WIAW – Chocolate Coconut Banana Bites

Happy hump day!

We had another successful day yesterday with The Love Nugget in his big boy underwear!  In case you missed it, yesterday I gave an update regarding his potty training.  Today was the first day he went to the gym daycare in his underwear and he did great!  Not only that but he didn’t wear a pull up for his nap and woke up dry for the second day in a row!  I’m beyond amazed at how awesome he’s done with potty training and can only hope we continue on this path 🙂

Anyways, enough potty talk, let’s get on with Wednesday stuff!  Mainly, What I Ate Wednesday!  I’ve got a great recipe for you guys today but first, a big thanks to Jenn for hosting WIAW!

 Peas and Crayons

For the month of March What I Ate Wednesday will be filled with lots of green!  Not hard for me since I’m pretty good at getting my greens in but I hope to be adding some more green recipes on Wednesdays as the month goes on.

Before I get on with my eats from yesterday, I wanted to touch a little on the way I’ve been eating since I concluded my Paleo challenge about a month ago.  As I mentioned in my recap post, I decided that I was going to eat Paleoish most of the time.  I wasn’t going to stress if I ate a little gluten and was definitely going to add back in some dairy in the form of yogurt and goat cheese.  Which is pretty much what I’ve been doing and I thought I would fill you in how I’ve been feeling.  Well, I still feel good but have noticed a few things which may or may not be attributed to my non paleo eats.  First, I’ve put back on a few pounds that I had lost.  My weight fluctuates so much that I’m not too concerned about it. The pounds might be also contributed to muscle growth as my clothes are still fitting the same but I’ve been lifting weights a lot more often.  Next, If I have a day where I eat some gluten, I notice it the next day.  For example, last Sunday, I drank a beer, ate a few pita chips, and a few tortilla chips.  Monday I felt and looked puffy.  I’ve also been feeling a little more sluggish but that could also be contributed to the fact that I was sick for three weeks AND actually feel like I have an ear infection now so… who knows!

I have been eating a little more sugar than I was before (frozen yogurt, ginger chews, and dark chocolate) and am going to try to cut back on that.  Despite the extra sugar, I actually enjoy the way I’m eating right now.  Still very clean with minimally processed foods and 95% paleo.

So, enough Paleo talk.  Here are my eats from yesterday 🙂

Breakfast was a sweet scramble topped with organic strawberries.


Seriously so excited to find organic berries at Costco!  I’ll probably be going back this weekend to get some more!

After an awesome boot camp class and run at the gym, I needed to refuel with some protein.  So I enjoyed a delicious protein smoothie made with About Time Peaches and Cream Whey Protein powder, a little frozen banana, coconut milk and a few ice cubes.  Yum!

Lunch was a thrown together salad with spinach, shrimp, avocado, Kabocha squash a hard-boiled egg and lemon juice.  I munched on celery and tomatoes while I prepared it too.  Lots of greens here!


After lunch and cleaning up, we headed to out for free train rides and a trip to Whole Foods.  The Love Nugget needed milk and I wanted an excuse to get one of their Kombucha’s on tap 🙂

Speaking of which, you may have noticed I’ve been consuming quite a few of these lately.  I seriously can’t get enough and while my body is happy, my wallet, not so much… These babies are expensive!  However, I really think they have been aiding my digestive system and are quite enjoyable too!  In case you’re new to Kombucha, I thought I’d fill you in on just what this expensive drink is.

Kombucha is a fermented beverage made from a kombucha culture and yeast added to black or green tea.  It is known to have many health benefits including detoxification, increased energy, hair growth, strengthening the immune system and aiding in digestion.  Some even claim it can help arthritis patients, improve skin and prevent cancer.  (Source)

According to Kombuchahealthdrink.com, “Kombucha works by altering the pH of the large and small intestine to a slightly more acidic level.
Scientifically, The bacteria causing acid reflux indigestion and gas also known as ” putrefactive ” tends to be inhibited or destroyed.”

Kombucha is a drink that can be brewed at home however, there have been a few cases of people developing health problems associated with drinking a home brew kombucha.  It’s much safer to consume the commercially prepared drinks but not as pleasant on ones wallet 🙁  NBCNews published an article a few years ago that lays out some helpful information for anyone interested in learning more about Kombucha.

Personally, I enjoy it and like I said, do feel better since beginning to incorporate it into my diet 🙂

Okay, back to my eats.  A little later, I enjoyed one of these delicious Lemon Blueberry Protein Balls that I shared over on Fitmixer today.


These are really good and I highly recommend heading over to Fitmixer to see how to make them!  I love being their weekly recipe contributor as I get to create so many delicious, protein packed recipes!

Dinner was a favorite in our house.


Tilapia Tacos with an avocado cream sauce.  Yum!  I was going to do two lettuce wraps but couldn’t pass up one of the green chili corn tortillas that are soo good but a little spicy.  I have such a weak mouth when it comes to spice.

The Tilapia is sautéed with some zucchini in coconut oil with a dash of lime and cumin.  The Cream sauce is mashed avo, plain greek yogurt, a little premade salsa, cumin and chili powder.  Perfect compliment to the fish!

The hubby is fighting off a cold AND… you won’t believe this but… I’m not feeling that great myself.  I have a horrible ear ache that I think is due to lingering sinus infection symptoms.  Ugh, so over this!  So we ended our evening by relaxing on the couch with a warm cup of tea and a few of these tasty treats.

Coconut Frozen Banana Bites

Coconut Frozen Banana Bites


  • 2 bananas
  • 1 tbsp. Coconut Oil
  • 1 tbsp. Cocoa Powder
  • 1 tsp. Honey
  • 1/3 cup Unsweetened Coconut


  1. Melt the coconut oil then add the cocoa powder and honey.
  2. Whisk until mixed well and set aside.
  3. Pour coconut flakes into a separate bowl.
  4. Slice bananas into 1 inch bite size pieces.
  5. Dip bananas into chocolate mixture then roll into coconut flakes.
  6. Place onto a parchment lined tray or plate and freeze for 30 minutes or more.
  7. Enjoy!

These are delicious and the perfect comfort treat to end the evening 🙂

  3. I tried Kombucha for the first time the night of the SuperBowl. I LOVED it! But I haven’t had it again since–I’ve heard it’s pretty expensive. Lindsay (Cotter Crunch) recently did a post with a tutorial on making it at home, if you have the time for it! I also have heard that Reed’s brand is outstanding. I’m actually going to Whole Foods today after work, and might grab one now! 🙂

    Lately, I canNOT seem to get enough tomatoes, whether it be fresh ones, salsa, or ketchup! I think I’m just REALLY wanting it to be summer already! Lol And I LOVE kombucha! My favorite is GT’s Lavender flavor…soo good!

      Thanks Heather! Yes, they are really good and somewhat addicting!

      Hubs is on the mend which is perfect since we get to go out this weekend for a date night without the kid! Yay!

      I plow through my sugar plum tomatoes weekly. Love them with celery and carrots! I agree, it’s probably a craving for summer to arrive! We even bought some heirloom tomatoes the other day for Caprese salads. Our favorite summertime dish! I remember all your Kombucha for V-day! So awesome! I haven’t tried the Lavender but will have to next time I’m at Whole Foods.

      I’m right there with you! Avocado especially! Lately I’ve been getting the big bag at Costco and going through it almost weekly. Such a great deal!

      I know right!?! I just found out at my Whole Foods you can purchase a Growler of it then come back to refill by the ounce. Might save a little money and it’s really good! Very fresh tasting 🙂
