Banana Zucchini Muffins

Banana Zucchini Muffins


  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup shredded zucchini
  • 1 egg
  • 1 mashed banana
  • 1/3 cup applesauce
  • 1/2 cup milk
  • 1 tsp vanilla


  1. Preheat oven to 350 degrees.
  2. Mix the dry ingredients together in one bowl and the wet together in a separate bowl.
  3. Add the wet to the dry and mix well.
  4. Pour into a greased muffin pan.
  5. The recipe could make 12 but I made 9 large muffins instead. Since there was no sugar added to these muffins they aren’t very sweet. You could serve them with some jam or nut butter or if you wanted you could add 1/2 cup of sugar to the recipe.

      Ooops! Thanks for pointing that out! I believe it was around 25 -30 minutes. They will lightly brown and will a knife will come out clean when stuck in to check.
