Today is Marvlous!

Today is Marvlous!

Hola!

It’s Monday!  Hope you all had a great weekend!

With it being Monday and all, I’m joining Katie at Healthy Diva Life (AKA Healthy Diva Eats) for Marvelous in My Monday!

I’ve got a few pretty Marvelous things to share today 🙂

Marvelous was our trip to a nearby park just in time to catch this….

Sometimes a beautiful sunset can just make your day 🙂

Marvelous was this movie we watched Friday night.

Poster of Just Go With It

It was surprisingly really funny and it was nice to cuddle up next to the hubby to watch a movie.  We don’t do that as often as we used to so it was pretty marvelous!

Marvelous was finding these bars at Whole Foods this weekend,

I love Coconut and Dark Chocolate so together I’m sure they are delicious!  They are gluten-free but have soy plus they are processed so I’m trying to save them until after the Paleo Challenge.  Emphasis on the word “trying” 🙂

Marvelous was the Paleo Pizza I enjoyed for dinner this weekend.

pizza

I used this recipe but cut it in half since I was the only one eating it.  I topped it with homemade sauce, spinach, artichoke hearts, tomatoes and a few green olives.  It turned out so good!  I will definitely be making this again!  The hubby wanted me to show a picture of the pizza he made too.

Not so Paleo but he enjoyed it!

Marvelous were these Paleo Chocolate Chip Cookies I whipped up Saturday night.

Not so marvelous was that I only got to enjoy one of them since the hubby ate them all while I was gone the next day!  Ugh!  Good thing I wrote down the recipe so I can make them again!  Next time I’ll make sure to get some photos to share with you before he consumes them all!  For someone who ditched the Paleo challenge after 1 week he’s sure been loving my paleo recipes!

Marvelous was this delicious Paleo Recipe I created for dinner the other night.

Marvelous is that I purchased my ticket to Fitbloggin!

Ahhh!   So excited!  Also marvelous is that I’ll be shaking up with the lovely Sweatpink girls which will make the trip even more fun!  Can’t wait!

Marvelous is this HUGE container of coconut oil I purchased from Costco.

We’ve been using a ton lately so this purchase for $20 was a score!

Marvelous was this delicious green juice I enjoyed from Whole Foods on Saturday.

They recently started blending up a few green drinks and this one was really good!

One not so marvelous thing… our gym memberships expired!  Ugh!  We usually purchase our memberships through Costco for two years but since we are hoping to move this summer, I don’t want to commit to two years in case there isn’t a 24hour near us where we move.  So I have to go sign up for month to month which is another added monthly expense.  Yay!  The hubby is sticking with Cross Fit and I would love to join him but there is no way we are going to pay $230 monthly for us both to be members and for the Love Nugget to get daycare.  Yikes!  Since I’ve got a busy week, I’ll be renewing my membership next week so no gym again for me this week 🙁  Good thing I’m doing the Fitmixer Boot camp!

Hope you all have a marvelous Monday!  I’m off to get in my workout while the Love Nugget naps 🙂

QUESTIONS –

  • Have you tried fresh green juice?  Do you make your own at home?
  • Are you attending in blogging conferences this year?  If you’re planning to go to Fitbloggin, let me know!  I’d love to connect 🙂

  1. I’ll be curious to hear what you think of the the ThinkThin Divine bars. I’ve never seen or heard of them before!

    • Giselle Schroer says:

I’m dying to try them but really trying to stick to this Paleo challenge as best I can. No processed foods or soy which they have a little of… However, this weekend we’ll be traveling so I might have to snack on one 🙂

  2. ok 2 things…

1.Coconut oil, I started using it while doing a paleo challenge and just discovered what amazing work it does on my poor Bryce’s dry skin. Bryce gets super itchy and break out in excema and covering his body in cocnut oil every night has worked WONDERS! Better than any of the many lotions I have tried. Just FYI incase you or your little man fight dry skin.

    2. Where are you guys moving?? Further north;)

    Great post!

    • Giselle Schroer says:

Yes! Coconut oil is so amazing! I’ve actually used it on my skin and hair before and now that you mention using it on Bryce, I’m going to put some on Ayden’s face as it’s been a little chapped lately. There’s also research that it helps with early onset Alzheimer’s… so interesting! We are moving locally, just hopefully a new area. Roseville or Rocklin 🙂

  3. I am loving all of your paleo meals & recipes lately!

  4. I think I need that paleo cookie recipe!!

    • Giselle Schroer says:

I’m hoping to re-make them this week and post the recipe. I made such a small batch because I wasn’t sure how they’d turn out but obviously they were a hit since I only managed to get one before my hubby ate them all!

  5. Great stuff in this post!!

I want to find those think thin bars! Hope I do soon, look so good!

Love that movie, super cute! I need to buy on dvd since I watch it every time it is on HBO!
    Happy week to you!

  6. Kim Devere says:

Hey are you still on the paleo diet? I made these meatloaf muffins for my family tonight and I have to say I love your recipe! These were amazing! My family of five loved it and I have some picky eaters. I doubled the recipe, but next time I think I might triple it LOL! Only if I had more ramekins hmmmm lol

    • Giselle Schroer says:

Yes! I still eat Paleo even more so than I did when I made these. Glad your family enjoyed them! They freeze well too for later meals 🙂
