Happy Wednesday to you all!
Since its Wednesday, I’m linking up with Jenn over at Peas and Crayons for another fun WIAW!
As part of the Fitmixer Bootcamp program, I was given a sample meal plan that includes daily meal suggestions as well as a calorie limit. I’m doing fine staying under on my calories, but not as good at eating the full 6 meals that were suggested. Since I’m doing more cardio on top of my bootcamp workouts, I should actually be taking in more calories than I am but it’s kind of hard!
Breakfast was two scrambled eggs with spinach (that I halved with the Love Nugget) on top of a whole wheat english muffin with goat cheese and avocado. I also shared a peach with my little nugget too! He ended up eating most the peach. That kid loves his fruit!

After breakfast, the Love Nugget and I headed out to his check-up and to Target. I sliced up an apple for a snack before running out the door but forgot to snap a pic. The Love Nugget did great at his apt.! At 16 months he weighs 23 lbs and is 32.8 inches long! Growing boy! He had to get a few shots which is never any fun but he was quite the trooper!
When we got home, the Love Nugget took a nap which I did my Fitmixer workout along with 40 minutes on the elliptical. I wanted to keep going but someone woke up not feeling too hot 🙁 Poor Nugget! His little legs were hurting from where he was poked. So I brought him downstairs and made him a green smoothie, chicken and quinoa for lunch which seemed to cheer him up. I wasn’t all that hungry but since it was already past 1:00 I made myself some lunch.
Tuna with a little greek yogurt, smashed avocado, whole grain mustard and goat cheese on top of Wasa crips. I’m obsessed with the Sugar Plum tomatoes from Trader Joes with celery. I could eat them together all day long! I had some grapes too but someone else ate most of them. Hmmm… I wonder who that was?
After lunch I thought it would be fun to do some apple prints!
He loved it but of coarse, got red paint all over himself.
Rather than trying to clean him off with wipes, I just took him up to the bath where he played for awhile.
A little later, we shared another apple as a snack but enjoyed it with my favorite thing lately.
Greek Yogurt Nut Butter Dip
1 cup non-fat greek yogurt
1 tbsp nut butter of choice ( I used all natural almond butter, no sugar added)
1/2 tsp cinnamon
1 packet of stevia, or a little bit of honey.
Mix everything together and enjoy with apples or just by itself!
Since we haven’t had dinner yet, I’ll post what we had last night.
Burrito bowls with quinoa, lentils, tofu sautéed with zucchini and a little bit of taco seasoning and an avocado salsa. The salsa was just tomatoes, avocados, cilantro, lime juice, cumin, salt and pepper. The hubby had his with beef and cheese. I think I put a little too much seasoning in his though because he said it was spicy!
After dinner last night I munched on a few frozen grapes. My go to “healthy” after dinner snack 🙂 Not as big of a snack that fitmixer asks for but a little something to curb my sweet tooth.
