Paleo Cocktails, Electric Run and Giveaway winner!

Happy Marvelous Monday folks!

I’ve got so many wonderful things to share with you today but first, I know some of you are dying to hear who won the About Time Whey Protein Giveaway!  Drumroll please…..  Congrats Sara at Fitcupaker!  Message me your details when you get a chance please 🙂

So, let’s talk about some marvelous weekend happenings.

Our weekend started off great with a nice mellow evening at home complete with fresh, Paleo Margaritas!

Paleo Margaritas

Paleo Margaritas


  • 1 shot Blanco Tequila
  • Juice from 1 lime
  • Juice from 1 small orange or half a larger one
  • Club soda or sparkling mineral water


  1. In a shaker, mix together the tequila, lime juice and orange juice. Strain into a glass with ice and top with club soda or sparkling mineral water. Enjoy!

Along with some pistachios to snack on.


Someone figured out how to crack them open pretty good on his own!


He was loving them and kept asking for more.

Dinner was delicious avocado stuffed burgers from Civilized Caveman with sweet potato fries.  Yum!


After dinner we snacked on some watermelon and laughed at The Love Nugget’s funny faces.


He is quite the character lately!

Saturday the hubby had to go into work for the morning so I got up early with him and got in a quick workout before cleaning and hanging out with The Nugget.

Grandpa and Grandma came down around 2:00 so we visited with them then got ready and headed to my cousins for The Electric Run!

Even though it was a run, we figured with it being at night and the expected large crowd (10,000+ people) we wouldn’t be doing all that much running.  So we started our afternoon with a margarita before grabbing some food at one of our favorite sushi spots.


I had the Sea Steak with Daikon radish and a gluten-free sauce.  Unfortunately not soy free but oh well!

Then we ventured to the event!  Here’s just a peak at what the starting point wait was like.

So many people!  So much fun too!  We got all decked out in our Electric Run shirts, glow glasses, some glow paint and glow necklaces.

But oh my gosh compared to other people there we were super under dressed!  Lots of fun unique “neon” costumes!

The run route included different light stations, etc. and there was a huge after party that we skipped out on as it was very loud and crowded.


We are so old!

Instead we went to a nearby restaurant and had a beverage before heading home.  We didn’t get in bed until midnight which is way past our bedtime.  Again, so old!

We were all up pretty early and coffee was my best friend 🙂  The hubby and I made a yummy breakfast that included Paleo Eggs Benedict from Make it Paleo,



as well as some fresh fruit and some of Udi’s Gluten Free Muffins.


Speaking of which, have you guys tried these muffins?  I had to have a taste even though they are not Paleo.  At least they were gluten-free!  Anyways, Udi’s sent me some samples about a month ago and I was pleased to see that they would last when kept in the freezer.  Especially since they sent so much good stuff!

I had been wanting to sample some of their gluten-free products after hearing about how good they were from fellow bloggers so jumped at the chance to do a review.  I had no idea that they made so many different gluten-free foods and both the hubby and I were impressed at how good everything we tasted was.

Udi’s was started in 1994 and since then has quickly become the number one gluten-free brand in America.  As mentioned, they make many different products such as bread, bagel, granola, tortillas, muffins and cookies.

I brought the Snicker doodles to the baby shower I threw a few weeks ago and after tasting one wanted to take them off the serving table and hide them for myself!  They were so soft and flavorful you would have never guessed they were gluten-free!

The Vanilla Muffins that we served today at breakfast were also a big hit.  Everyone was raving about how great they tasted and The Love Nugget was in heaven!  He finished off mine then tried to steal the last one from the table after everyone was finished and we were cleaning up.  He loved them!

I highly recommend Udi’s for anyone living or wanting to try out a gluten-free lifestyle.  Like I said we stuck a few things in the freezer for the future and will definitely be enjoying them on occasion as Udi’s is so good!

The rest of our morning we lounged around then went to Whole Foods for lunch and a Costco run.

