I think all kids his age try to do that! Haha Hopefully though since you feel better it will allow him more attention and he will calm down his monsterness 🙂

  3. I don’t remember any of my kiddos going though the normal terrible twos, but they definitely had their moments here and there. I feel ya, but just remember, it will get better. I’m definitely going to be trying out your raspberry coconut balls because I really need to limit my nut intake too. I’ve wanted to try vega out… thanks for the review! Happy Monday!

      I’m hoping it’s a moment and not a long phase. Some days are better than others and he’s definitely learning about consequences.
      So hard to limit my nut intake because they are so good!

  4. I love that you didn’t use any nuts in your energy bites! I’ve been looking for new ways to use coconut flour, and I’m seriously going to have to try adding it to some bites, since I love the subtle sweetness and texture it gives things. Sorry to hear about your little Nugget pushing his limits… Hopefully your feeling better will clear some of that up.

      I too am always looking for new ways to use coconut flour. It’s so yummy! I think by using it in these bites I didn’t have to use much else to sweeten it. A few dates and the raspberries is perfect!

  5. I love Sunflowers they are by far my favourite flower! The most marvelous thing today is that I may get a week off travelling for work next week which would be so good!

  6. I’m totally going to make those coconut bites, but with strawberries! I went strawberry picking this weekend so I have too many for my own good and they would be perfect in your recipe. Looks like an awesome weekend! I love fresh flowers. There’s an awesome flower market in downtown Toronto that my Mom and I like to get to every other week to keep the house smelling and looking fresh 🙂

      They would be great with strawberries and I actually almost made them with those instead. The raspberries were calling to me though. I would definitely splurge on fresh flowers from a flower market if we had one nearby!

      Hoping it’s a stage! He just seems to have so much energy lately and is really pushing it. It’s making me happy that we decided to wait to have another! I have a few friends with kids his age and now they have newborns! I couldn’t imagine having a newborn and going through this phase!

  12. I love fresh flowers too, and like you, I don’t buy them often enough! Your egg cups look good, too! My Monday is marvelous because I’m now in my second trimester and finally getting some of my energy back and I got my workout done in the morning, before it got WAY too hot!

      Yay for being in your second trimester! It’s going so fast! I remember when I was pregnant I felt so much better if I got my workout done first thing in the morning. Definitely set the tone for a much better day.

  13. The testing- oh my goodness, yes. Lots of phases. And we’re had more in the 3s as well! They definitely know when you’re not feeling 100% and tend to push even more, but thankfully, the phases do pass. Gorgeous flowers!

      Not a fun phase so far. Yesterday we had our first little screaming fit in a store. Talk about embarrassing! Positive discipline before negative is so much harder when it’s your own child. Hopefully the phase goes away soon!

      It’s so easy to overdo it with nuts! I actually need to remove them and all the nut butters from my home to completely cleanse from eating them. I’m sure that won’t happen though, they are too good!

  16. Oh, I am right there with you when it comes to these phases. My 2 1/2 year old is going through a similar phase right now. Some days it can be tough! Hang in there and have a great week!!

      Thanks Lauren! Glad to hear I’m not alone but not glad you’re dealing with the same phase. No fun! It was so much easier when I was dealing with it in kids that weren’t my own years ago when I taught pre-school!

      Flowers should be so much cheaper than they are! Luckily these sunflowers are definitely getting their money’s worth as they are still alive and kicking! I’m trying to make them last as long as possible 🙂

      Thanks Jessie! Yes, I have had a rough year for sure! Talking to a friend who’s had their fair share of sickness’ too, it seems to be a bad year overall especially for those of us with toddlers. Darn kids and their germs!
