WIAW- a few recipes and a HIIT workout

Ahhh Wednesday…. You have snuck up on me way too quickly this week!  Maybe it’s because last week dragged by with me being sick and all.  Or maybe it’s because I’ve got a million things to do in the next few weeks and time goes by faster when your busy.  Either way it’s Wednesday!  Which means it’s time yet again for What I Ate Wednesday!

Peas and Crayons

I’m sure some readers dread this post as it might seem boring to read about my eats for the day.  I however, love linking up with Jenn on Wednesdays for a few reasons.  One, it makes me take a look at things I’m eating and forces me to pay better attention about  mindless snacking which can occur all too often when you’re home all day…. Two, I love reading about other peoples eats and getting new fresh ideas to incorporate into our meals!

Today began as usual with a cup of coffee mixed with a little light canned coconut milk and a tad bit of Toffee flavored liquid Stevia.

A few hours later when the Love Nugget woke up, we had breakfast.

Today was a sweet breakfast scramble with mashed sweet potato, a little spinach, then topped with strawberries and almond milk.  Yum!

We headed off to the gym after that where I had just enough time to get in an awesome Treadmill HIIT workout before going to Boot Camp.

On our way to Target, I drank a Fitmixer Vanilla Protein Shake.

After an hour of shopping though my stomach was grumbling so the Love Nugget and I shared an unpictured banana on the way home.

By the time we were home and I got The Love Nugget down for a nap and groceries put away, it was almost 12:00 but I didn’t want to eat lunch quite yet.  So I snacked on a few of these delicious snacks to hold me over until lunch.

Nuttzo Protein Balls

Nuttzo Protein Balls


  • 2 tbsp. Nuttzo
  • 1 tbsp. Coconut Oil
  • 1 tbsp. Maple Syrup
  • 1 tbsp. Applesauce
  • 2 tbsp. Coconut Flour
  • 1/4 cup Unsweetened Coconut


  1. Combine all ingredients in a bowl or stand mixer and mix well. Roll into balls then store in the fridge for up to three weeks

I love using Nuttzo in protein balls because it I don’t have to chop or add nuts!

When The Love Nugget finally woke up around 1:30, we ate lunch together.

Tuna with some hard boiled egg, avocado, Dijon mustard, dill and apple cider vinegar with carrot and celery sticks.


It doesn’t look like much but it was good!

After lunch we went to a nearby park for some play time with a friend.

We hadn’t been to this particular park before and it was fun but the big play structure was very tall!  And of course someone had to climb all the way up to the top!

Luckily he’s not afraid to go down the slide so I wasn’t having to follow him up to get him down.  Still makes me a little nervous though!

A little later I enjoyed a really tasty snack.


I spread this cheese on top of some delicious homemade crackers.

I made more Almond Milk this morning so I had a ton of left over pulp.  I used the same steps in this recipe but used two cups of almonds and 5 cups of water.  No dates or cinnamon this time.  This left me with 3 cups of almond pulp which I used in this cracker recipe 🙂

Dinner was really tasty!


Grilled Chicken topped with a bruchetta salsa served along side a massaged kale salad with orange, avocado and walnuts.  Yum!

My sweet tooth hit about an hour later and I fixed myself a bowl of applesauce with a sprinkle of apple pie granola.

  2. I almost always end my day with something sweet! Sometimes it’s a small handful of chocolate chips, sometimes it’s a little bowl of cereal, sometimes it’s some ice cream… Just depends on what I’m feeling!

      Haha! It’s not that bad, I promise! You could totally do it! It could easily be modified too but I think you could do it!

  5. Looks like a great day of eats! I love avocado with tuna. I usually always end my day with a little something sweet and yesterday it was blueberry frozen Greek yogurt.

      Haha! Love the not usually, always! I feel much better about my nightly snacking knowing I’m not alone!

  12. Love those sweet pictures of Love Nugget, especially the one on that TALL slide! How brave of him!!! My daughter was like that too at that age. She was fearless then and always has been.
    And yes, we always have something sweet at the end of the day in our house. It’s usually a bowl of cereal with vanilla almond milk, unless I’ve had time to make something else more exciting during the week! 🙂

    How’d you make the bruschetta salsa on the chicken?? Looks delicious. All your food does! 🙂

      It’s not as bad as it looks, you could totally do it and it will improve your speed!
      The bruschetta is super easy. Just tomatoes, garlic, basil, some olive oil, salt and pepper. Let it sit for an hour or so before serving so the flavors marinate together. So good and fresh tasting!

      Love frozen yogurt! We just had some tonight for a treat 🙂 I love making my own at home with frozen bananas. It’s not the same but it’s good!

  15. I love the protein balls! I have wanted to try NuttZo for a while now and after hearing all about it on different blogs, I think I’m going to add to my grocery list for next week!

    Keenan is fearless and loves to go down all of the tall slides or climb up the tall ladders at our neighborhood parks!