After we got home we spent a few hours prepping food for the week.  Again the hubby was home to help which is so much nicer than doing it on my own.  We cut veggies, roasted Kabocha, made protein bars, coconut lime paleo bites (recipe to come soon), hard-boiled eggs, made paleo mayo, put together some trail mix, steamed veggies, then later cooked chicken, steak (for the hubby) and salmon the week.  Phew!  I was tired after and the rest of the evening was spent on the couch relaxing.

Definitely a fun weekend full of marvelous happenings but wish it didn’t go by so fast!

  3. The Electric Run looks like a blast!! What fun! Margaritas are my favorite cocktail–so summery, too. I have not tried Udi’s bread before, but I feel like most people either love it or hate it.

      It was a blast! I think more so because we did it with fun friends 🙂 I’ve heard a few people who aren’t fan of Udi’s too.

      Haha! Glad I’m not the only one who would drink at 10:00 am! Margaritas count as a brunch cocktail right!?!

  6. Those stuffed burgers look and sound absolutely scrumptious – I could eat avocado with every meal… And some days I do 😛 I only tried one of the Udi’s breads when I was GF and wasn’t a big fan, but I am also crab crazy so I prefer the real deal.

      You should do it! It was different but a lot of fun to do with a group. I wouldn’t suggest doing it solo though. Thank you! I’ve been debating on cutting it but then wouldn’t be able to curl it and I don’t think I’ve ever had it this long before. Decisions, decisions!

      Thank you! Yes, Udi’s is really good! I haven’t had a chance to try their tortillas or bagels yet but judging by the cookies and muffins, I think they’ll be excellent!

  9. That electric run looks like sooo much fun!! I would love to do something like that! And a paleo margarita?! Who would’ve thought! I have never tried Udi’s products before but I know Lindsay eats them all the time and loves them! Tons of delicious food pics in here…..your little man is getting so big!

      I’m seeing so many fun themed runs these days. I just saw a foam run the other day though and that would be one I would definitely pass on. We are doing our first mud run in May though and I’m pretty excited about that! Thanks Sarah! He is growing into quite the little man!

  10. I’ve heard some great things about Udis but I don’t think I’ve tried them myself. I’m going to have to keep my eyes peeled and try them!

      I saw them at Trader Joe’s the other day as well as Whole Foods and Raley’s. I think more stores are carrying gluten-free these days and Udi’s is a big one!

      It was fun! Different, but fun! It was at Cal Expo which is why it was so different. We went through buildings, walkways, the parking lot… almost like an obstacle course!

  12. Wow, I’m thoroughly impressed with all your meal prep! I’m curious about that paleo mayo!

    The Electric Run looks like it was an absolute blast! How fun to have all the lights and colors around you! …yes, I am like 4 years old and very easily amused! 😉

    Those muffins look soooooo good! I’ve never tried anything of Udi’s except for their burger and hot dog buns…which are really great…nice and fluffy and they don’t fall apart at all!

    The most marvelous thing from my weekend was not doing ANYTHING on Saturday besides laying around the house and catching up on blogs. Sounds lame but it was chilly, the man-friend got called into work unexpectedly, and I just didn’t feel like doing anything…so I didn’t and it was MARVELOUS! 😀

  13. My friend and I were just talking about the electric run today while we were at the gym. It sounds like such a good time! I haven’t done any type of theme run and this night run with all the colored lights just sounds so fun! It is for sure on my list of races I want to run this year!

  14. I am a HUGE fan of Udi’s gluten free breads and I also love Rudi’s gluten free breads, too! I have not tried anything but the bread yet. How do you go about doing reviews???

    I used 2oz of tequila (not sure of the size of a “shot”) and a large lime and half a large lemon for this. I also added a bit over a teaspoon of organic, raw agave nectar and maybe 1/4 teaspoon of himalayan pink rock salt. OMG!! Possibly the best margarita I’ve ever had, Paleo or not (which it is in my book). Thank you so much for this recipe! I would never have guessed to try it this way but it’s amazing (said before I’ve even had my third sip so it’s not the drink talking 😉 )!!

      Oops I said I used a large lime and half a large lemon… I actually meant orange. One large lime and half of one large orange. My brain tends to talways want tp put lemon and lime together. 🙂
