Hope everyone had a marvelous St. Patrick’s Day weekend!

We had a great one filled with visiting my Grandpa Saturday, dinner with friends Saturday evening, a great workout at the gym Sunday morning then an afternoon hanging out around the house. 

Unfortunately yesterday I started to feel  a little under the weather and was hoping maybe I was suffering from some allergies.  No luck there!  I was awake most of last night with a pretty bad sore throat and woke up this morning feeling sick 🙁  Seriously I have had the worst luck this year with getting sick!  I take my vitamins, wash my hands and am pretty careful with the Love Nugget as far as washing and sanitizing his hands as well.  I’m wondering if I’m just pushing myself in too many directions lately and wearing my body out.  The Love Nugget keeps me very busy and I’ve been trying to plan a baby shower, his birthday party, catch up on blogging, and keep up with household chores.  I’d say in the past few months other than going to the gym for an hour or two, I haven’t had any “me” time to really relax and decompress.  Maybe my body is telling me I need a break?

As I mentioned I’ve got a few giveaways of some favorite products of mine and today I’ll be sharing another one with you!  BUT…. you’ll have to keep reading to find out what it is 🙂

First, I recently learned some information about the boxed Almond and Coconut milk I enjoy in my morning coffee and smoothies.  Did you know that boxed dairy alternatives such as these contain harmful, disturbing ingredients?  For example, Vitamin A Palmitate which is synthetic version of Vitamin A, is found in almost all  non-dairy carton milk.  Basically it’s a chemical version of the real thing which can lead to imbalances in your body.  Also found in most cartons of milk is Carrageenan, a substance derived from seaweed that is very similar to plastic.  In studies conducted on rats, scientists have found some links to gastrointestinal cancers and inflammation.  It is also the same ingredient used to de-ice frozen airplanes.  Hmmm…. That doesn’t really sound like something I want to put in my body.

So I started searching for milks that didn’t contain these ingredients.  I managed to find one at Whole Foods but decided I would give making my own Almond Milk a try.  Guess what?  It was really easy and really good!

Homemade Vanilla Almond Milk

Homemade Vanilla Almond Milk

Ingredients

  • 6-7 Pitted Dates
  • 1 Cup Raw Almonds
  • 1 tsp. Vanilla
  • 1 tsp. Cinnamon
  • 4-5 cups water

Instructions

  1. Place in a bowl and cover with filtered water.
  2. Place the dates in a separate bowl and do the same.
  3. Allow to soak over night.
  4. After soaking, place almonds, dates, vanilla and cinnamon into a blender with the water they were soaked in. Add in another cup of water or more depending on if you'd like your end results to be a thick creamer consistency or more milk like. If you want it more milk like add in more water.
  5. Then, pour a little bit of the milk at a time through a fine mesh strainer.
  6. After most of the liquid has seeped through, dump the pulp into a cheese cloth.
  7. Squeeze out as much of the milk as possible.
  8. Continue this process with the remaining almond milk mixture.
  9. Enjoy in a warm cup of coffee, in a smoothie or by itself!

I’m working on a cracker recipe using the leftover almond pulp.  I feel so bad just tossing it and my first batch came out pretty tasty just need to perfect it a little 🙂

    I have never made my own milk but I must say that I would have to find a use for leftover pulp, crackers sound like a good option but so do cookies!

  10. Would you mind mailing me some of your homemade almond milk? It sounds awesome! I’ve only ever prepared soy and rice milk with a machine years ago. If I can still find the machine somewhere at my parents’ I’d definitely try almond or hazelnut milk.

    Super boring here but my favourite dark chocolate is plain 85 or 90 %. But I’m a huge fan or crispy rice and almonds so those flavours sound interesting, too.

  12. Ooh, yum! Dark chocolate mint and dark chocolate coconut are my top two. So sorry you’re sick again. 🙁 It does sound like maybe you need a little break. I usually use L’s nap to work on blog stuff, but last week took a complete day off and rested, read, etc when I had downtime. It was so needed!!

      Thanks Laura! I know, I need to rest. I just always feel like I have so much to do! Usually when my son goes to nap I’m squeezing in some exercise, blogging, cleaning, laundry, cooking… you name it! I’m sure you know how that goes 🙂 I do have a stack of magazines I need to catch up on…

  16. I just recently made the switch from Almond Breeze almond milk over to Silk’s version because of the carrageenan, but I had NO IDEA about the Vitamin A Palmitate…WOW!

    I made my first batch of homemade almond milk about a year ago…only I didn’t really think it all the way through first and figured it would work in a food processor…WRONG!! Well, it worked…but I also ended up with an almond milk coated kitchen countertop! Lol Now that I have a blender, I hope to try it again soon…and while I actually prefer mine unsweetened, I may have to take a cue from you and throw in some cinnamon! That sounds well…MARVELOUS! 😉

    I hope you get to feeling better soon, sweetie! It very well be your body telling you to take it easy a bit…sounds like your plate has been a little more than full these days. Just remember, the longer you push it off, the worse it will bite you in the end. Better to carve out some time and rest now, than pay for it later!

    I’ve not heard of these chocolate bars before. While I’m not a huge fan of chocolate, I do appreciate a high quality DARK chocolate from time to time…and I like that these are sweetened with stevia! I think the almond one sounds the best…though the thought of the crunchy crispy one sounds pretty good right now!

      Haha! I almost used my food processor then thought about the mess that would make. ONLY because I’ve done something similar before! I found some without the carrageenan but not the vitamin A Palmitate AND I’ve heard not so great things about Vitamin D2 which is in them too. So horrible that we have to worry about so many bad things in our foods!

      I know… I need to rest a little but it’s just so hard! I’m so used to exercising that I feel crappy when I don’t. I need to get over that and realize that I’ll keep feeling crappy if I don’t rest! Well, not that I get much rest with my son running around!

      I LOVE these chocolate bars. Well, I love most chocolate bars but I feel better about eating these since they are made with stevia and have less calories 🙂

  17. First of all, I hope you start to feel better very soon! I HATE when I wake up in the middle of the night with a sore throat!
    Oh my goodeness! That’s news to me about the almond milk! That’s all I drink now! I guess I better start making my own ASAP!!!!! How much milk do you get out of your recipe? I buy 2 half gallons a week! (Hubby drinks it too!)
    I have never seen this brand of chocolate bar before, but I would say my fave would have to be the almond dark chcolate bar! 🙂

      Thanks Amy! So frustrating!
      This batch didn’t make as much as my first batch did because I wanted it a little thicker to use in my coffee. If you add another cup of water it wouldn’t alter the flavor all that much and would make a little more 🙂 I’m reading a great book right now called Rich Food Poor Food and they provide a resource page with healthy non-dairy milk options that don’t include the bad ingredients.

  21. We don’t drink boxed milk but not I don’t think we ever will – eek, thanks for sharing! I’ve never made homemade milk but it looks super easy so I wouldn’t be opposed to trying… And after reading your steps, I was hoping that you’d do something with the leftover almonds + dates. Maybe something baked, like pancakes or muffins?!

    My favorite chocolate is dark, dark chocolate – the more bitter the better!

      It’s super easy to make your own almond milk. I haven’t tried any others yet but bought lots of coconut yesterday to possibly give it a try this weekend. Hoping it goes well!
