Blueberry Banana Bread

Ingredients

  • 2 mashed ripened bananas
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 1 tbsp vegetable oil
  • 1/4 cup non fat greek yogurt
  • 1 tsp vanilla
  • 8 packets of Stevia or close to 2 tbsp
  • 2 cups whole wheat flour
  • 1/4 cup flaxseed meal
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350 degrees and lightly coat a loaf pan with cooking spray. In a medium bowl, sift together dry ingredients. In a separate bowl, mix together all wet ingredients except blueberries. Mix the wet and dry ingredients together then gently fold in the blueberries. Spread evenly into the greased loaf pan and bake for 25 – 30 minutes or until a knife comes out clean. Cool then cut into slices and enjoy!
