I don’t usually like to tell people when it’s my birthday especially since the older I get, the less exciting birthday’s get. However, I have to admit that this birthday has been pretty great so far! Well, despite being sick 🙁 The hubby surprised me with a really awesome few days last weekend. Second, my goal of reaching 200 likes on Facebook was reached which I really didn’t think would happen. So needless to say that was a great birthday surprise! As promised, today I’ll be sharing something really AWESOME with you all. But first, let me thank Jenn for hosting another week of What I ate Wednesday!
It’s love your veggies month which is perfect for me since I sure have been loving my veggies lately!
My day started early with the Love Nugget awake before I was ready for him. Usually I get up around 6:00 to check emails, make sure my post goes up and enjoy my coffee in peace. Well, The Nugget was wide awake at 6:15 and asking to eat so we had to start our day together. While he ate, I got a few things done. Then while he played, I enjoyed my breakfast which was a good one!
Sunday I made a batch of sweet potatoes and apples in the crock pot. I like to eat the with cinnamon, almond butter and sea salt after workouts sometimes. Since I had the on hand, I decided to mix the with some egg whites for a sweet potato breakfast scramble. So good! Especially when topped with some blueberries, sunbutter and served along with a yummy green juice.
I love juicing anyways, but Monday when I woke up sick I juiced a big batch of healthy green juice. In this mix was chard, spinach, garlic, lemon, carrots, apples, kiwi, pineapple and mandarins. A juice packed with lots of cold busting vitamins!
Since I’m sick and the Love Nugget is still getting over his cold, we have been stuck at home. Today though I was really itching to get in a little workout so while he napped, I hopped on my elliptical for some cardio while watching the Bachelor. Thank goodness he got rid of Tiara! She was driving me crazy!
Anyways, after my workout, I decided to finally try one of the Chobani Bites I bought awhile back. I’ve been holding off since I was doing the Paleo challenge and then I just forgot about them. I’m glad I remembered because it was delicious! Just the perfect amount for a snack.
A little while later, The Love Nugget woke up and I served up lunch.
A soup I threw together the night before loaded with carrots, celery, onions, diced tomatoes and some chicken apple sausages for protein. It hit the spot!
I was craving something sweet after lunch though and decided to make a treat that I knew the hubby would love. His favorite candy is by far Reese’s Peanut Butter Cups. However, we don’t buy them all that often since they are so bad for you. He was beyond thrilled a few months back when I came up with a cleaner, protein packed version of his favorite candy. Since it’s almost Valentine’s Day and everything is better shaped like a heart, I decided make Peanut Butter Protein Hearts 🙂
I had to sample one and they were delicious! I know he’s going to love them! Don’t worry… I’ll be sharing the recipe with you all tomorrow 🙂
Unfortunately, The Love Nugget doesn’t really understand when I tell him I don’t’ feel that good so our afternoon was filled with lots of busy activities. He was a busy boy!
Playing so hard worked up an appetite and when he decided he would like a snack, I figured I’d take advantage of some down time and make something healthy for us to enjoy.
While my Paleo challenge ended last Thursday, I’ve decided to stick with the “Paleoish” way of eating for the most part. If I want some cheese, or grains I’ll allow myself to do so (like this past weekend) but honestly, I haven’t really had much of a desire to eat many grains or dairy. Also, after a weekend of indulging in a few non paleo foods (basically a lot of wine and chocolate), I woke up Monday not only feeling really sick, but puffy, and out of sorts. All could be just from this nasty cold that hit me but who knows… Anyways, what I’m getting at is that I’m still eating Paleo for the most part which is why I came up with this Paleo Hummus 🙂
- 1 Fennel Bulb
- 1/2 head of Cauliflower
- 1 garlic clove
- 2 tbsp. Olive Oil
- 1 tbsp. Tahini paste
- 1 tsp. Cumin
- salt and pepper to taste
- Juice from 1 lemon
- Preheat oven to 375 degrees.
- Cut fennel and cauliflower into bite size pieces then toss with 1 tbsp. olive oil, salt and pepper. Roast for 25 - 30 minutes or until tender.
- Place fennel, cauliflower and remaining ingredients into a food processor.
- Puree until smooth and creamy scraping down the sides throughout.
- Serve with veggies or plantain chips.
Dinner was something new we had heard about some from friends of ours this past weekend. You all know our love for peanut butter and almond butter around our house. So when the idea of adding them to our burgers was brought to our attention, we thought it sounded kind of good! So we decided to try it out.
It’s hard to tell from the picture but that turkey burger has almond butter spread over it then topped with turkey bacon. Honestly, I wasn’t all that impressed. Don’t know if it was just because I wasn’t feeling good and didn’t have much of an appetite or that I used plain almond butter. We had heard to use crunchy Jiff but since we only have all natural peanut or almond butter, that’s what we used. I think the key is the sweet, crunchiness from the Jiff Peanut Butter. Oh well, the sweet potato fries were a hit of though!

Last month I had the opportunity to attend a wine country retreat where I met some really awesome girls. Leah and her sister Stephanie live in San Francisco and make deliciously healthy granola bars called Awesome bars.
They came to join in the fun and share some of their wonderful bars with us all. As we went through the day, I got to chat with both the Awesome bar sister and learn a little bit more about their company. Leah had been a chef for years and one day decided to create a healthy, delicious snack with natural ingredients and of course, awesome! Her sister Stephanie joined in as the director of Awesome. Together, they craft delicious Awesome bars in hopes that people will have something healthy and delicious to snack on.
Their motto is, “You can’t fake awesome” which with these bars is definitely true!
Before even tasting Awesome Bars, I fell in love with Leah and Stephanie. They were both truly awesome ladies with a wonderful goal in mind. Since I had just begun my 30 day Paleo Challenge, I wasn’t able to taste the bars yet. However, I brought some home and the hubby was beyond impressed. He quickly ate them all then kept asking me for more Awesome bars! Luckily, Leah was kind enough to send me some to try out myself when my challenge was over. Boy oh boy are these bars AWESOME!
They have five delicious flavors to choose from and I can say they are all equally delicious!

- Cherry Almond
- Cranberry Trail Mix
- Salty Peanut
So far my favorite is the Cranberry Trail Mix but they are all really good!
