Marvelous Monday with Some Yummy Eats!

Well hello Monday!  You snuck up much fast than I had expected you to.  Not necessarily a good thing this week but what can you do?  With Monday comes some marvelousness so of course I’m joining Katie and her adorable pregnant self in Marvelous In My Monday!

Let’s talk about some marvelous happenings lately shall we?

Marvelous - These two recipes we had for dinner the other night.  The salad was amazing and the mango salsa for the fist complemented it perfectly!  Yum!

Massaged Kale Salad

Massaged Kale Salad

Ingredients

  • 3 cups torn Kale
  • 1/4 cup toasted Pecans
  • 1 small Honeycrisp, Fuji or Gala Apple
  • 2 tbsp. Unsweetened Dried Cranberries
  • 1 tbsp. Olive Oil
  • 2 tbsp. Apple Cider Vinegar
  • 1 tsp. Honey
  • 1-2 tbsp. Fresh Lemon Juice
  • salt and pepper to taste

Instructions

  1. Wash and tear Kale into bit size pieces.
  2. In a bowl, pour olive oil over kale and massage gently into the leaves for a few minutes.
  3. Top with apples, cranberries and toasted pecans then set aside.
  4. Whisk together honey, apple cider vinegar and lemon juice.
  5. Toss the dressing into the salad then sprinkle with salt and pepper to taste.

Grilled Mahi Mahi with Mange Avocado Salsa

Grilled Mahi Mahi with Mange Avocado Salsa

Ingredients

  • 2 Mahi Mahi filets
  • 2 tsp. Coconut oil
  • 1 tbsp. Fresh lime Juice
  • 1 tsp. Cumin
  • 1 tsp. Chili powder
  • 1/2 tsp. Garlic powder
  • Mango Avocado Salsa
  • 1/2 mango diced
  • 1/4 cup diced cherry tomatoes
  • 1 clove garlic, diced
  • 1/2 diced avocado
  • 2 tbsp. chopped cilantro
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt
  • 1 tsp. olive oil
  • juice from half a lime

Instructions

  1. In a small bowl, mix together the salsa ingredients then set aside.
  2. Melt coconut oil in a grill pan over medium heat.
  3. Rinse the fish and pat dry.
  4. Sprinkle with lime juice, cumin, chili powder, garlic powder, salt and pepper.
  5. Place fish onto the grill pan and cook for 3-4 minutes on each side or until the fish is opaque and flakey.
  6. Top with salsa and enjoy!

Although I’m not surprised….

It was a nice Sunday outing that we’ll definitely be doing more of as the weather warms up!

Oh my gosh, those recipes sound amazing! I love fish, but I’m so bad at cooking it without a grill (we don’t use ours in the winter)–it always ends up so freaking smelly!! Gotta work on that…

And WOW, congrats on the potty training!! Can’t wait to hear more about it tomorrow. Please share your tips. :)

So cute that you played that game with your hubby! I wonder if I could convince mine to do something like that, haha.

We don’t use our outdoor grill during the winter either so this grill pan was a score!
My hubby and I are kind of game nerds. I think it’s because we’re both pretty competitive but this one was fun since there was no real winner or loser! Although I did get a nice foot and back massage out of it so that’s a win in my book!

both of those meals look so amazing! my favorite fish to eat is probably ahi tuna….but salmon is a close second :)

I just made a massaged kale salad last night with dinner . . . it was delicious! I’ll post about it this week. I love the ingredients you included, especially the apple! The mahi mahi sounds delicious–I’m a big fan!!

The recipes look delish! I’ve never tried kale salad before but it looks yummy! The mango avocado salsa sounds great too.
As for fish, I like mahi mahi, salmon and tilapia.

I wasn’t a very big fan of kale salads before because it’s so bitter and tough but after it was massaged I loved it!

Ooh, your kale salad looks wonderful! I love the Mahi Mahi, too!! One thing that is marvelous is that Keenan said, “I love you, Mommy” while giving me a kiss last night before he went to bed!

That Kale salad sounds great! I have seen recipes that tell you to massage the kale…have never done it. Is it supposed to release more flavor, or ? I guess I’ve always cooked it vs. eating it raw so maybe it isn’t necessary if cooking. Thanks!
