WIAW + Protein Bar Recipe

WIAW + Protein Bar Recipe

I’ve got a few tasty things today for this What I Ate Wednesday! First, as always, thank you to the wonderful Jenn at Pea’s and Crayon’s for hosting this little shin dig 🙂

Peas and Crayons

In case you missed it, I’m sick… again! Seriously so over this! Yesterday however, I took the advice of many and took a day off from working out. Instead The Love Nugget and I went to Mother Goose on the Loose at the Library then grocery shopping.

When we got home, I wanted to hop on my elliptical while the Love Nugget napped but instead I plopped down on the couch and relaxed… Well, for a little bit. Of course the day I decided to relax is the day The Love Nugget decides to protest his nap. Really!?!

Anyways, let’s talk about more eats from yesterday.

I woke up much earlier than normal, 5:00 and my aching throat kept me from going back to sleep. So… I got up and drank a cup of this immune boosting fizz drink.

WIAW2

It actually taste pretty good and was comforting on my throat. About an hour later, The Love Nugget awoke. So I made his breakfast then enjoyed mine.
Dark Chocolate Raspberry Smoothie topped with Granola from my Foodie Pen Pal! Stay tuned for my pen pal review at the end of this month 🙂

On our way to the Library I enjoyed an Amazing Grass Energy Immunity drink that was very green but very good!

Stay tuned for a review of Amazing Grass coming soon!

While out running errands I enjoyed one of these delicious bars.

I love chia seeds and the amazing health benefits they boost. If you’re not familiar with them, Chia seeds are packed with Omega-3 fatty acids, fiber and protein. In fact, in fact, just one tablespoon contains 2300mg of Omega-3’s. It’s recommended that adults get 1100 to 3000 mg of Omega-3 per day so you’re almost meeting that daily requirement with one tablespoon of Chia Seeds!  Wow!

Since I love Chia Seeds, I was thrilled to have a chance to sample Health Warrior’s Chia Bars.

I was not disappointed!  These bars are amazing!  Not only do they taste great, they have wonderful nutrition stats.   One bar contains only 100 calories but is loaded with 1000mg of Omega-3’s, 4g of fiber and 2g of protein.  Each bar is gluten-free and sweetened with brown rice syrup.  This is a sweetener I normally shy away from but since it’s such a small amount and I’m not eating it everyday, I’m okay with it 🙂

While they are all delicious I’d have to say my favorite was the Coconut.  You know me and coconut!

Okay, on to lunch.  I wasn’t all that hungry but knew with all the vitamins I was putting in my tummy I would not be a happy camper unless I ate something substantial.  Luckily I had leftovers from lunch the day before!

Sautéed Kale and mushrooms with roasted sweet potatoes and avocado.  Glad I ate it because I felt much better after.

Around 4:00 we had to go meet the hubby with The White Coyote for a vet apt.  I refuse to take him solo since he can get a little crazy in there.  A toddler and a crazy Jack Russell Terrier together are not all that much fun to handle when sick.  So luckily the hubby got off early to help out 🙂  On our way there I grabbed half of one of the protein bars I’ve been making for the hubby lately.

He’s been loving these bars and while I enjoy them also, a whole one is more of a meal replacement for me since they are higher in calories than most snack bars.  So half was the perfect snack while in the car 🙂

On the way home I started feeling worse and worse.  So I caved and stopped at CVS for some over the counter drugs.

I’ve been trying to fight this thing as naturally as possible with the exception of my Immune drink I mentioned earlier, but it’s just not working 🙁

By the time we got home I was going downhill fast.  I hung in there until 6:00 munched on a few veggies, then decided I was going to drink my night time meds and head to bed.  I thought maybe I could just relax for a while sipping my drink and reading a magazine but I forgot I have a toddler…

photo 21

He decided to join me after his bath and steal my magazine.  He didn’t want to leave either so the hubby read him some books until bedtime.  It was nice to have their company but as soon as they were gone I shut off the lights and went to sleep.  Unfortunately, I woke up around 11:00 stuffed up and feeling miserable.  I came downstairs and made myself more Alka-Seltzer (wish I would have read that you are supposed to take it every 4 hours before purchasing it) and read through some emails.  I finally fell back asleep around 12:00 but slept like a rock until 7:30!  Wish I could say I was miraculously better but…. I’m not 🙁  It’s actually a raining today so it’s a good day to stay in our Pj’s and lounge around.  Maybe I’ll even cave and let The Love Nugget watch a movie!

Anyways, sorry for the massive amount of complaining.  I’m just so frustrated as to why I keep getting sick!  Has anyone else had as bad of a cold/flu season as I have?

Don’t forget you’ve still got time to enter my giveaway for three bars of Lily’s Sweet Dark Chocolates!  They are oh so good!

