It’s Monday! Hope you all had a great weekend!

I’ve got a few pretty Marvelous things to share today 🙂
Marvelous was our trip to a nearby park just in time to catch this….
Sometimes a beautiful sunset can just make your day 🙂
Marvelous was this movie we watched Friday night.
It was surprisingly really funny and it was nice to cuddle up next to the hubby to watch a movie. We don’t do that as often as we used to so it was pretty marvelous!
Marvelous was finding these bars at Whole Foods this weekend,
I love Coconut and Dark Chocolate so together I’m sure they are delicious! They are gluten-free but have soy plus they are processed so I’m trying to save them until after the Paleo Challenge. Emphasis on the word “trying” 🙂
Marvelous was the Paleo Pizza I enjoyed for dinner this weekend.
I used this recipe but cut it in half since I was the only one eating it. I topped it with homemade sauce, spinach, artichoke hearts, tomatoes and a few green olives. It turned out so good! I will definitely be making this again! The hubby wanted me to show a picture of the pizza he made too.
Not so Paleo but he enjoyed it!
Marvelous were these Paleo Chocolate Chip Cookies I whipped up Saturday night.
Not so marvelous was that I only got to enjoy one of them since the hubby ate them all while I was gone the next day! Ugh! Good thing I wrote down the recipe so I can make them again! Next time I’ll make sure to get some photos to share with you before he consumes them all! For someone who ditched the Paleo challenge after 1 week he’s sure been loving my paleo recipes!
Marvelous was this delicious Paleo Recipe I created for dinner the other night.
- 1/2 lb. Ground Turkey (thigh meat)
- 1/4 cup Almond Meal
- 1 Egg
- 1 cup Chopped Spinach
- 1 tbsp. Tomato Paste
- 1 tbsp. Dried Basil
- 1/4 cup Chopped onion
- 2 chopped garlic cloves
- salt and pepper
- 8 slices Nitrate Free Turkey Bacon or Bacon (I like Trader Joe's or Whole Foods)
- Preheat over to 350 degrees.
- Combine all ingredients except Turkey Bacon in a medium bowl and mix well.
- Coat 4 Ramekins with Olive Oil or Coconut Oil
- Lay 2 pieces of bacon in ramekins crossing over each other and draping over the sides.
- Scoop equal amounts of the turkey mixture into each ramekin and fold bacon over the top pressing down into the turkey mixture.
- Place onto a baking sheet and bake for 50-60 minutes.

Ahhh! So excited! Also marvelous is that I’ll be shaking up with the lovely Sweatpink girls which will make the trip even more fun! Can’t wait!
Marvelous is this HUGE container of coconut oil I purchased from Costco.
We’ve been using a ton lately so this purchase for $20 was a score!
Marvelous was this delicious green juice I enjoyed from Whole Foods on Saturday.
They recently started blending up a few green drinks and this one was really good!
One not so marvelous thing… our gym memberships expired! Ugh! We usually purchase our memberships through Costco for two years but since we are hoping to move this summer, I don’t want to commit to two years in case there isn’t a 24hour near us where we move. So I have to go sign up for month to month which is another added monthly expense. Yay! The hubby is sticking with Cross Fit and I would love to join him but there is no way we are going to pay $230 monthly for us both to be members and for the Love Nugget to get daycare. Yikes! Since I’ve got a busy week, I’ll be renewing my membership next week so no gym again for me this week 🙁 Good thing I’m doing the Fitmixer Boot camp!
