Blackberry Whole Wheat Pancakes

Hope everyone had a Marvelous Monday!

Our Monday was pretty mellow.  We woke up late and didn’t make it to SS so with some extra time and freshly picked blackberries,  I decided to make some whole wheat blackberry pancakes.

Whole Wheat Black Berry Pancakes

1 cup whole wheat pastry flour

1 cup whole wheat flour

1 1/2 tsp baking powder

1/4 tsp salt

1/4 cup flaxseed meal

1 egg beaten

1/2 cup unsweetened applesauce

1 cup non dairy milk or organic milk (more if you like your pancakes thinner)

1 cup smashed or pureed blackberries

1 tsp vanilla

Stir dry ingredients together in a large bowl.  In a separate bowl, mix together wet ingredients then add to dry ingredients.  Mix well then drop 1/3 cup at a time into a greased pan and cook for a few minutes on each side.  Top with melted butter and pureed blackberry syrup if desired.

Pureed blackberry syrup

1/2 cup smashed blackberries

3 packets of stevia or 1 tbsp agave nectar

1/2 juice from a lemon

Combine all ingredients in a small sauce pan and simmer for 5 minutes.  If you don’t want the seeds, strain through a mesh sieve.  Serve over blackberry pancakes.

Yum!  These were very moist, fluffy and delicious!  The Love Nugget loved them too!

After breakfast, we cleaned up and played a bit before the Love Nugget went down for his nap.  While he was sleeping I did another Nike Training workout.  Kicked my butt again but felt great!  I was in major cleaning mode today so I got a lot done.  I also made our meal plan for the next few weeks as well as our grocery list.  Tomorrow will be a big trip to Costco and the grocery store.  Sad face 🙁

I was contemplating going to the gym right by our house for a spin class at 6:30.  I’m not a huge fan of the instructor but I wanted to do spin so I thought I’d give it a shot.  Then I found a spin class a bit further from our house with one of my favorite instructors!  Score!  The hubby met me on the way so we could switch cars and I got there just as the list filled up.  I was actually first on the wait list but still got in, sweet!   It felt great to be back on the spin bike for an awesome, sweaty class.

This morning since we have a busy day I got my butt up at 5:30 and headed to the gym to get in my scheduled speed training.  7 400 meter sprints which was 3.5 miles.  I ended up finishing up 4 miles and left drenched in sweat.  I don’t think they turn the air conditioner on in that gym until later in the day 🙁   The Love Nugget and I are off to SS and then getting all our grocery shopping done.  Fun!  Hoping someone is in a good shopping mood today 🙂

  1. Those pancakes look amazing! I’ll have to try them! We usually follow the same type of recipe with whole wheat flour and flax seed, but add banana and walnuts, making “banana nut pancakes.”