  1. My chiropractors are very health and wellness minded and there’s a supplement they recommended to take as soon as you feel the start of the cold coming on. I need to remember what it’s called so I can tell you!! So sorry to hear you’re feeling sick again. Rest up and relax. Maybe even see a chiropractor for an adjustment? Seeing mine helped SO much!

    • Giselle Schroer says:

Thanks Katie! That’s actually a really good idea. I haven’t been adjusted in quite sometime and have been feeling a little out of sorts lately. I think I might just go do that!

  2. Hope you feel better soon!

Those chia bars look great – will have to try and find them around me!

  3. I’m sorry you caught such a bad cold! With all the vitamins, resting and keeping warm I hope you’ll be back to normal soon. Sorry I can’t offer any more advice.

Such a cute idea to go to the library with the Love Nugget and he seems to have enjoyed it, too :).

    • Giselle Schroer says:

Thank you! I’m hoping to be better by this weekend 🙂 He loves the library! They put on a 30 minute story hour every Tuesday that he really enjoys. It’s just getting there some days that’s the hard part! Glad we went though!

  4. It’s so tough to be sick when you have a toddler to take care of! I’m glad your husband got home early to give you a break. Hope you start feeling better soon!

    • Giselle Schroer says:

Yes, toddlers and resting when you sick don’t really go together. Very thankful I have a helpful hubby!

  5. So sorry to hear you are sick again! I thought maybe you’d feel better before it really kicked in. 🙁 The picture of you and The Nugget is adorable!

    • Giselle Schroer says:

Thanks Michelle! I know I was hoping I could fight it off on Monday but no such luck 🙁

  6. I was sick twice this year which is very unlike me! My go-to is lots of orange juice and greens when I feel it coming on! Plus, Zinc tabs, lots of water and SLEEP!

    • Giselle Schroer says:

Usually I can fight it off and avoid the full blown sickness but this year has been horrible! I’m wondering if I should have gotten the flu shot…. who knows!

  7. Oh goodness! I am so sorry that you are still under the weather, We haven’t been “sick” in our house, but in our area, there are annoying allergens all year long! Who knows though, maybe that’s everywhere! Now the trees are blooming….beautiful, but not great for allergies!

    • Giselle Schroer says:

I thought maybe it was just allergies at first but of course that’s not how my luck goes lately. Oh well, at least it’s the first day of Spring and with that will come the end of cold/flu season, hopefully!

  8. I hope you feel better soon! We have definitely had our fair share of being sick this year, too! I take Zicam and extra vitamin C, along with drinking lots of tea when I’m sick. But, sometimes I cave and take cold meds, if nothing else helps. I hope you are able to get some rest! Take care!

    • Giselle Schroer says:

Thanks Melissa! It’s been quite the cold/flu season for sure! I’m wondering if getting the flu shot would have helped protect me from these colds that I’ve gotten or not. Who knows! Zicam is the one thing I didn’t take this time just because we were out. I should have gone and gotten some Sunday when I started to feel that tickle. Hopefully I’ll be better by this weekend!

  9. those chia bars look good! so do your protein bars! protein bars are on my to-do list to try making one of these days

  10. I have those herbalozenges and they worked wonders for my throat when I was sick. Speaking of, I remember we were sick around the same time and I am so sorry it is back for you again! Your son is adorable though, and any toddler with a fondness for magazines is being raised right, in my opinion ;-).

  11. Aw bummer! Getting sick is the worst! I woke up with a sore throat this AM too but I knew that I was on the verge of getting sick because of all the stress that was going on in my life. LUCKILY, I am not going to get sick because my symptoms have subsided and I have taken care of the stress 🙂

Your make your own protein bars look pretty LEGIT by the way! Have you ever heard of Sun Warrior Protein? Delicious!

    • Giselle Schroer says:

Thank you! Yes, I love Sun Warrior Protein! That was actually my go to protein before I became a recipe contributor for Fitmixer. Now I just use theirs mainly. It’s very tasty and pretty clean 🙂

  12. I feel you! I have been getting sick a lot more than usual this season too. I usually try to drink tons and tons of water w/ lemon, green tea, and pack everything I eat with spinach. Not sure if it helps but mentally I feel healthier!

I’ve been dying to try a new protein bar recipe since all the store bought ones are packed with crap (except these Chia ones which I will have to try). Your recipe looks awesome, thanks for posting!

    • Giselle Schroer says:

Thank you Whitney! I so agree with you as far as many of the store bought brands packed with so much crap! I love making them at home but if we don’t have time our go to one is usually Quest Bars. Packed with protein and pretty good ingredients!

  13. Oh no! Hope you are feeling better asap! Just pinned your protein bar recipe. Looks great!
