I’ve got lots of marvelousness for you all today from our weekend but first things first!

Let’s talk about some marvelous happenings from our weekend. First of all, I woke up Saturday feeling much better! Still not 100% but think it was a combination of lingering cold and allergies. It was SOOOOO windy Friday which stirred up a lot of yuck!
I started my morning with a great Tabata workout followed by some core. Great way to start my day!
Then we made this Marvelous fresh juice that definitely hit the spot!
- 5 - 7 Large Organic Carrots
- 4 Oranges, peeled
- 2 inch chunk of fresh ginger
- Put veggies and fruit through a juicer, chill if desired and enjoy!
The Love Nugget LOVED this juice especially since we named it “Bunny Juice.” He kept asking for more!
Then the hubby and I got ready to head off for a day date! We had wine to pick up at Michael David in Lodi and decided to make a day of it. Luckily, Nani (AKA my mother in law), drove down to spend the day with The Love Nugget. Such a wonderful MIL! We had such a Marvelous day!
From top left, the hubby and I at our wine club event, yummy tasting, beer sampler at lunch, salad, chicken sandwich (the chicken came off the bread and on to the salad 🙂 and a few fries for lunch. Yum!
Then we came home and enjoyed a nice Mexican themed evening.
Love these chips but haven’t had them in so long! The salsa was tasty but too spicy for me, such a baby! A few sips of a margarita I made too strong so the hubby had to finish it. I’m so old lately!
Dinner was something I threw together but turned out to be delicious!
- 1 lb. peeled, devined and chopped shrimp
- 1/2 tbsp. coconut oil
- 1 zucchini, diced
- 1 red bell pepper, diced
- 2 tbsp. chopped onion
- 1 tbsp. Cumin
- 1 tsp. Chili Powder
- 2 tsp. honey
- 1/2 tsp. salt
- 1 shot of tequila, about 2 tbsp.
- Juice from 2 limes
- In a medium skillet, heat oil over medium high heat.
- Add in the onion and bell pepper.
- Sautee for a few minutes then add zucchini to the pan.
- Cook for 5 minutes longer or until veggies begin to soften.
- Add Cumin, chili powder, salt, honey, and lime.
- Continue cooking until shrimp is almost cooked completely.
- Then add tequila and sautee until nearly all liquid has evaporated.
- Serve over corn tortillas with fresh guacamole or salsa.
The hubby thought his was “picture perfect” and insisted I take a picture of his too 🙂
It did look pretty good!
Sunday we woke up to an absolutely beautiful day! I was itching to go for a run but I woke up late and we decided to go run a few errands then work in the yard. We have a few really busy week/weekends coming up and knew we wouldn’t have time so today was the day!
It actually felt great to get some outdoor work done and I got a ton of food prep accomplished as well.

Whew! I felt accomplished but… didn’t finish the hubby’s protein bars or any of the baby shower stuff I needed to get done. Mainly because after I finished the muffins we decided to go for a walk to get a little treat.
He was so excited he got his own cup today. So fun!
Our friend came over for dinner which was fun since we hadn’t seen him in awhile. The Love Nugget loves having visitors and ran around like a crazy man! We also enjoyed a yummy grilled dinner too since the weather was so nice.
Horrible pic but it was a spinach salad with strawberries, pecans and gorgonzola, sweet potato fries and a turkey, sweet potato burger for me. The boys had bacon, gorgonzola beef burgers. My burger sounded good but didn’t turn out all that good. Not very flavorful and a little charred. But the salad and potatoes were delicious!
It was such a marvelous weekend and definitely needed since we’ll be pretty busy the next few weeks/weekends. What made it even better was that I forced myself to unplug a little more than normal. I’ll often post Saturdays and Sundays but this weekend because we were busy and I needed it, I took some time off. It felt great!
