Happy Wednesday!

Guess what… I’m still sick!  I can’t even believe how long this cold is hanging on.  Ridiculous!  I’m pretty much just trying to ignore it at this point.  It’s definitely not as bad as it was but still there.  Ugh!  I’ve heard a lot of people saying their cold hung on forever which isn’t really great news.  I’m just loading up on Vitamin C, Zinc and lots of fluids!

Anyways, regardless of being sick, yesterday was a pretty good day and included some really yummy eats.  So I’m linking up with Jenn at Peas and Crayons for What I Ate Wednesday!

Yesterday, I woke up feeling pretty good.  I enjoyed my coffee as I got some blogging done and by the time The Love Nugget woke up, I was feeling congested again 🙁  Oh well.  I decided to make us some breakfast and head to Boot camp to see if that helped.  Breakfast was an egg white scramble with spinach, zucchini, chicken apple sausage and a little goat cheese along with some fruit.

It’s been so nice to enjoy goat cheese again.  I haven’t noticed any stomach discomfort since adding a little back into my diet which is pretty exciting!  So I’ve been having a little here and there 🙂

After breakfast we headed to the gym where I got in a good 20 minutes of foam rolling before bootcamp.  I had hoped to run after but they came to get me for the Love Nugget because he was saying he needed to poopy.  He was in a pull-up but figured I’d let them know he might want to try to go and he did.  Unfortunately, they can’t do it, so they have to quickly call me.  I didn’t have his seat and he was freaked by the big seat so we came home.  By the time we had gotten home, he had peed in his pull-up.  Oh well.

We both had a little snack before he went down for nap and I hopped on my elliptical.

Snack today was one that I’ve been loving lately.

Cinnamon Apples and Sweet Potatoes

Cinnamon Apples and Sweet Potatoes


  • 4 - 5 sweet potatoes
  • 2 Apples
  • 2 tsp. Cinnamon


  1. Peel and dice sweet potatoes and apples.
  2. Place apples, sweet potatoes and cinnamon into the crock pot.
  3. Stir then cook on low for 5 - 6 hours.
  4. Enjoy as they are or top with a little Sea Salt and Almond Butter.

It’s the perfect healthy carb snack to have post workout or anytime really!

Lunch was a really good one!  I had some left over cooked lobster from our fondue the other night.  So I decided to make a lobster salad and enjoy it in a lettuce wrap!

In the mix was lobster, a little of the green goddess dip from fondue (organic cream cheese, greek yogurt and chives), dill, avocado, and tomatoes.  Yum!  It was really good!  Of coarse I had to have some carrot sticks on the side because I can’t get enough of these lately!  Seriously, I eat at least two large carrots a day!

After lunch we made the hubby some cookies to take with him on his trip.

These were the full fat, full sugar, full major indulgence cookie.  Peanut Butter Chocolate Chip Cookies that are so good!

I might have had a bite of the cookie dough… and a cookie 🙂

A  few hours later the Love Nugget wanted a snack so I decided to have one too.   On my birthday a wonderful package showed up at our door.  The New Chocolate Chip Cookie Dough Quest Bars!

Oh I was so excited!  We opened them immediately and broke into one.  Wow!  Both the Hubby and I were blown away with how good they are.  Much softer than some of there other bars but still super flavorful and healthy!  I’m a huge fan of Quest Bars for the ingredients they use and the caloric value.  Most bars are under 200 calories and are sweetened with Stevia.  Yay!  We’ll definitely be ordering a few more boxes of this flavor as I think the hubby has eaten at least one everyday and the box is quickly dwindling away 🙁

Dinner tonight was scheduled to be salmon and sweet potatoes but I didn’t make it to the grocery store today so we had chicken, again.

It was actually pretty good though.  Just chicken sautéed in coconut oil and a salad with pecans, avocado, tomatoes and dried cherries.  Yum!

The hubby and I finished watching the Biggest Loser.  I also sipped on some tea, probably my 10th cup of the day!  Trying to get in those liquids to get healthy!

  1. Oh no! I’m sorry you’re still under the weather. That stinks. I drink lots of hot lemon water (add a little stevia if you’d like) when I have a cold, and it seems to really help.

    I love the idea of combining apples and sweet potatoes for a snack. And anything with lots of cinnamon has got to be delicious, in my book. Good one!

    I really want to try the new Quest bars!!! Quest bars are basically the only packaged bar I’ll eat. They are so tasty, and I like the ingredient list and stats. And now, this new flavor looks fabulous!!

      Thank you! I went back to the dr. today and got a new antibiotic so hopefully soon! Yes, lots of lemon water with honey and tea. So much tea!
      OMG the new Chocolate Chip Cookie Dough is amazing! You must try it!

  3. Oh man! I’m so sorry to hear you’re not feeling well STILL! I hope you can bust this cold asap!
    As for the sweet potatoes and apples – such a good idea! I love having apples or sweet potatoes with peanut butter, why have I never put them together?!

      Thanks Katie! I know, it’s so silly how long I’ve been sick! Sweet potatoes and almond butter or peanut butter is the best!

  4. I never thought about putting sweet potatoes, apples and pb together. Sounds so good. And, your week’s eats look delicious too. Yumm…cookies!
    As for my favorite eats, it has been peanut butter sandwiches on organic whole grain bread or dark chocolate covered almonds. Yummy!

      Mmmm… Dark Chocolate Covered Almonds are so good! We recently discovered these lemon crème almonds that are to die for!

  5. Did I tell you I made the sweet potato-apple crockpot after reading about your breakfast last week? Yummy! My daughter loved it, too. Hope that cold is gone soon!

      Yay! I’m so glad you both like it! My little guy loves it too! I am planning to be better soon! On a new round of antibiotics so hopefully that plan will work 🙂

  8. I love the sweet combination of sweet potatoes and apples. The addition of almond butter and cinnamon sounds fantastic.

    I am really intrigued by those peanut butter ginger chews. What do they taste like? Where do you find them?

      I actually picked them up at TJ Maxx. They are really good! They aren’t as strong as the plain Ginger Chews that I’ve had before but not overly peanut buttery either. I’ve been eating them like their going out of style!

  10. I remember being so ecstatic when I realized that it was only cow’s dairy that my stomach hated, and that goat and sheep’s milk cheese was perfectly fine for me. I absolutely love sweet potatoes paired with nut butter and cinnamon, and apples sound amazing too! Those peanut butter ginger chews are seriously addicting, hopefully they help you finally kick your seemingly never ending cold!

    I’ve never tried cooking chicken in coconut oil for some reason…gotta do that!

    All your food looks amazing. 🙂 As for my favorite eat: yesterday I had brown rice, an over easy egg, goat cheese, and some dijon, and it was SO good!!

  12. yummy, i would love to try those quest bars, they seem to be getting extremely popular and I’ve seen the nutritional value is great, but I haven’t seen them at the store so i may have to order them online!

      They are so good! You can get some flavors at GNC but I’m not sure they have the Chocolate Chip Cookie dough yet…
