Guess what… I’m still sick! I can’t even believe how long this cold is hanging on. Ridiculous! I’m pretty much just trying to ignore it at this point. It’s definitely not as bad as it was but still there. Ugh! I’ve heard a lot of people saying their cold hung on forever which isn’t really great news. I’m just loading up on Vitamin C, Zinc and lots of fluids!
Anyways, regardless of being sick, yesterday was a pretty good day and included some really yummy eats. So I’m linking up with Jenn at Peas and Crayons for What I Ate Wednesday!
Yesterday, I woke up feeling pretty good. I enjoyed my coffee as I got some blogging done and by the time The Love Nugget woke up, I was feeling congested again 🙁 Oh well. I decided to make us some breakfast and head to Boot camp to see if that helped. Breakfast was an egg white scramble with spinach, zucchini, chicken apple sausage and a little goat cheese along with some fruit.
It’s been so nice to enjoy goat cheese again. I haven’t noticed any stomach discomfort since adding a little back into my diet which is pretty exciting! So I’ve been having a little here and there 🙂
After breakfast we headed to the gym where I got in a good 20 minutes of foam rolling before bootcamp. I had hoped to run after but they came to get me for the Love Nugget because he was saying he needed to poopy. He was in a pull-up but figured I’d let them know he might want to try to go and he did. Unfortunately, they can’t do it, so they have to quickly call me. I didn’t have his seat and he was freaked by the big seat so we came home. By the time we had gotten home, he had peed in his pull-up. Oh well.
We both had a little snack before he went down for nap and I hopped on my elliptical.
Snack today was one that I’ve been loving lately.
- 4 - 5 sweet potatoes
- 2 Apples
- 2 tsp. Cinnamon
- Peel and dice sweet potatoes and apples.
- Place apples, sweet potatoes and cinnamon into the crock pot.
- Stir then cook on low for 5 - 6 hours.
- Enjoy as they are or top with a little Sea Salt and Almond Butter.
It’s the perfect healthy carb snack to have post workout or anytime really!
Lunch was a really good one! I had some left over cooked lobster from our fondue the other night. So I decided to make a lobster salad and enjoy it in a lettuce wrap!
In the mix was lobster, a little of the green goddess dip from fondue (organic cream cheese, greek yogurt and chives), dill, avocado, and tomatoes. Yum! It was really good! Of coarse I had to have some carrot sticks on the side because I can’t get enough of these lately! Seriously, I eat at least two large carrots a day!
After lunch we made the hubby some cookies to take with him on his trip.
Someone had a little fun stirring the flour!
These were the full fat, full sugar, full major indulgence cookie. Peanut Butter Chocolate Chip Cookies that are so good!
I might have had a bite of the cookie dough… and a cookie 🙂
A few hours later the Love Nugget wanted a snack so I decided to have one too. On my birthday a wonderful package showed up at our door. The New Chocolate Chip Cookie Dough Quest Bars!
Oh I was so excited! We opened them immediately and broke into one. Wow! Both the Hubby and I were blown away with how good they are. Much softer than some of there other bars but still super flavorful and healthy! I’m a huge fan of Quest Bars for the ingredients they use and the caloric value. Most bars are under 200 calories and are sweetened with Stevia. Yay! We’ll definitely be ordering a few more boxes of this flavor as I think the hubby has eaten at least one everyday and the box is quickly dwindling away 🙁
Dinner tonight was scheduled to be salmon and sweet potatoes but I didn’t make it to the grocery store today so we had chicken, again.
It was actually pretty good though. Just chicken sautéed in coconut oil and a salad with pecans, avocado, tomatoes and dried cherries. Yum!

The hubby and I finished watching the Biggest Loser. I also sipped on some tea, probably my 10th cup of the day! Trying to get in those liquids to get healthy!
