I’ve got a few tasty things today for this What I Ate Wednesday! First, as always, thank you to the wonderful Jenn at Pea’s and Crayon’s for hosting this little shin dig 🙂
In case you missed it, I’m sick… again! Seriously so over this! Yesterday however, I took the advice of many and took a day off from working out. Instead The Love Nugget and I went to Mother Goose on the Loose at the Library then grocery shopping.

When we got home, I wanted to hop on my elliptical while the Love Nugget napped but instead I plopped down on the couch and relaxed… Well, for a little bit. Of course the day I decided to relax is the day The Love Nugget decides to protest his nap. Really!?!
Anyways, let’s talk about more eats from yesterday.
I woke up much earlier than normal, 5:00 and my aching throat kept me from going back to sleep. So… I got up and drank a cup of this immune boosting fizz drink.
It actually taste pretty good and was comforting on my throat. About an hour later, The Love Nugget awoke. So I made his breakfast then enjoyed mine.

On our way to the Library I enjoyed an Amazing Grass Energy Immunity drink that was very green but very good!

While out running errands I enjoyed one of these delicious bars.
I love chia seeds and the amazing health benefits they boost. If you’re not familiar with them, Chia seeds are packed with Omega-3 fatty acids, fiber and protein. In fact, in fact, just one tablespoon contains 2300mg of Omega-3’s. It’s recommended that adults get 1100 to 3000 mg of Omega-3 per day so you’re almost meeting that daily requirement with one tablespoon of Chia Seeds! Wow!
Since I love Chia Seeds, I was thrilled to have a chance to sample Health Warrior’s Chia Bars.
I was not disappointed! These bars are amazing! Not only do they taste great, they have wonderful nutrition stats. One bar contains only 100 calories but is loaded with 1000mg of Omega-3’s, 4g of fiber and 2g of protein. Each bar is gluten-free and sweetened with brown rice syrup. This is a sweetener I normally shy away from but since it’s such a small amount and I’m not eating it everyday, I’m okay with it 🙂
While they are all delicious I’d have to say my favorite was the Coconut. You know me and coconut!
Okay, on to lunch. I wasn’t all that hungry but knew with all the vitamins I was putting in my tummy I would not be a happy camper unless I ate something substantial. Luckily I had leftovers from lunch the day before!
Sautéed Kale and mushrooms with roasted sweet potatoes and avocado. Glad I ate it because I felt much better after.
Around 4:00 we had to go meet the hubby with The White Coyote for a vet apt. I refuse to take him solo since he can get a little crazy in there. A toddler and a crazy Jack Russell Terrier together are not all that much fun to handle when sick. So luckily the hubby got off early to help out 🙂 On our way there I grabbed half of one of the protein bars I’ve been making for the hubby lately.
He’s been loving these bars and while I enjoy them also, a whole one is more of a meal replacement for me since they are higher in calories than most snack bars. So half was the perfect snack while in the car 🙂
- 2 Scoops Vanilla Protein Powder
- 1/2 cup Old Fashioned Oats
- 1/2 cup Walnuts
- 1 cup Almonds
- 1/2 tsp. Sea Salt
- 1/3 cup Peanut Butter
- 1/4 cup Coconut Oil
- 3 tbsp. Honey
- 1/4 cup Chocolate Chips
- In a food processor, pulse nuts until finely chopped.
- Add in the protein powder, oats, sea salt and chocolate chips.
- Pulse until a fine, grainy mixture forms.
- In a microwave safe bowl (or on the stovetop) heat peanut butter, coconut oil and honey until melted.
- Add in vanilla and stir until creamy.
- Pour honey mixture into the food processor with the protein mixture.
- Run until well combined.
- Cover a 2qt. pan with foil or parchment paper.
- Press mixture into the pan and refrigerate until set.
- Cut into bars, wrap or store in Tupperware in the refrigerator for up to three weeks.
On the way home I started feeling worse and worse. So I caved and stopped at CVS for some over the counter drugs.
I’ve been trying to fight this thing as naturally as possible with the exception of my Immune drink I mentioned earlier, but it’s just not working 🙁
By the time we got home I was going downhill fast. I hung in there until 6:00 munched on a few veggies, then decided I was going to drink my night time meds and head to bed. I thought maybe I could just relax for a while sipping my drink and reading a magazine but I forgot I have a toddler…
He decided to join me after his bath and steal my magazine. He didn’t want to leave either so the hubby read him some books until bedtime. It was nice to have their company but as soon as they were gone I shut off the lights and went to sleep. Unfortunately, I woke up around 11:00 stuffed up and feeling miserable. I came downstairs and made myself more Alka-Seltzer (wish I would have read that you are supposed to take it every 4 hours before purchasing it) and read through some emails. I finally fell back asleep around 12:00 but slept like a rock until 7:30! Wish I could say I was miraculously better but…. I’m not 🙁 It’s actually a raining today so it’s a good day to stay in our Pj’s and lounge around. Maybe I’ll even cave and let The Love Nugget watch a movie!
Anyways, sorry for the massive amount of complaining. I’m just so frustrated as to why I keep getting sick! Has anyone else had as bad of a cold/flu season as I have?
