WIAW – Sunflower Seed Butter Recipe!

Good morning!

Today is going to be a quick on as we are running late and heading to the gym soon.  Good thing it’s Wednesday and posting pictures of my eats from a day shouldn’t be all to time consuming 🙂

This month she’s talking about sensible snacking and I’ve got a great snack recipe for you guys!  Well, to me it’s on of my favorite snack recipes but that’s just my opinion.  It is definitely a healthier one though!

I started my day with apple cider vinegar followed by two cups of coffee with coconut milk and cinnamon.  Yum!  Then when The Love Nugget woke up an hour later, we enjoyed breakfast.

Off to the gym we went and immediately after we headed to the Library for story time.  So along the way I snacked on a few apple slices then on the way home one of these,

Lunch was an un-pictured salad with grilled chicken roasted beets, avocado and sunflower seeds.  Yum!

Also enjoyed some grapes on the side.  Organic Red Grapes are finally at Costco, yay!

After lunch we put together a meal for a friend who just had a baby. I made this dish from Iowa Girl Eats along with some Protein Bites and a salad.

When we got home from running errands, I had a yummy snack to hold me over until dinner.

Sunflower Seed Butter

Sunflower Seed Butter


  • 2 cups roasted sunflower seeds
  • 1 tbsp. raw honey
  • 1 - 2 tbsp. walnut oil


  1. In a food processor grind sunflower seeds until finely chopped.
  2. Slowly add in honey and oil and continue processing until a smooth creamy butter forms. This may take awhile but it will eventually turn into a creamy, tasty sunflower seed butter! Add more oil if it doesn't mix well enough and more honey if you want it sweeter 🙂

Love the combo of carrots with sunflower seed butter and it’s so easy to make!

Dinner was a quick and easy dish that we threw together.


Organic chicken thighs cooked in coconut oil with cumin, garlic, onions, sea salt and chili powder served over romaine lettuce and topped with mashed avocado and tomatoes.  The hubby and love nugget had it in tortillas as tacos but it was good as a salad!

I ended my evening with a few slices of frozen bananas.


Seriously love frozen bananas right now!  I need to freeze some of my red grapes as those too are an awesome frozen snack to have.  Yum!

Oh, and in case you didn’t know, it’s National Running Day!  I may not run as much as I used to but I do still enjoy it and hope to find some time to get in a quick one today before spin!

  1. I’ll be heading to Costco this evening and I so hope that they have organic grapes!! Sunbutter and carrot sticks is one of my favorite snacks!

  2. I love eating hummus with whole wheat crackers. =) I also love eating fruit as a snack. And, nice sunflower seed recipe. I’ll give it a try once I have all the ingredients (and a food processor..mine broke).
    and, I already ran today! I’m addicted to it. I run 3-4 miles most days of the week. Happy National Running Day!

  3. All of your food looks delicious. I am definitely going to have to make some of that Sunflower Seed Butter and it looks so easy. I have been loving carrots with hummus but I want to try it with that butter. YUM!

    That casserole looks great! That would be a wonderful way to start that day.

    Any type of fruit and carrots have been my go to snacks lately.

    I wish I could participate and run today; maybe next year. 🙂

  6. Mmm, I love Picky Bars! Frozen bananas are a great idea, too. I’ve been freezing them to blend as “ice cream” but haven’t eaten plain banana slices. L would love that!

  8. I just tried a Picky Bar for the first time . . . and it was good! I don’t know that I’ve ever had sunflower seed butter . . . I wonder if I’d like it!

  9. I’ve never made my own nut butter but seeing how easy that recipe is I should give it a go. I’ve got to buy a food processor first though as I broke our last one!

  10. I cannot wait to hear more about those bars. They sure sound intriguing :). And good idea to freeze bananas for a snack. I use frozen bananas to make “ice cream,” but they would be absolutely tasty just sliced and frozen.

  11. Ooh, your sunflower butter looks so good! I have wanted to try sunflower butter, I always keep forgetting to buy it. I might just need to make some of my own!

    My favorite snack right now is KiZE bars or roasted walnuts with dried cherries!

  14. Omg I love making sunflower seed butter….however I find myself consuming it uncontrollably so I don’t make it often!
