Good morning!

Can you believe we are only two weeks away from Christmas!  Goodness this month is flying by!  Are you finished with all your Christmas shopping?  I finally had some time last night to sit down and write out what I had left to get and I’m almost done.  There is so much stuff I want to get for the Love Nugget this year.  I love this adorable Wooden Vintage Toy Kitchen similar to one he loves to play with at Megusta.

But I’m holding back for one we already bought him enough, and two, I want to wait until we have a bigger house and hopefully a play room.  I can’t handle having any more toys cluttering our living room!

Yesterday I started off with a delicious, healthy breakfast before my killer boot camp class.

Chocolate Protein Pancake

Chocolate Protein Pancake


  • 1/2 mashed banana
  • 1 egg white
  • 1 scoop chocolate protein powder (I used Fitmixer)
  • 1 tbsp. chocolate chips (optional)
  • Optional topping
  • 1/3 cup non-fat greek yogurt
  • 1 tbsp. your choice of nut butter (I used a almond cashew blend that I made)


  1. In a medium bowl, mix mashed banana, egg white and protein powder. Heat a large frying pan over medium heat. Coat it with cooking spray then pour the mixture into the pan as one large pancake or three small. Or two medium 🙂 Drop chocolate chips onto pancake, cook for 2-3 minutes then flip. Cook 3 minutes more or until the pancake is cooked through.
  2. Yogurt topping - mix greek yogurt and nut butter together then spoon onto your pancake.

 After breakfast we headed off to the gym.  The Love Nugget has been having such a great time there which makes it so much easier to leave him 🙂

When we got home, I made a quick protein shake using Fitmixer Vanilla Protein Powder and this coconut water from Navitas Naturals.

The wonderful folks at Navitas sent me a few samples the other day and I’ve really been enjoying them!

Navitas Naturals is one of those companies I love because they pride themselves on providing the finest organic superfoods possible.  All products are certified organic and they use low temperature processing to increase the flavor and nutrition content of their wonderful products.

When I got the package, I was surprised and intrigues to see this bag of freeze-dried coconut water.

I’m a huge fan of coconut water, especially after a sweaty run or workout where you’ve lost a lot of electrolytes.  So I was excited to try this new form of my favorite post workout beverage.  All you have to do is mix 1 tablespoon with 8 oz of water and viola!  Instant coconut water!  It tastes pretty good too!  Very similar to Zico coconut water which is a pretty good one.  Also in the package from Navitas was a bag of Blueberry Hemp Superfood and Cocao Goji Superfood.  I love these types of energy bites that are packed with wonderful nutrients to give you natural energy.  Both of these taste delicious too!  I enjoyed one of each alongside my protein shake 🙂

Besides freeze-dried Coconut Water and Power Snacks, Navitas has a wide variety of healthy products.  Some of which I had never heard of and am itching to try.  Like their Lucuma Powder which is naturally sweetened from a fruit found in Peru.  It has a low glycemic index and contains tons of vitamins, minerals and fiber.


I’m also interested to try their Maqui Powder which is made from Maqui berries one of the top sources of antioxidants.  Added to a smoothie this would be delicious!

There are a ton of other products I’d love to try and can’t wait to do so!  You can find Navitas products at many grocery stores or online.

Lunch yesterday was a quick one since we were heading out the door to grocery shop and run a few errands.

A yummy smoothie with Fitmixer Chocoate Slim, 1/2 a frozen banana, Fage non-fat greek yogurt, and Almond Breeze.  I topped it with a little Love Grown Granola Goodness 🙂


On our way home from grocery shopping and a trip to the craft store, the Love Nugget and I snacked on some veggie chips.


Then when we got home I had to bust into these bad boys,

Yum!  Peppermint Almonds!  These are pretty good!  They also had pumpkin pie and nutmeg which tasted like an eggnog.  Pretty good but I had to go with my favorite Peppermint flavor.

Dinner was a thrown together dish but ended up being really good!  I usually don’t buy chicken thighs but accidentally grabbed them instead of breasts the last time I was at Costco.  So I’ve been trying to think of ways to cook them since they taste a little different from breasts.  I wanted to try something new with spaghetti squash as well so I came up with a delicious Thai Peanut Coconut Chicken and Spaghetti Squash.

 Sorry for the horrible picture!  It’s so hard to get good photos at night in our house.  Basically it was light coconut milk, crunchy peanut butter, aminos, fish sauce, ginger, garlic and a tad bit of curry powder.  All mixed with sautéed chicken thighs, carrots and spaghetti squash.  Yum!

In case you didn’t know, you can cook spaghetti squash in the microwave if your short on time.  Just prick it all over with a knife, pop it into the microwave for 8 – 10 minutes rotating twice throughout, then cut open, spoon out seeds and pull out the squash!

After dinner I had one of these yummy treats that are featured over on Fitmixer today.

Speaking of Fitmixer… the next round of boot camp begins January 17th and registration is still open!  I highly recommend it and will be participating again myself 🙂

  1. I love that kitchen, Sophia actually just came over to me and saw it on the screen and said she wanted it. 🙂 But we already have one. haha.

    Our big gift for Sophia this year is a Bitty Baby. We got it in the mail the other day and she is adorable. I can’t wait to play with her. 🙂

    I am not quite sure what Isabella’s big gift is going to be. Being the second daughter we already have most toys for her age. :/

      Haha! That’s too cute! Part of me hopes that our second is a boy too so that we can recycle all this stuff! Although I really want a girl… when the time comes 🙂

  2. We got L a kitchen last year! I’m not sure that there will be a big gift this year, there are a number of small things I keep picking up for her. It’s so fun shopping for them, isn’t it?

      Christmas has taken on a whole new meaning this year with our little guy. So much fun! I would be going out of control right now shopping for him if we had a bigger house and a second income! It’s so much fun!

  3. My hubs actually made a kitchen for my twins. He even made it stainless steel (looking) to match our own kitchen. It’s really, really cute. Big items this year? I’m trying to keep it smaller just because I feel like our house is over run with toys and “stuff” right now as it is. L wanted a tow truck and A wanted a Hello Kitty Jet. Other than that it’s art supplies, books, etc.

      Oh I bet it’s so cute! My hubby just mentioned doing that last night. Finding time is the hard part. Art supplies and books are the best gifts! The Love Nugget’s Nanni always gets him lots of books and I love it!

  4. A vintage kitchen with an ice maker…haha, I don’t even have an ice maker!! I feel your pain with trying to get good pictures at night…can’t wait for the days to be longer so we can get a little extra light in our houses! All your food always looks delicious no matter what the lighting is though!
