Fresh & Easy Date Night

The Hubby and I celebrated our 5 year anniversary on June 28th.

Unfortunately I was out-of-town at Fitbloggin and we weren’t able to do anything on the actual date.  Neither of us are big on making a huge hurrah over the specific day so it wasn’t really an issue.  Also, Fresh & Easy sent me a gift card to shop at one of their wonderful grocery stores and I didn’t get it until I arrived home.  So it was the perfect excuse to plan, shop and prepare a little anniversary date night at home 🙂

This was the first time I have actually been to a Fresh & Easy and wasn’t actually aware there was one nearby.  I was pleasantly surprised to learn that there were actually a few in my area and their main goal is provide not only fresh groceries but freshly prepared meals that include the finest ingredients without high fructose corn syrup, artificial colors, artificial flavors or added trans fats in their Fresh & Easy products.

One thing I loved about Fresh & Easy, was their section of themed ready to cook meals.


They had an American, Italian, Asian, and healthy section with tons of prepared, ready to cook meals.



Their ready to cook meals continued throughout the store with everything from stir-fry’s to mixed grills.


For our date night we settled on some fresh caught salmon, salad fixings and a few things for some appetizers.

After The Love Nugget went to bed, we enjoyed some wine, appetizers and a game of UNO while our salmon cooked.


Bacon wrapped dates, goat cheese with fig preserved and Blue Diamond Almond Crackers

Then we enjoyed a delicious dinner,


We actually had salmon prepared this same way the other night but it was so good we had to repeat it!

Baked Dill and Coconut Oil Salmon

Baked Dill and Coconut Oil Salmon


  • 2 fresh caught Sockeye Salmon Fillets
  • 2 tbsp. coconut oil
  • 1 tsp. dried dill
  • salt and pepper


  1. Preheat oven to 375 degrees and line a baking sheet with foil.
  2. Rinse salmon, pat dry then place on foil lined baking sheet.
  3. Season each filet with dill, salt and pepper.
  4. Soften coconut oil in the microwave until its spreadable then spread 1 tbsp. on each filet.
  5. Bake for 15-20 minutes until flaky.
  6. Serve with fresh lemon wedge and enjoy!

It’s so good and so simple!  Thanks to Fresh & Easy for having the perfect portion of wild caught salmon for us to enjoy!

I was truly impressed with the amount of fresh, ready to cook meals that they carried.  Besides the ready to cook meals, they had a ton of grab and go healthy lunch options and microwavable choices making it much easier for busy people to eat healthy.  I also found it nice that their store was not overly huge which when on a time crunch makes things much simpler as you’re less likely to get distracted or in my case, wander around searching for hard to find ingredients!

  1. My go-to meals are anything that can be pulled from the freezer and cooked right away. Frozen veggies, seafood, etc. I’ve never heard of Fresh & Easy–wish we had one close by though–sounds like a great store.

      I used to be so much better at keeping meals in our freezer but just got out of the habit. Actually, during the winter it’s much easier since we eat more soups and casseroles that are easy to double and freeze. I need to stock up this winter!

      You don’t like salmon! Such a bummer. I actually used to not be much of a fan then I caught a huge one while deep sea fishing and had to learn to enjoy it. Thanks! It’s an Essie but not sure the name…

  4. I love Fresh & Easy Markets! I just wish we had one near us! My go to meal when I’m short on time is Mediterranean Chicken in the Crock Pot! Though with our move and things still in boxes, salads have been our go to meals lately!

  5. Mmmm, your salmon looks good!!! I love the bright color of sockeye. There’s a Fresh and Easy a few block from my house and I’ve never been there. You’ve got a nice looking haul there so I think I will check it out this weekend!

  6. Aww Happy Anniversary!!

    When I am short on time I have a freezer full of Soups and Casseroles that I try and keep well stocked so I can just pop them in the microwave instead of dialling for takeaway.

      Thank you! I’m so bad at keeping my freezer stocked with easy to go meals. I used to freeze our leftovers but now we have The Love Nugget to eat all those!

    Such a neat concept of a store. I love their mission. Too bad they are nonexistent out here, Ha!

  8. I went to Fresh & Easy once. I only bought spinach though. I really need to explore their offerings because it looks like they have some good picks! 🙂

      I was really surprised with all their healthy ready to cook options! They didn’t have a ton of organic but great options when you’re short on time.
